Steps:
- Heat oven to 350°F.
- Mix all ingredients except Vegetable Sauce. Spread evenly in ungreased loaf pan, 9x5x3 inches. Bake uncovered about 1 hour 30 minutes or until no longer pink in center.
- Serve with Vegetable Sauce.

- Preheat the oven to 325 degrees F.
- Place the carrot, celery, onion, red bell pepper, mushrooms, and garlic in a food processor, and pulse until very finely chopped, almost to a puree. Place the minced vegetables into a large mixing bowl, and mix in ground chuck, Worcestershire sauce, and egg. Add Italian herbs, salt, black pepper, and cayenne pepper. Mix gently with a wooden spoon to incorporate vegetables and egg into the meat. Pour in bread crumbs. With your hand, gently mix in the crumbs with your fingertips just until combined, about 1 minute.
- Form the meatloaf into a ball. Pour olive oil into a baking dish and place the ball of meat into the dish. Shape the ball into a loaf, about 4 inches high by 6 inches across.
- Bake in the preheated oven just until the meatloaf is hot, about 15 minutes.
- Meanwhile, in a small bowl, mix together brown sugar, ketchup, Dijon mustard, and hot sauce. Stir until the brown sugar has dissolved.
- Remove the meatloaf from the oven. With the back of a spoon, smooth the glaze onto the top of the meatloaf, then pull a little bit of glaze down the sides of the meatloaf with the back of the spoon.
- Return meatloaf to oven, and bake until the loaf is no longer pink inside and the glaze has baked onto the loaf, 30 to 40 more minutes. An instant-read thermometer inserted into the thickest part of the loaf should read at least 160 degrees F (70 degrees C). Cooking time will depend on shape and thickness of the meatloaf.

- In a large bowl, combine the eggs, bread crumbs and dressing mix. Crumble beef over mixture and mix well. , On a large piece of heavy-duty foil, pat beef mixture into a 10x8-in. rectangle. Combine the stuffing mix, celery, mayonnaise, water and curry powder; spoon down center of rectangle. Bring long sides over stuffing mixture, peeling foil away while folding. Seal edge and ends. - Place 5 eggs in cold water, cover with water, bring to a boil, then cover the pan and let stand for 8 minutes (2 minutes shy of hard-boiled eggs). Drain the eggs. Crack the shells and soak in cold water to loosen. Peel the eggs.Heat the skillet with spices to toast, then add the oil and stir to heat; add the onions, carrots, chili, ginger and garlic. Stir to soften for a few minutes, then deglaze the pan with sherry and cool.Pre-heat the oven to 375°F.Place the meat in a bowl. Squeeze the excess milk from the bread and crumble into crumbs as you add to the meat. Season the meat with salt and pepper. Combine the ketchup and sriracha. Add half the mixture to the meat. Add the cooled curry spice, vegetables, cilantro or parsley, and scallions to meat. Beat the remaining 2 eggs and add to the meat mixture. Combine the meatloaf mix.Line a large baking sheet with parchment and place the loaf mix down in large free-form rectangle shape. Set the cooked eggs end-to-end through the meat, then build the loaf up and around the eggs. The finished loaf should be 3-4 inches high and 10-12 inches long with the eggs evenly nested so that once cut, the hard boiled egg sliced will be at center of your loaf. Brush the loaf with remaining ketchup and Sriracha sauce and bake for 60-75 minutes, until cooked through. SOUTH AFRICAN CURRIED LAMB MEATLOAF

- Soak bread crumbs in milk in a small bowl until very soft, about 15 minutes, then drain in a sieve set over a bowl, lightly pressing to remove excess milk. Reserve milk.
- Put oven rack in middle position and preheat oven to 350°F. Butter baking dish.
- Cook onions, apple, and 1/4 teaspoon salt in butter in a 12-inch heavy skillet over moderately low heat, stirring occasionally, until onions and apple are softened, about 12 minutes (do not brown). Add raisins, almonds, curry powder, and sugar and cook, stirring, 1 minute, then remove from heat. Lightly beat 1 egg in a large bowl, then add bread crumbs, lamb or beef, raisin mixture, lemon juice and zest, 1 1/4 teaspoons salt, and pepper and blend with your hands until combined well; do not overmix. Spread meat mixture evenly in baking dish and bake 30 minutes.
- While meatloaf bakes, whisk together remaining 2 eggs, reserved milk, and remaining 1/4 teaspoon salt.
- Pour off excess fat from meatloaf (still in baking dish). Pour egg mixture over meatloaf (much of egg will fill space that has formed around meatloaf), then return to oven and bake until custard is just set, about 15 minutes more.

Good meatloaf is about as comforting as comfort food gets. Thankfully, meatloaf doesn't have to be complex to be good. It just needs to be tender (from breadcrumbs soaked in milk and gentle handling) and flavorful (from onion, garlic, and ketchup).

- Preheat oven to 400 degrees. Line a baking sheet with aluminum foil or parchment paper. Place bread in food processor; pulse until fine crumbs form. Transfer to a small bowl; stir in milk. Set aside, about 10 minutes, stirring occasionally.
- Meanwhile, in a large bowl, combine beef, pork, onion, garlic, egg, 1/4 cup ketchup, 1 1/2 teaspoons salt, and 1/4 teaspoon pepper. Add bread-milk mixture, and mix very gently with a fork (do not overmix).
- Place meat mixture on prepared baking sheet, and form into a loaf about 9 inches long and 4 to 5 inches wide.
- Bake, brushing twice with remaining 1/4 cup ketchup during baking, until an instant-read thermometer registers 160 degrees, 45 to 55 minutes. Let meatloaf rest 10 minutes before slicing and serving.
