Sweet Potato and Gruyere Gratin image

This elegant and creamy take on a sweet potato gratin is elevated with a Gruyere cheese sauce made with four fresh herbs. Top with more fresh herbs before serving, if desired.

¾ cup whipping cream
¾ cup milk
¼ cup unsalted butter
2 cloves garlic, minced
1 tablespoon chopped fresh parsley
1 tablespoon chopped fresh thyme
1 tablespoon chopped fresh sage
1 tablespoon chopped fresh rosemary
1 ½ teaspoons salt
¾ teaspoon ground black pepper
3 pounds sweet potatoes, peeled and thinly sliced
1 ½ cups shredded Gruyere cheese
aluminum foil

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Lightly grease a 9x13-inch baking dish.
  • Stir together cream, milk, butter, and garlic in a small saucepan over medium heat and bring to a simmer. Remove from heat and stir in parsley, thyme, sage, rosemary, salt, and pepper.
  • Arrange 1/2 of the sweet potatoes in the bottom of the prepared baking dish, pour 1/2 of the cream mixture on top, and sprinkle with 1/2 of the Gruyere cheese. Repeat layers once more; cover with aluminum foil.
  • Bake in the preheated oven for 30 minutes. Remove foil and continue to bake, uncovered, until potatoes are tender and cream and cheese mixture is bubbly and golden brown, about 15 minutes. Remove from the oven and allow to sit for 10 minutes before serving.

2 pounds Yukon Gold potatoes, peeled and quartered
1 large sweet onion, finely chopped
2 tablespoons butter
4 garlic cloves, minced
2 cups heavy whipping cream
5 bay leaves
1 tablespoon curry powder
1/2 teaspoon salt
1/2 teaspoon pepper
1/8 teaspoon ground nutmeg
1 cup grated Parmesan cheese, divided
2 teaspoons minced fresh thyme

Steps:

  • In a food processor fitted with the slicing blade, slice potatoes; set aside., In a Dutch oven, saute onion in butter until tender. Add garlic; cook 1 minute longer. Add the cream, bay leaves, curry powder, salt, pepper, nutmeg and potatoes. Bring to a boil. Reduce heat; simmer, uncovered, for 8-10 minutes or until potatoes are almost tender. Discard bay leaves; stir in 3/4 cup cheese and thyme., Transfer to a greased 13-in. x 9-in. baking dish. Sprinkle with remaining cheese. Bake, uncovered, at 400° for 25-30 minutes or until golden brown and potatoes are tender. Let stand for 10 minutes before serving.

1 teaspoon ground black pepper, divided
2 cups shredded Monterey Jack cheese
1 green onion, thinly sliced

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 3-quart baking dish.
  • Stir together whipping cream, yogurt, curry paste, and honey; pour half into the dish. Arrange ham, potatoes, and leek in an overlapping layer, then top with remaining whipping cream mixture. Sprinkle with salt, 1/2 teaspoon pepper, and cheese.

1 1/2 cups sour cream, divided
3 cups shredded extra-sharp white cheddar (about 12 ounces)

Steps:

  • Preheat oven to 350°F. Cook sweet potatoes in large pot of boiling salted water until just tender, about 20 minutes (do not overcook). Drain well and cool. Peel sweet potatoes; cut into 1/4-inch-thick slices.
  • Mix curry powder, cumin, cinnamon, ginger, and salt in small bowl to blend. Completely line bottom of 9-inch-diameter springform pan with sweet potato slices, filling in any spaces with cut-up sweet potato slices. Press down lightly. Spread 1/2 cup sour cream over sweet potatoes. Sprinkle 1 tablespoon spice mixture over sour cream. Sprinkle with 1 cup cheese. Repeat twice with remaining sweet potatoes, sour cream, spice mixture, and cheese. Steps:

  • Preheat oven to 375 degrees. Pour 1 cup cream into a large ovenproof skillet. Arrange sweet potatoes evenly in pan, season with salt and pepper, and pour remaining cream on top. Gently press on potatoes to submerge. Bring to a simmer over medium, transfer to oven, and bake 12 minutes. Press on potatoes to submerge again and bake until potatoes are tender and cream is bubbling, 8 to 10 minutes more. Sprinkle with cinnamon, ginger, and cayenne. Let cool 10 minutes before serving.

1 bay leaf
2 cloves garlic
1/2 cup fresh finely chopped cilantro
2 1/2 lb sweet potatoes, peeled and cut about 1/2-inch thick (8 cups)
2 egg whites
2 cups shredded Parmesan cheese
1 cup ground bread crumbs
1 teaspoon kosher salt and cracked black pepper

Steps:

  • Heat the oven to 375°F. Butter a 13 x 9-inch (3-quart) glass baking dish.
  • In medium saucepan, combine cream, curry powder, turmeric, bay leaf, and garlic bring to a boil. Remove from heat and let the flavors steep for 1/2 hour. Strain the bay leaf and garlic from the cream. Add the cilantro into the cream.
  • Whip the egg whites to stiff peaks. Add sweet potatoe slices and salt and pepper. Toss to coat potatoe slices with egg whites.
  • Lay a layer of the sweet potatoes to cover bottom of baking dish. Sprinkle with Parmesan cheese. Repeat layering until all potatoe slices and Parmesean cheese is used. Pour the flavored cream evenly over the potatoes. Cover with foil.
  • Bake about 1 hour, until cream is bubbly. Remove foil. Sprinkle with bread crumbs and bake an additional 15 minutes.

1 quart heavy cream
4 large sweet potatoes
2 tablespoons Madras curry powder
2 egg whites
1/4 teaspoon ground turmeric
2 cups Parmesan
1 bay leaf
2 cups toasted almond pieces
2 cloves garlic
1 teaspoon kosher salt and cracked black pepper
1/2 bunch fresh finely-chopped cilantro

Steps:

  • Preheat the oven to 375°. Butter a 3-quart casserole pan.
  • Bring the cream, curry powder, turmeric, bay leaf, and garlic to boil in a small saucepan. Set aside and let the flavors steep for half an hour.
  • Strain the bay leaf and garlic from the cream. Add the cilantro into the cream.
  • Peel the sweet potatoes. Slice them 1/2-inch thick.
  • Whip the egg whites to stiff peaks. Toss the sweet potatoes into the egg whites, along with the salt and pepper, and mix.
  • Put a layer of the sweet potatoes in the casserole pan. Sprinkle the layer with Parmesan cheese. Repeat until you are out of potatoes.
  • Pour the flavored cream over the potatoes until it is all gone and evenly distributed.
  • Finish the casserole with the remaining Parmesan cheese and the almonds.
  • Cover the dish with aluminum foil and bake in the oven until the casserole is golden brown and bubbly, about 30 to 45 minutes. Serve hot.
