Curry Frittata image

This is a quick and easy dairy-free, gluten-free, potato-free (contains white sweet potatoes, which are no relation) breakfast, brunch or light lunch food. I invented it today, and I think it's really tasty :) I like it with salad. It also reheats really well.

1 tablespoon vegetable oil
1 onion
1 medium white sweet potato
salt
black pepper
2 tablespoons mild curry paste
6 large eggs
chopped cilantro (to garnish)
lime wedge (to garnish)

Steps:

  • Preheat the broiler.
  • Peel and slice the onion.
  • Peel and cube the sweet potato.
  • Crack the eggs into a bowl and beat them with a fork until well mixed. Add a little salt an pepper.
  • Saute the onion and sweet potato, stirring frequently, over medium-high heat in the oil until the sweet potatoes are cooked through and beginning to brown. Add a little salt and pepper.
  • Add the curry paste and stir for about a minute.
  • Add the eggs, and stir until eggs start to set.
  • Leave on the stovetop for a few minutes more until about half-way cooked.
  • Place under the broiler until the top is cooked.
  • Cut into wedges and serve with cilantro and limes, if desired.

  • Heat a glug of oil in a frying pan over a medium heat. Add the onions and fry for 5 minutes or until starting to soften. Add the garlic and curry powder and fry for 2-3 minutes. Stir in the mango chutney.
  • When the mixture is jammy, add the cabbage with a splash of water (the cabbage will fill the pan) and turn up the heat. Stir-fry until the cabbage wilts and fits the pan more easily (4-5 minutes).
  • In a large jug, beat the eggs with the milk, lime and coriander. Season, then pour the mixture evenly over the cabbage, filling in any gaps. Turn down the heat to low and simmer for 10 minutes. The egg should be set at the bottom but remain quite runny and liquid on top. Heat the grill to medium.
  • Put the pan under the grill for 3-4 minutes until the egg sets and is golden. Keep an eye on it so it doesn’t overcook. Serve with extra coriander scattered over the top.

  • Place the thinly sliced sweet potato rounds on the prepared baking tray, overlapping them slightly as needed. Drizzle with two teaspoons of olive oil and sprinkle with 1/4 teaspoon of sea salt. Let them roast for about 20-25 minutes, or until they are soft.
  • Place the spinach or kale in a 9″ non-stick or cast iron frying pan with a splash of water over high heat. Cover the pan and bring the water to a boil. Let it steam for 1 minute then remove it from the heat. Using a pair of tongs, ring it out and set it aside.
  • Heat the remaining teaspoon of olive oil over medium-high heat, using the same pan you used for the spinach or kale. Add the onion and cook for 5 minutes, stirring occasionally, until it has begun to brown. Add the garlic and ginger and cook for 30 more seconds. Remove the onions from the pan.
