MINI SWEET POTATO SAMOSAS
Mini samosas made with curried sweet potatoes and wontons. Serve with ketchup or chutney.

Steps:
- Simmer sweet potatoes with a little water until very soft. Drain, and mash with butter, milk, onion soup mix, and curry powder.
- Preheat oven to 375 degrees F (190 degrees C).
- Place about 1 teaspoon of the sweet potato mixture into the center of each wonton wrapper. Brush two adjacent edges of wrapper with water, fold into a triangle, and press the edges together to seal. Brush both sides with sesame oil. Place the samosas on a baking sheet.
- Bake in preheated oven for 10 minutes, then turn over, and bake for 5 minutes more.

Steps:
- Heat oil to 350F.
- Divide cream cheese into 20 equal parts.
- Place a cream cheese cube on top of each wonton wrapper.
- Top each with about ¼ t scallion and a dash or 2 of curry powder.
- Brush 2 adjacent sides of each wrapper with beaten egg and fold wrapper to seal into a triangular shape.
- Deep-fry wontons in hot oil until golden.
- Drain on paper towel.
- Serve hot with a bowl of sweet and sour sauce on the side.

LEFTOVER SWEET POTATO WONTONS
These delicious tiny appetizers are made using leftover cooked sweet potatoes but you could use any mashed vegetable eg. pumpkin or normal potato with added ham/bacon or seasonings to taste.

- Melt 2 tablespoons butter in a large heavy skillet, and cook red pepper, onion and curry powder until tender.
- Stir in cooked sweet potatoes. Cool.
- Stir flour, sour cream, and chutney
- Preheat oven to 350 degrees. Brush wonton squares with 2 tablespoons melted butter and press each into miniature muffin cups.
- Spoon sweet potato mixture into the wonton shells and bake at 350 degrees for 12-15 minutes until golden brown.

WONDERFUL CURRIED SWEET POTATO SOUP
This IS a WONDERFUL SOUP. And look at the list, just a few ingredients! I came up with lots of GREAT ideas for the contest, but when I asked my friends what they liked best, they always mentioned this humble soup! How funny is that? The rum really makes a difference. It is added at the very end, so if you have kids at the table and you're worried about it, just serve them first and add the rum later. You may want to leave it out altogether, but just let me tell you one more time that the RUM IS a LOVELY ADDITION. I use Patak's curry paste which is available in Asian stores where I live. Madras is labelled as a hot paste and Korma as mild. I've also tried a Patak's paste called HOT/TRES EPICE which I do NOT RECOMMEND.

- SOUP:.
- In a soup pot, heat oil over medium-low heat. Add curry paste and onions and cook for 4 minutes, stirring occasionally. Reduce heat if necessary. Add garlic clove and ginger and cook for another 1-2 minutes.
- Add sweet potatoes and pepper. Mix. Add stock. Cook for 15 minutes or until vegetables are very soft.
- Puree the ingredients in batches in a blender or puree the whole amount directly in the pot with a hand blender (if pot is high enough).
- Check if you like the consistency of the soup. Add more stock or water if desired and adjust the seasonings (check if salt is needed). You can add more curry paste if desired, but most pastes need to be cooked first before adding to a dish. Add rum if using.
- Serve:.
- Serve in individual bowls and top each with a tablespoon of sour cream and a sprinkle of sweet paprika.

- Combine flour, curry powder, white sugar, brown sugar, baking powder, cumin, salt, cayenne pepper, and black pepper in a bowl.
- Whisk together eggs and milk in a separate bowl. Pour into flour mixture and stir until well blended and batter has no lumps. Stir in sweet potatoes until fully combined.
- Heat enough oil to cover the bottom of a heavy skillet over medium heat. Drop batter by tablespoonfuls into hot oil, using spatula to flatten. Fry until well browned, about 3 to 5 minutes per side.
- Drain on paper towels and serve hot.

- Heat oven to 350°. Lightly spray 24 small muffin cups, 1 3/4x1 inch, with cooking spray.
- Melt 1 tablespoon margarine in 10-inch skillet over medium-low heat. Stir in sweet potato, bell pepper and onions. Cover and cook 3 to 5 minutes, stirring occasionally, until sweet potato is tender. Stir in curry powder and salt. Cool slightly.
- Beat egg and flour in medium bowl until smooth; beat in yogurt. Stir in sweet potato mixture. Brush one side of each wonton square with melted margarine. Press each square, margarine side up, into muffin cup. Spoon sweet potato mixture into wontons. (Cover and refrigerate up to 8 hours.)
