CURRY CHICKEN ORZO SALAD



Curry Chicken Orzo Salad image

Tender chicken, orzo, apples, almonds and celery tossed in a creamy curried mayonnaise dressing. Serve on thick sliced bread or croissants.

Number Of Ingredients 12

3-4 cups cooked diced chicken
1/4 cup orzo pasta, cooked and drained
1/2 cup diced celery
2-3 green onions, chopped
1 green apple, chopped
1/2 cup toasted, sliced almonds
1/2 cup mayonnaise
1/4 cup sour cream
1/2 teaspoon curry powder
1/4 teaspoon garlic powder
Dash of cayenne pepper
Salt and pepper, to taste

Steps:

  • In a medium bowl, toss together the chicken, cooked orzo, celery, onion, apple and sliced almonds.
  • In a small bowl, whisk together the mayonnaise, sour cream, curry powder, garlic powder and cayenne pepper.
  • Add the mayonnaise mixture to the chicken and mix well. Season with salt and pepper, to taste.
  • Refrigerator until serving.

Steps:

  • Brown the orzo in the butter. Add the curry powder and the broth and boil until the pasta is cooked. Drain (if necessary) and chill. Mix the vegetables and the pasta together. Combine the mayonnaise and the artichoke liquid together to make a dressing. Toss the pasta and the dressing together. Add the chicken and serve.
