My Grandma Inky grew up in India and passed down this recipe to my mother, who then passed it down to me. The recipe brings back fond memories of the family gathered around the table, enjoying this delicious meal and catching up on one another's day. 2 cans (14-1/2 ounces each) chicken broth
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1 tub Knorr concentrated chicken stock (4.66 oz.)
4 garlic cloves, minced
1 tablespoon curry powder
1/4 teaspoon salt
1/4 teaspoon cayenne pepper
1/4 teaspoon pepper
6 boneless skinless chicken breasts (6 ounces each)
1 medium green pepper, cut into thin strips
1 medium onion, thinly sliced
Hot cooked rice
Chopped fresh cilantro and chutney, optional

Steps:

  • In a large bowl, combine the first 8 ingredients. Place chicken, green pepper and onion in a 5- or 6-qt. slow cooker; pour broth mixture over top. Cook, covered, on low until chicken and vegetables are tender, 4-5 hours., Remove chicken and cool slightly. Cut or shred meat into bite-size pieces and return to slow cooker; heat through. Serve with rice. If desired, top with cilantro and chutney.

3 Tablespoons unrefined coconut oil or ghee
2 pounds boneless, skinless chicken meat (breast or thigh or combination), cubed
1 large onion, chopped
2 cloves garlic, finely chopped
1 Tablespoon finely chopped peeled fresh ginger
2 carrots, peeled and cut into chunks
2 stalks celery, cut into chunks
4 cups vegetables, cut into same size as carrots and celery (e.g. cauliflower, root veggies, green beans, eggplant, potatoes...)
2-3 Tablespoons curry powder*
1 teaspoon ground cumin
¼ teaspoon ground turmeric
2 teaspoons sea salt
1 ½ cups chicken stock, vegetable stock or 1 14.5-ounce can diced tomatoes
¼ cup chopped fresh cilantro (optional)
½ cup cashews, finely ground or ¼ cup cashew butter
1 cup coconut milk
A few handfuls of baby spinach leaves

Steps:

  • Season chicken pieces with sea salt and freshly ground black pepper. Heat oil or ghee in a large, heavy pot over medium heat. Without crowding, add the chicken in batches and lightly brown. Remove with a slotted spoon to a plate and continue cooking all the chicken in the same manner.
  • Add the onion, garlic and ginger to the pot and cook, stirring until softened, about 5 minutes. Add the carrots, celery and remaining vegetables. Cook another few minutes.
  • Add the chicken and any accumulated juices on the plate back in the pot. Add the curry powder, spices and salt and cook, stirring, 1 minute. Add the stock (or diced tomatoes) and chopped cilantro and bring to a simmer. Cover the pot and simmer gently, stirring occasionally until the chicken is cooked through, about 20 minutes.
  • Add the ground cashews or cashew butter to the curry along with the coconut milk, and simmer gently uncovered, stirring until sauce is thickened, about 5-10 minutes. Stir in spinach leaves and stir until wilted. Delicious over cooked basmati or jasmine rice or noodles.

I basically made this to use up some fresh veggies I needed to use. So I made a curry from them and added chicken sausage and shrimp.

1 lb chicken sausage, italian style, mild or hot
2 Tbsp olive oil
1 medium onion, chopped
1 Tbsp tomato paste
2 clove garlic, minced
1/8 tsp red pepper flakes (opitional)
1 can(s) coconut milk
2 Tbsp thia red curry paste
1 Tbsp fish sauce
1 medium potato, diced
1/2 yellow bell pepper,sliced thin
1/2 orange bell pepper,sliced thin
1/2 lb med. shrimp, peeled and deveined
1 c corn kernels, fresh one ear

Steps:

  • 1. In a large sauce pan, heat 2 tablespoons of olive oil over med heat. Add chicken sausage and brown on all sides. Set aside. Add onion, salt,pepper and saute until tender.
  • 2. Add the garlic, red pepper flakes and tomatoe paste. Stir until tomatoe paste turns a crimson color, about a minute. Stir in coconut milk, red curry paste and fish sauce. Bring to a boil and reduce heat to a simmer. Taste to salt and pepper.
  • 3. Slice the chicken sausage into 1/4 thick pieces (optional), and add a long with the potatoes,and bell peppers. Simmer until potatoes are just about to get tender and add shrimp and corn kernals. Simmer until shrimp is cooked. Serve over rice with naan or french bread on the side.

1 1/2 lbs chicken breasts
4 tablespoons butter
1/2 cup onion, chopped

Steps:

  • Remove any bones or skin from the chicken breasts. Cut into 1 inch cubes. There should be about 3 cups chicken and 2 cups shrimp all together. Set aside.
  • Heat half the butter in a Dutch oven over medium heat and add onion and garlic. Cook about 1 or 2 minutes, then add celery. Cook another minute then season with curry powder and stir. Add the tomato paste; stir. Add banana and apple; stir. Add the broth and stir until liquid is well blended. Salt to taste and simmer 10 minutes.
  • Heat the remaining butter in a saucepan. Add the chicken. Season with salt and pepper. Cook about 2 to 3 minutes. Add shrimp and cook an additional 2 minutes, stirring.
  • Meanwhile, pour the curry mixture into the bowl of a food processor or blender and process until smooth. Can also be done with an immersion blender.
  • Pour the sauce over the chicken and shrimp, heat 2 minutes and serve.

1/2 cup chicken broth
1 Tablespoons ground curry powder
2 Teaspoons ground cumin
1 large russet potato, cubed
3 large carrots, peeled and cut into 2 inch pieces (slice thick pieces in half)
1 cups sliced mushrooms
1 8oz can bamboo shoots, drained
1/2 cup fresh basil, roughly chopped
1 pound large shrimp
1 small yellow onion, quartered
salt and pepper

Steps:

  • Bring wok to medium heat and add olive oil and two cloves of garlic.
  • Stir constantly until garlic becomes fragrant.
  • Add chicken and season with salt and pepper.
  • Allow chicken to cook fully, stirring as needed.
  • Remove chicken and place on plate, set aside.
  • Add remaining garlic and stir until it becomes fragrant.
  • Add coconut milk, chicken broth, curry paste, curry powder and cumin.
  • Stir until well combined.
  • Add potato, carrot and bamboo shoots.
  • Let simmer 2 minutes.
  • Add basil and put the chicken back in.
  • Stir.
  • Add onion, mushrooms and shrimp.
  • Stir and then cover and let simmer for 5-7 minutes.
  • Taste and adjust any seasoning (curry powder, salt or pepper) to taste.
  • Serve as is or over cauliflower rice (or regular rice if not doing Whole30).

  • In a large Dutch oven, saute sausage for about 4 minutes or until browned.
