Provided by The Gracious Pantry

Categories     Main Course

Time 1h5m

Number Of Ingredients 12

1 batch jamaican curry powder ((see recipe link above - If purchased, use a ¼ cup))
2 cups chopped red onion ((Chop small. Yellow onion can be used if red isn't available.))
2 tbsp. oil
2 cups sliced carrots ((Slice them on the thinner side. Approximately a ¼ inch.))
2 cups diced potatoes ((You can use Russet, gold, or sweet potatoes. Cut into larger chunks, approximately 1 to 1½ inches.))
1½ lbs. boneless skinless chicken breasts
1 tbsp. garlic granules ((or garlic powder))
2 tsp. ground ginger
13.5 oz. can full fat coconut milk ((Use canned with no sugar added, not the stuff from the refrigerator section.))
1 tbsp. lemon juice
3 tbsp. granular sweetener ((Try Sucanat, coconut sugar, or monk fruit.))
rice (or riced cauliflower for serving)

Steps:

  • Press the Sauté button on your Instant Pot. Add the oil, and sauté the onions and carrots until the onions are translucent.
  • Add in everything else to the Instant Pot, stir, secure the lid and close the vent. Press the manual button, and adjust to 25 minutes on high pressure.
  • When the cooking time is up, turn off the Instant Pot and open the steam valve for a quick release. When the steam is completely gone, open the lid.
  • Serve over brown rice or riced cauliflower.

CURRY - LAMB, CHICKEN, PORK OR SHRIMP

Curry - Lamb, Chicken, Pork or Shrimp image

My dear MIL passed this recipe on to me, as it is one of DH's favorites. This is a great way to use leftover meat to create a delicious and classy meal. I use cubed cooked pork tenderloin with great results. This curry dish is served over rice. Side dishes can be any combination of cashews, peaches, diced apples or chutney.

LAMB (OR CHICKEN OR VEAL) WITH CABBAGE STEW

Lamb (Or Chicken or Veal) With Cabbage Stew image

I got this from a Better Homes and Gardens Classic International Recipe Cookbook from 1982. This makes a delicious, hearty stew. Personally, I've never eaten lamb, and its not readily available where I live. So I substituted veal when I made it.

Categories     Stew

Time 1h15m

Yield 6-8 serving(s)

Number Of Ingredients 10

1 1/2 lbs boneless lamb, cut into 1-inch pieces
2 tablespoons butter
1 medium onion, sliced and separated into rings
1 cup water
10 peppercorns
2 bay leaves
1 tablespoon fresh dill, snipped (may substitute 1 tsp dried dillweed)
1 teaspoon salt
1 head cabbage, cut into wedges
sour cream, to garnish

Steps:

  • In a dutch oven brown the meat, half at a time, in hot butter. Set meat aside. Add the onion; cook till the onion is tender but not brown. Drain off the fat. Return the meat to the dutch oven. LAMB CURRY WITH PEAS

Lamb Curry with Peas image

For this curry, cubes of lamb become meltingly tender and richly flavored after a long, slow braise with spices like cinnamon, cardamon and turmeric. Thick Yukon Gold potatoes and frozen peas add some additional texture, while a half cup of whole-milk yogurt adds a refreshing creaminess. Recipe developed by Food Network Kitchen.

Provided by Food Network Kitchen

Categories     main-dish

Time 1h30m

Yield 4 to 6 servings

Number Of Ingredients 19

2 pounds lamb stew meat
Kosher salt and freshly ground pepper
1/4 cup vegetable oil
4 green cardamom pods
1 1-inch piece cinnamon stick
1 whole clove
2 onions, thinly sliced
1 tablespoon grated fresh ginger
4 cloves garlic, grated
2 teaspoons ground coriander
1 1/2 teaspoons ground cumin
1 teaspoon Kashmiri chili powder or hot paprika
1/2 teaspoon ground turmeric
3 small plum tomatoes, diced
1 pound Yukon Gold potatoes, peeled and cut into 1 1/2-inch chunks
1 cup frozen peas
1/2 cup plain whole-milk yogurt
Cooked basmati rice, for serving
Chopped fresh mint, for topping

Steps:

  • Season the lamb with salt and pepper. Heat 2 tablespoons vegetable oil in a large Dutch oven over high heat. Add the lamb in a single layer and brown, turning once, 3 to 4 minutes per side. Remove to a plate. Reduce the heat to medium high and add the remaining 2 tablespoons vegetable oil to the pot along with the cardamom pods, cinnamon stick and clove. Cook, stirring, until the whole spices are toasted, about 20 seconds.
  • Add the onions, season with 1/2 teaspoon salt and cook, stirring occasionally, until soft and browned, 8 to 10 minutes. Add the ginger and garlic and cook, stirring, until golden, about 2 minutes. Add the coriander, cumin, chili powder and turmeric; cook, stirring and scraping the pan, until the ground spices are toasted, about 30 seconds.
  • Add the tomatoes to the pot and cook, stirring, until they break down, 4 to 5 minutes. Add the lamb and any juices from the plate. Stir in 1 3/4 cups water and bring to a boil. Reduce the heat to medium low, cover and simmer until the lamb is almost cooked through and the sauce has thickened slightly, 1 hour 15 minutes.
  • Tuck the potatoes among the lamb pieces, submerging them in the liquid; season with 1/2 teaspoon salt. Cover and simmer until the potatoes are cooked through, 18 to 20 minutes. Uncover and simmer, turning the potatoes occasionally, until the curry is thickened, 8 to 10 minutes. Stir in the peas and heat through.
  • Remove the curry from the heat and stir in the yogurt. Thin with water, if necessary; season with salt. Serve with rice and top with mint.
