1/2 cup spicy brown mustard
1/4 cup dry white wine
1 tablespoon curry powder
1 tablespoon olive oil
1/2 teaspoon crushed red pepper flakes
1 green onion, sliced
1 garlic clove, minced
4 boneless pork loin chops, cut 1 inch thick (about 1 pound total)
papayas, mango (optional) or star fruit slices (optional)

Steps:

  • For marinade, stir together brown mustard, wine, curry powder, oil, red pepper, green onion, and garlic.
  • Place pork in a plastic bag set in a shallow dish. Pour marinade over pork in bag; seal bag. Marinate in the refrigerator for 6 to 24 hours, turning bag occasionally.
  • Drain pork, reserving marinade.Grill for 30 to 35 minutes or until juices run clear, turning once and brushing with marinade halfway through grilling time. Discard any remaining marinade.
  • Serve pork with fruit and, if desired, cooked brown rice.
  • Total time does not include marinate time.

3 tablespoons rapeseed or coconut oil
1 teaspoon black mustard seeds
1 cinnamon stick
1 tablespoon cumin seeds
20 curry leaves
2 large red onions - finely chopped
2 teaspoons red chilli powder (or to taste)
3 tablespoons Madras curry powder
1 teaspoon turmeric
2 tablespoons garlic and ginger paste
1 tablespoon tomato paste
1 or more green chillies - cut into thin rings
1 generous tablespoon tamarind pulp
400ml thick coconut milk
900g (2 lbs.) pork leg - fun into large chunks
Water or chicken stock to cover
Salt and black pepper to taste
1 teaspoon garam masala

Steps:

  • Heat the oil over medium high heat in a wok or large saucepan.
  • When hot, add the black mustard seeds and cinnamon stick. When the mustard seeds begin to pop, add the cumin seeds and curry leaves.
  • Stir this all around in the oil for about 30 seconds and then add the chopped onions. Fry the onions until soft and translucent and the pour in the ground spices and garlic and ginger paste.
  • Add the chopped chillies and tomato paste, followed byth the tamarind pulp and coconut milk.
  • Mix all these ingredients well and then add the pork with just enough water or stock to cover.
  • Simmer for about 40 minutes or until the pork is fork tender.
  • Season with salt and pepper to taste and sprinkle with the garam masala to serve.

1/2 cup Dijon mustard
3/4 teaspoon curry powder
Freshly ground pepper to taste
2 2 1/2-pound boned and rolled pork loins
2 bunches fresh spinach, wilted

Steps:

  • Stir together the mustard, curry powder and pepper. Rub the mixture all over pork loins, and let stand until the pork comes to room temperature.
  • Preheat the oven to 350 degrees. Put the pork loins in a large roasting pan, and roast until they reach an internal temperature of 160 degrees, about 1 hour 10 minutes. Let stand 10 minutes. Remove the string.
  • Cut slices off one loin, and put the slices and the remaining loin on a platter. Surround the platter with wilted spinach, and serve, cutting more slices as needed or allowing guests to cut their own.

My sister-in-law made this one day and I loved it. I never would have tried it had I not tasted it first. It now makes a regular appearance in our dinner menus. It comes from the cookbook, 'Crazy Plates'. I have on occasion overdone the orange zest so now I often leave it out.

1 1/2 lbs pork tenderloin
1/2 cup pure maple syrup
2 tablespoons reduced sodium soy sauce, and
2 tablespoons ketchup
1 tablespoon Dijon mustard
2 teaspoons grated orange zest (optional)
1 1/2 teaspoons curry powder, and
1 1/2 teaspoons ground coriander
1 teaspoon Worcestershire sauce
2 garlic cloves, minced

Steps:

  • Trim pork of visible fat.
  • Place pork in a large resealable bag.
  • Wisk all the ingredients together and pour over pork.
  • Marinate for at least 1 hour.
  • Transfer pork and marinate to a small roasting or baking pan.
  • Roast, uncovered at 350 F for 40 minutes It should still be slightly pink.
  • Let stand for 10 minutes before slicing.
  • Drizzle with extra sauce and serve.

Steps:

  • Trim fat from pork.
  • Mix sugar and spices in a small bowl.
  • Rub pork with spice mixture.
  • Place pork on a broiler pan coated with cooking spray.
  • Insert a meat thermometer in the thickest part.
  • Bake at 425 degrees for about 25-35 minutes, or until the thermometer registers 160 degrees (meat will be slightly pink in the center).
  • Let stand 5 minutes before slicing.
  • Serve with mango chutney.
