Provided by Rasa Malaysia

Categories     Chinese Recipes

Time 30m

Number Of Ingredients 8

1/2 lb. (0.2 kg) ground pork, chicken or turkey
1/4 lb. (0.1 kg) shrimp, chopped into small pieces
1/2 teaspoon soy sauce or fish sauce
1/2 teaspoon sesame oil
3 dashes ground white pepper
1 pack store-bought wonton wrappers
water, for sealing
vegetable oil, for deep frying

Steps:

  • In a bowl, mix the ground pork, shrimp, soy sauce, sesame oil and white pepper together. Stir to combine well to form a sticky filling.
  • To wrap the wontons, lay a piece of the wonton wrapper on your palm and add 1/2 tablespoon of the filling in the middle of the wrapper. (Use 1 teaspoon filling if you are a beginner.) Dip your index finger into the sealing water and trace it on the outer edges of the wonton wrapper.
  • You can wrap the wontons three ways. To make a triangle, just fold it up to form a triangle. Pinch the edges to seal tight. To make them into the pretty shape (far left in the above picture), just pull the two corners of the triangle down so one overlaps the other, pinch and seal with water. To make them into Hong Kong style wonton (far right in the above picture), please watch my video at the top of this post.
  • Heat up some oil for deep-frying. Once the oil is fully heated, deep fry the wontons until golden brown. Drain the excess oil with paper towels. Serve hot with Chinese sweet and sour sauce or Thai sweet chili sauce.

CURRIED BEEF DUMPLINGS

Curried Beef Dumplings image

From Carla Hall's Cooking With Love. Be sure to buy thin wonton wrappers made with an egg-based dough, not the thicker dumpling wrappers made from an eggless flour-based dough.

Provided by Brookelynne26

Categories     Peppers

Time 1h50m

Yield 40 dumplings

Number Of Ingredients 12

1 tablespoon minced peeled fresh ginger
1 garlic clove, minced
1 tablespoon curry powder
2 tablespoons cornstarch
1 teaspoon kosher salt
1/2 teaspoon sesame oil
2 large eggs
3/4 lb lean ground sirloin
1 red bell pepper, stemmed, seeded and finely diced
1/4 cup thinly sliced scallion (green onions)
1 tablespoon water, plus more for cooking
inch-diameter wonton wrapper

Steps:

  • In a small bowl, whisk together the ginger, garlic, curry powder, cornstarch, salt, sesame oil, and 1 of the eggs. In a large bowl, combine the beef, bell pepper, and scallions, then stir in the ginger mixture until well combined. Cover and refrigerate for 1 hour.
  • In a clean small bowl, whisk the remaining egg with the water. Lightly brush a thin layer of the egg wash on a wonton wrapper. Use a measuring tablespoon to scoop 1 tablespoon of the beef filling into the center of the wrapper. Hold the filled wrapper in the palm of one hand and pull the sides of the wrapper up around beef with the other hand while slowly spinning the dumpling in your palm. You should be gently squeezing the wrapper around the beef and pushing the beef up so that it's flush with the top of the wrapper; you're not really pressing the filling, just gently shaping it. The beef should be exposed on top and the whole dumpling should be in the shape of a wide cylinder.
  • Place wrapped dumplings on a wax paper- or plastic wrap- lined half sheet pan. Repeat with the remaining wrappers, egg wash, and beef filling. If you don't want to cook them immediately, cover tightly with plastic wrap and freeze for up to 1 month.
  • Heat a large nonstick skillet over medium heat. Add just enough dumplings so that you can space them 1 inch apart in a single layer. Cook until the bottoms are lightly browned, about 2 minutes.
  • Add enough water to come 1/4 inch up the sides of the pan. Cover and cook until the water evaporates, about 2 minutes. Again add enough water to come 1/4 inch up the sides of the pan. Cover and cook until the beef is cooked through, about 2 minutes more. You can tell when the beef is done when the dumpling feels very firm. If you want to be sure, cut one in half to check.

  • Heat the oil over high heat in a large heavy bottomed pot. When the oil is hot, add beef and sear on all sides until it is dark brown. Make sure not to crowd the pan; you will probably need to work in batches. Keep a close eye on the beef as you sear it, you want it to be dark brown but not to burn. If you think it is getting too close to burning remove the pot from the element for a minute before continuing.
  • Remove each piece of beef from the pot when it is dark brown and seared on all sides. Once all pieces are finished remove the pot from the element.
  • Add the coconut milk all at once and stir to remove any brown bits from the bottom of the pan. Add all other coconut beef ingredients and stir well.

  • In a large bowl, add the meat, ginger, garlic, green onions, soy sauce, oyster sauce, curry powder and kale and mix well to combine. To make the egg wash, in a small bowl, add the water and egg and whisk with a fork.
  • To assemble the wontons, place a wonton wrapper flat in the palm of your hand. If frying, add 1 teaspoon of mixture to the center of the wrapper. If boiling, add 1 tablespoon of the mixture. Dip a finger in the egg wash, and paint all 4 edges with the wash. Fold the wonton in half, corner to opposite corner to make a triangle. Seal tightly all around. Make sure there are no air pockets or holes in the wonton. Fold the longer two triangle points together and seal to make the wonton shape.
  • Place folded wonton on a clean, dry plate or baking sheet and cover with plastic wrap to avoid drying out. When wontons are all folded, you can store or freeze.
  • To fry wontons, add 1 to 1 1/2 inches of cooking oil to a wok or pot. Heat the oil until it reaches 375F. Add a few wontons to the oil to fry, turning occasionally until they are golden brown. Remove them to a draining rack placed over a baking sheet so they can drain excess oil.

  • Mix the ground beef with the garlic, ginger, egg and green onions and use your bare hands to combine everything. Mix the sesame oil, soy sauce, salt and pepper together and pour this into the beef mixture. Mix well. Lay out the wonton wrappers and divide the beef mixture between them (you can do them one by one, using about a tablespoon of filling in each, or lay them all out if you have a big work surface).
  • Dip your finger in water and trace along half the wonton wrapper edge, folding the wrapper over to make a triangle and pressing the edges shut, squeezing out any excess air as you go.
  • Steam the wontons for 8 minutes in batches or until the inside is cooked through (you will have to open one to check). If you are freezing them and then cooking them from frozen, they will need an additional 5 minutes in the steamer. These wontons can also be poached (cook them in simmering water until they float to the surface).
