PILAF FOR A CURRY BANQUET

2 tablespoons vegetable oil
1 large onion, finely chopped
2 cloves
3 cardamom pods, bruised
1 cinnamon stick, broken into 3
1/2 teaspoon cumin seeds
1/2 teaspoon nigella seeds, optional
2 1/2 cups basmati rice
4 cups chicken stock
1/2 cup sliced almonds, toasted, for garnish
2 to 3 tablespoons chopped fresh cilantro leaves, for garnish
Special equipment: deep saucepan, 9 1/2-inch diameter, with lid

Steps:

  • Cook the onion in the oil, in a deep saucepan with the cloves, cardamom pods, cinnamon stick, cumin seeds, and nigella seeds, if using, until the onion is slightly browned and soft. Keep the heat medium to low and stir frequently; this should take about 10 minutes.
  • Add the rice and move it about in the oily spiced onion until it is slicked and glossy, then pour in the stock and bring the pan to the boil. Cover the pan with a lid and cook over the lowest heat possible for 20 minutes.
  • Turn off the heat, take the lid off, cover with a tea towel and clamp the lid back on the saucepan. You can leave the rice to rest like this for at least 10 minutes, and up to about 1 hour. Fork the rice through when you are ready to serve it, scattering the toasted sliced almonds and cilantro on top.

Steps:

  • In a large skillet, saute 1/4 cup onions and garlic in butter until tender. Stir in rice and curry powder. Saute for 2-3 minutes or until rice is lightly browned., In a saucepan, heat broth and salt. Pour over rice mixture; stir. Cover and simmer for 35-40 minutes or until rice is tender. Remove from the heat; stir in raisins, almonds and remaining onions.

3 pounds black goat meat, cubed
1 tablespoon red wine vinegar
1 tablespoon fine sea salt
water to cover
1 tablespoon rubbed sage leaves
4 cups brown basmati rice
1 tablespoon sesame oil
2 onions, sliced
1 teaspoon minced garlic
1 teaspoon minced ginger
1 teaspoon garam masala
½ teaspoon dried basil leaves
¼ teaspoon ground coriander
¼ teaspoon ground rosemary
¼ cup sliced hot chile peppers
½ teaspoon rosemary leaves
⅛ teaspoon minced lemongrass
2 tablespoons ghee (clarified butter)
1 teaspoon Madras curry powder
⅛ teaspoon ground fenugreek seeds

Steps:

  • Combine goat meat, red wine vinegar, and salt in a large pot. Pour in enough water to cover by 1 inch. Bring to a boil; cook until goat is tender, about 1 hour. Drain, reserving stock. Rub sage leaves over goat.
  • Place basmati rice in a large container and cover with several inches of cool water. Let soak, about 30 minutes. Drain.
  • Heat sesame oil in a large pot over medium heat. Add onion, garlic, and ginger; cook and stir until onion is browned, about 10 minutes. Stir in garam masala, basil, coriander, and ground rosemary; cook until fragrant, about 30 seconds.
  • Stir goat and chile peppers into the pot; cook and stir flavors combine, 3 to 5 minutes. Sprinkle rosemary leaves and lemongrass over goat. Continue cooking until browned, about 10 minutes.
  • Melt ghee in a large skillet over medium heat. Add curry powder and fenugreek; cook until fragrant, about 1 minute. Add drained basmati rice; stir until evenly coated with ghee, 1 to 2 minutes.
  • Pour rice mixture over goat in the pot; do not stir. Pour in 6 cups reserved stock. Bring to a boil; reduce heat to low and simmer, covered, until rice is fluffy and tender, 15 to 20 minutes. Remove from heat and let stand for 20 minutes before uncovering.

  • Saute 1 chopped onion, 2 smashed garlic cloves, 1 cinnamon stick, a strip of lemon zest, 1/2 teaspoon curry powder and a pinch of turmeric in a saucepan with butter and olive oil until lightly browned. Add 1 cup basmati rice and stir until toasted. Add 1 1/3 cups water, season with salt and bring to a boil, then cover and simmer 15 minutes. Let sit 5 minutes, then fluff with a fork and add a splash of lemon juice and some cilantro and cashews.

2 tablespoons extra virgin olive oil
1 cup diced onion
2 teaspoons minced garlic
1 teaspoon minced ginger
1 cup uncooked basmati rice
1 cup uncooked red lentils
1½ cup fresh diced tomatoes
1½ teaspoons Garam Masala
2 tablespoons Thai Red Curry Paste
¼ cup diced fresh cilantro leaves, plus more for garnish
½ cup canned coconut milk
3 cups water
½ teaspoon kosher salt
Few grinds freshly cracked black pepper

Steps:

  • In a medium sauce pan with a tight fitting lid, heat oil over medium high heat.
  • Add onion, garlic and ginger and sauté for three minutes.
  • Add dry rice and dry lentils and sauté for two minutes.
  • Reduce heat to medium and add fresh tomato, garam masala and curry paste and stir and cook for one minute.
  • Add cilantro, coconut milk and water and raise heat to high.
  • Bring to a boil, cover and lower heat to low.
  • Cook covered for 20 minutes.
  • Remove from heat and add salt and pepper, stir and let sit covered for five minutes.
  • Serve with additional chopped cilantro.

2 teaspoons vegetable oil
1 small red bell pepper, chopped
1 cup chopped onion
1 cup long-grain brown rice (uncooked)
1-1/2 tablespoons mild curry powder
1 teaspoon ground cumin
2-1/2 cups reduced-sodium ready-to-use vegetable, or chicken, broth
8 ounces fully cooked peeled and deveined medium shrimp
1 cup frozen petite peas, thawed
3/4 cup packed fresh cilantro leaves, chopped
2 tablespoons fresh squeezed lime juice

Steps:

  • Heat the oil in a large skillet over medium-high heat.
  • Stir in the red pepper and onion and cook for 6 to 8 minutes until softened, stirring occasionally to prevent burning.
  • Add the rice, curry powder and cumin and continue stirring for 1 minute.
  • Stir in the broth and bring mixture to a boil. Once boiling, reduce to low heat, cover skillet and simmer for 40 to 45 minutes, just until liquid is absorbed.
  • Add the shrimp, peas, cilantro and lime juice and stir for 1 to 2 minutes, until heated through.
  • Divide evenly among 4 plates or bowls and serve immediately.

1/2 cup Spam, diced
1/3 cup onion, diced
1 (7 ounce) can mushrooms, and the liquid
1/3 cup chicken broth
1/3 cup raw rice
1 tablespoon butter
1 tablespoon olive oil
1/4 teaspoon black pepper
1/4 teaspoon curry powder

Steps:

  • Add the olive oil and the butter to a hot 12 inch frying pan, that has a tight fitting lid, and sir until melted.
  • Add the onion and saute until transparent, followed by the drained mushrooms and continue to saute the mixture.
  • Add the curry powder and spam and when the spam starts to brown, add the rice and stir until all the grains are covered in the oil/butter.
  • Add enough chicken broth to the liquid from the mushroom can to bring the total to 2/3 cup of liquid, pour into the pan.
  • Put on the cover, lower the heat to the minimum flame and let sit for 15 minutes.
  • Turn off the heat DO NOT PEEK and allow to sit for an additional 15 minutes.
  • Taste and adjust the flavors with the pepper.
