A classic New Zealand pickled onion, has a lovely thick pickling sauce with a delightful curry taste. Not for wimps! So harden up and give this one a try, you'll love it.

½ cup salt
2 quarts cold water
2 ½ pounds fresh pearl onions, peeled
1 cup packed brown sugar
2 tablespoons flour
2 teaspoons curry powder
1 teaspoon ground turmeric
1 teaspoon dry mustard powder
1 teaspoon ground ginger
1 teaspoon ground allspice
2 ¾ cups malt vinegar

Steps:

  • Stir together the salt and water in a non-reactive bowl until the salt has dissolved. Add onions, cover, and let stand at room temperature for 24 hours.
  • Stir together the brown sugar, flour, curry powder, turmeric, mustard powder, ginger, and allspice in a saucepan until evenly combined. Slowly stir in the malt vinegar, and bring to a boil over medium-high heat, stirring constantly until the mixture thickens, about 2 minutes. Once thick, set aside and allow to cool.
  • Drain the onions, and pack into two sterilized quart canning jars. Pour the warm sauce over the onions to cover. Seal with lids and rings. Leave in a cool, dark place 4 to 6 weeks to allow the flavors to develop.

3 cups water
2 red onions, thinly sliced into half-moons
¾ cup white wine vinegar
1 teaspoon sea salt
1 teaspoon white sugar
5 black peppercorns

Steps:

  • Bring water to a boil in a saucepan.
  • Stuff onion slices into a pint-size Mason jar. Pour some of the boiling water over the onions. Let rest for 10 seconds. Pour out water through a mesh strainer, keeping onions in the jar. Repeat twice more to cook onions slightly.
  • Measure vinegar into a bowl. Stir in salt and sugar until dissolved. Add peppercorns. Pour vinegar solution over onions. Seal and shake well.
  • Refrigerate at least 1 hour before serving so that the flavor develops.

1/2 small head cauliflower, cut into bite-size florets
1 small red onion, sliced 1/4 inch thick
1 clove garlic, thinly sliced
3/4 cup red wine vinegar
3/4 cup distilled white vinegar
2 tablespoons sugar
Kosher salt
1 teaspoon coriander seeds
1 wide strip lemon zest

Steps:

  • Bring a medium pot of water to a boil. Add the cauliflower and cook until crisp-tender, about 2 minutes. Drain and rinse under cold water until cool. Pack the cauliflower, onion and garlic into a 1-quart jar.
  • Make the brine: Combine the red wine vinegar, distilled white vinegar, 3/4 cup water, the sugar, 1 1/2 teaspoons salt, the coriander seeds and lemon zest in a small saucepan and bring to a boil. Pour the hot brine into the jar and let cool completely. Cover and refrigerate overnight or up to 1 week.

1/2 cup mayonnaise
1/4 cup plain yogurt
2 tablespoons fresh lemon juice
2 teaspoons curry powder
2 teaspoons honey
1 teaspoon kosher salt
3/4 teaspoon freshly ground black pepper
2 (15.5 ounce) cans chickpeas, rinsed and drained
1/4 cup golden raisins
2 tablespoons cilantro, chopped
4 to 6 pieces pita bread, for serving
Packaged slaw mix, for serving
Ryan's Pickled Onions, for serving (recipe follows)
1 large red onion, sliced
1/4 cup apple cider vinegar
1/4 cup white vinegar
2 tablespoons sugar
1 tablespoon black peppercorns
2 teaspoons salt

Steps:

  • Add the mayonnaise, yogurt, lemon juice, curry powder, honey, salt and pepper to a food processor. Pulse a few times to combine. Add the chickpeas and pulse until the chickpeas are slightly smashed, 5 or 6 more times.
  • Empty the mixture into a serving bowl. Fold in the raisins and cilantro until everything is fully coated. Serve immediately or refrigerate until ready to serve. Serve in a pita with cabbage mix and Ryan's Pickled Onions.
  • Add the onions, apple cider vinegar, white vinegar, sugar, peppercorns, salt and 1 cup water to a glass pint jar. Stir or shake well to mix. Let marinate overnight in the refrigerator, then keep for up to a month in the fridge.

