- In a small saucepan, heat the milk and bouillon, stirring until bouillon is dissolved. Set aside. , In a large saucepan, saute apples and onion in oil until tender. Stir in the flour, curry powder, salt and pepper until blended. Gradually add milk mixture and lemon juice. Bring to a boil; cook and stir for 2 minutes or until thickened. Add turkey and heat through. Serve over rice.

CURRIED TURKEY STRIPS
A recipe I threw together when nothing else seemed tasty that night. Turned out quite delicious! Serve with a curry yogurt dip...

Steps:
- Slice turkey breast into strips.
- In a medium bowl combine all dry ingredients.
- In a separate bowl beat egg.
- Using one hand for the wet and the other for the dry, dredge the turkey in the egg followed by the flour mixture.
- Repeat until all strips are coated.
- Drizzle about a tablespoon of olive oil in a large skillet over medium heat
- Place turkey strips in skillet, cook for 3-4 minutes.
- Flip strips, cook an additional 3-4 minutes until cooked through, taking care to not overcook or the turkey will become incredibly dry.

ISLAND TURKEY STRIPS
This is a simple and delicious recipe from 1/2 hour meals. It is a combination of tropical flavors. This is a great way to transport to the islands~without leaving home!

Steps:
- 1. Combine all ingredients in zip lock bag , except the turkey breast strips. Place turkey strips in the plastic zip-lock bag and marinade for 1 hour or you can do it over night in refrigerator.
- 2. In a large skillet place 3 Tablespoons of olive oil and heat. Let turkey strips drip off excess marinade and place in heated skillet. Do not place too many in pan at once.
- 3. Let turkey strips become golden on one side and turn to the other side to finish cooking; about 3-4 minutes on each side depending on the thickness of the meat strips. Enjoy!! A family pleaser.

- Heat oil over medium heat in a large skillet. Sprinkle the cinnamon into the oil and stir until fragrant. Stir the onion into the cinnamon oil and cook for 5 minutes, until softened and golden in color. Stir in the garlic, ginger, and turmeric, and continue to cook for 3 additional minutes. Pour in 1/4 water and cook for 2 minutes, adding a bit more water if mixture is too thick.
- Stir the green chilies, turkey, chili powder, garam masala, and the rest of the water into the sauce. Cover and cook for 10 minutes until mixture has thickened to sauce consistency, adding additional water if mixture looks dry. Taste the curry and add salt if needed.

Here is another of my Mom's old recipes. It is great for leftover turkey after the holidays, when you tire of turkey soups and sandwiches. Optional: if you want to show off, garnish with fresh parsley and side dishes of raisins, chutney, slivered almonds, hard cooked eggs, and both sweet and dill pickle spears.

- In a saucepan, bring water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes.
- In a medium saucepan over medium heat, melt the butter, Saute the onion until translucent, not browned. Reduce the heat to a simmer, and stir in the mushroom soup, drained mushrooms, and milk. Heat while stirring constantly until the mixture is smooth. Add the sour cream, curry powder, and turkey meat, stirring while it all heats through. Cover and allow to low simmer 20 to 25 minutes. Ladle the curry mixture evenly over the rice for each individual serving.
