CURRIED PEA DIP

Whenever I need a last-minute appetizer or snack, I pull out a bag of frozen peas, cook them briefly to defrost, then pulse them with whatever flavorings I have on hand like garlic, curry powder and coconut oil. This dip is always a huge hit served with grilled bread or crudite.

Number Of Ingredients 7

1 tablespoon extra-virgin coconut oil
1 onion, diced
Sea salt
1 clove garlic, minced
2 teaspoons mild curry powder
2 cups frozen peas, defrosted
1/4 cup thick yogurt or coconut yogurt, plus more for serving

Steps:

  • Warm the coconut oil in a skillet over medium heat. Add the onions and saute until golden, 6 to 8 minutes. Add a pinch of salt and the garlic and cook for another 3 minutes. Stir in the curry powder and peas and cook for 2 minutes. Remove from the heat and cool slightly. Place the pea mixture in a food processor with the yogurt and 1/4 cup water and puree until smooth, adding more salt to taste. To serve, transfer the dip to a bowl, top with a spoonful of yogurt and stir a few times to create a swirl.

This is a great dip, very easy to prepare and a big hit at parties and get togethers. I get asked for this recipe quite alot...hope you like it! Serve with crackers or fresh veggies.

4 ounces feta cheese
4 ounces cream cheese, softened
1/2 cup cottage cheese
1/4 cup mayonnaise
1 -2 garlic clove, minced
1/2 teaspoon curry (or more if you like)
1/4 teaspoon oregano
1/4 teaspoon thyme
1/4 teaspoon basil
1/4 teaspoon dill weed

Steps:

  • Mix all well with food processor or mixer until smooth.
  • More or less garlic and curry may be added according to taste.
  • Refrigerate well, and serve with crackers or fresh veggies.

  • A mayonnaise base is seasoned with curry, garlic, and Worcestershire sauce which blend together for an unusual flavor. This dip is always a smashing success. It's also fabulous as a sauce for cold steak, pork, or lamb, and divine with cold, poached shrimp! Combine all ingredients in a large bowl and mix well. Cover and refrigerate for at least 24 hours, allowing the flavors to blend together. (This dip will keep refrigerated for 2 to 3 weeks.) Present with an assortment of lightly blanched and raw vegetables.

1 teaspoon curry powder
1/2 teaspoon ground cumin
1 10-ounce package frozen chopped spinach, thawed, squeezed dry
3/4 cup nonfat sour cream
3/4 cup plain nonfat yogurt
2 garlic cloves, minced
1/4 teaspoon hot pepper sauce

Steps:

  • Stir curry and cumin in small dry skillet over medium-low heat just until fragrant, about 45 seconds. Remove from heat.
  • Combine chopped spinach, nonfat sour cream, nonfat yogurt and minced garlic in processor. Blend until spinach is pureed. Add curry mixture and hot sauce and process until blended. Season to taste with salt and pepper. Transfer to bowl. (Can be prepared 4 hours ahead. Cover and refrigerate.)

I live in a dorm where cooking is a daunting task; the space is very limited and the stove burns your eyebrow one day and ignoring me the next. This is the perfect and the most delicious dip I've ever encounter. There is no cooking and no dicing involved whatsoever. Just mix all the ingredients a few days in advance and buy some chips the day I serve it. Essentially if you know how to hold a spoon, you can make this; which makes this the perfect recipe for alot of friends of mine. The only problem I have is that my roomates can never wait one day for this to set; usually one third of it is gone the next morning.