This was a happy accident. I have pickled red onions on-hand at any given time, but I generally like to deviate from the standard onion-vinegar-sugar-salt format each time. I've been using rosemary lately, but I ran out of that, so I decided to throw in some parsley. Then, since I felt myself drawn once again to North Africa in my seasoning, I reached for the ras el hanout, but instead grabbed turmeric...and fenugreek...and cumin. I had just made a curried picked red onion. Besides the wonderful taste profile, what surprised me most was what it did to the color. You'd expect a pickled red onion to be a magenta color as the pigment of the outer later bleeds into the rest of the onion fiber. Well, as I learned as a small child, red + yellow = orange. Pretty!

1 cup white vinegar
1 cup water
1 teaspoon sugar
1 teaspoon salt
1 teaspoon turmeric
1 teaspoon ground fenugreek
1 teaspoon cumin

1 tablespoon parsley (keep together in a single bunch)
1/2 red onion, thinly sliced

Steps:

  • Bring water and vinegar to a boil in a small pot. Dissolve sugar and salt into liquid, then stir in remaining ingredients except for onion.
  • Remove from heat, add sliced onion, and cover. Steep for at least 20 minutes.
  • Remove onions from liquid with tongs - retaining liquid - and place in a glass jar. Pour liquid from pot, making sure that parsley and at least some of the peppercorns and mustard seed get tin the jar.
  • Allow to cool on counter top, then refrigerate.

  • Combine the first 4 Pickled Red Onion & Jalapeño ingredients in a small, deep bowl and stir until the sugar and salt are completely dissolved. Then add the red onion and jalapeño (or mild green chile) slices and fully submerge them in the pickling solution. Cover and let sit at room temperature for 30-60 minutes (transfer to the fridge if longer).
  • Warm the 2 tablespoons canola or vegetable oil over medium heat in large, high-sided cast-iron skillet or Dutch oven. Sprinkle 1 teaspoon salt (reserve remaining) and the black pepper over the cubed chicken pieces and evenly distribute them around the pan in the hot oil. Let them brown on one side. Then turn the chicken pieces and let them brown on the opposite side. Resist the urge to flip the chicken pieces too often (so that they have time to develop some color), but also be sure to cook them through on all sides. Once done (typically 8-10 minutes), remove the chicken pieces from the pan and set them aside on a plate. Turn the heat beneath the pan down to low.
  • Meanwhile, spread the cashews across a small, rimmed baking sheet and briefly warm them in a 300° oven for 10 minutes. Immediately transfer the warm nuts to the bowl of a food processor and whir them until they turn into a very fine dust (approximately 1-2 minutes). Then add the halved garlic cloves and coarsely chopped ginger. Let the food processor go for another 30-60 seconds until the garlic and ginger are completely pulverized as well (scrape down sides of bowl as needed). Lastly, add the yogurt, honey, curry powder, garam masala, and remaining 1 teaspoon salt and run the food processor until all of the ingredients are incorporated and the mixture resembles a smooth, thick sauce. Set aside until ready to use.
  • In the same skillet or Dutch oven used to sauté the chicken, briefly cook the tomato paste over low heat (30 seconds). Then increase the heat beneath the pan to medium and add 1 cup of the chicken broth or stock. Use a whisk to scrape-up any brown bits from the bottom of the pan and fully incorporate the tomato paste into the liquid. Next add the prepared cashew curry sauce to the pan and whisk continuously until fully combined. Let simmer for 3-5 minutes. Add up to 1/2 cup more chicken broth or stock as needed to achieve the desired consistency. Finally, add the cooked chicken pieces to the pan and warm through.
