An intensely-flavored appetizer that'll be the favorite snack at your next gathering. Serve Curry Cheddar Cheese Spread with sturdy crackers or crostini.

2 cups shredded sharp Cheddar cheese ((About an 8 ounce block of cheese))
½ cup chopped black olives
½ cup mayonnaise
½ cup chopped scallions
1 teaspoon curry powder
1 clove garlic, minced
1 pinch of salt

Steps:

  • Mix all of the ingredients together in a medium-sized bowl until they are well blended.
  • Spoon the dip into a serving bowl. Cover the bowl with plastic wrap and refrigerate for at least 4 hours before serving.
  • Serve this dip with sturdy crackers, crostini, or small slices of baguette. Makes about 4 cups.

Attention, cheese lovers! This may be the best cheese spread you've ever had! My friend's mother gave me this recipe over 15 years ago. I always make it around the holidays, or for football and hockey game nights. Everyone begs for this recipe. Turn this into a pub spread by adding a half cup of your favorite dark ale. Use brick cream cheese for a spread, or spreadable cream cheese for a dip. Serve with crispy crackers, toast, or bagels.

1 (8 ounce) package cream cheese
1 (8 ounce) container cold pack aged sharp Cheddar cheese (such as MacLaren's Imperial Sharp Cold Pack Cheddar Cheese product)
¼ cup finely chopped red onion
1 tablespoon Worcestershire sauce
2 teaspoons freshly ground black pepper
1 teaspoon paprika
1 dash hot sauce, or to taste

Steps:

  • Place cream cheese and cold pack Cheddar cheese in a microwave-safe bowl; slice cheese into chunks with a knife. Microwave cheese in 30-second intervals on high just until softened, stirring between intervals.
  • Stir red onion, Worcestershire sauce, black pepper, paprika, and hot sauce into cheese mixture with a fork until evenly combined; spoon into an airtight container and refrigerate, 8 hours to overnight.
  • Remove cheese spread from refrigerator about 30 minutes before serving.

1/3 cup green onion, chopped
1 1/2 cups shredded cheddar cheese
1/2 teaspoon curry powder
1/2 cup mayonnaise
1/2 teaspoon salt
8 English muffins, split in half

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • In a medium-size mixing bowl, combine olives, green onions, Cheddar cheese, curry powder, mayonnaise, and salt.
  • Mix well.
  • Spread mixture on English muffins.
  • Cut the English muffins into fourths.
  • Note: If you want to freeze these, now is the time!
  • Arrange the muffin pieces on a cookie sheet.
  • Bake at 400 degrees F (200 degrees C) for 10 minutes.

1/2 cup sweetened shredded coconut
1/3 cup chopped pecans, toasted
2 green onions, chopped
1/4 cup dried currants
Assorted crackers

Steps:

  • Place the cream cheese, cheddar cheese and curry powder in a small food processor; cover and pulse until blended. , Spread onto a 10-in. round serving platter. Spoon chutney over top; sprinkle with coconut, pecans, green onions and dried currants. Chill until serving. Serve with crackers.

1/3 cup mango chutney

1/2 cup toasted pecans or 1/2 cup almonds
1 1/2 tablespoons currants or 1 1/2 tablespoons dried blueberries
apple, wedges
celery, slices
cracker

Steps:

  • In food processor blend together cream cheese, imperial cheese, and curry powder. Form in a ball on your serving plate and put in fridge for at least an hour, the longer you refrigerate, the more curry flavor you get! Spread chutney on top and sprinkle with the coconut, pecan and currant mixture. serve with apple, celery, crackers and pretzels! Delicious!
