CURRIED TUNA SALAD IN PASTA SHELLS

Steps:

• Cook jumbo shells per package directions and let cool.
• For Filling (Can be made ahead and refrigerated until ready to stuff shells):.
• Mix tuna salad ingredients.
• Fill cooled jumbo shells with curried tuna salad and garnish with parsley.
• Refrigerate until ready to serve.

CREAMY CURRY TUNA PASTA SALAD

Steps:

• Whisk dressing with curry paste and lime juice until combined.
• Toss fusilli with tuna, green onions, cilantro, almonds and raisins. Add dressing and toss to combine. The salad can be reserved, tightly covered, in refrigerator for up to 1 day.

CURRIED TUNA SALAD

Steps:

• In a mixing bowl break the tuna up with a fork. Toss with the onion, fresh coriander, and raisins.
• In a small saute pan, heat the oil over medium heat, add the curry powder, and stir until fragrant, about 30 seconds. Remove pan from the heat and set oil aside to cool.
• Add the curry oil to the mayonnaise, season with salt, and pepper to taste and add the lime juice. Gently mix the tuna with the seasoned mayonnaise. Serve on a bed of lettuce or in a sandwich.
• Yield: 3 to 4 servings

SEASHELL PASTA AND TUNA SALAD

Steps:

• In a large mixing bowl, add the first 5 ingredients; stir to mix.
• Add in mayo, salt, and pepper; stir to combine.
• Cover and refrigerate until well chilled.
• Line individual salad plates with lettuce; mound tuna salad on top; garnish with tomato wedges.
