PANANG CURRY WITH CHICKEN, ASPARAGUS, AND MUSHROOMS

Panang Curry with Chicken, Asparagus, and Mushrooms image

Fragrant, peanut-laced Panang curry paste and coconut milk become the foundation for this quick curry.

Provided by Robert Danhi

Categories     Main Course

Yield 4

Number Of Ingredients 11

1 (13.5- to 14-oz.) can coconut milk, more for garnish
1/4 cup Panang curry paste
1 cup lower-salt chicken broth, or homemade chicken or vegetable broth
2 Tbs. light brown sugar or light brown palm sugar; more as needed
1 tsp. fish sauce; more as needed
1 lb. boneless chicken thighs or legs, cut into 1/4-thick bite-size strips
6 whole fresh or thawed frozen wild lime leaves (or substitute 1 tsp. finely grated lime zest)
1-1/2 cups bite-size asparagus pieces
1-1/2 cups oyster mushrooms, pulled apart into bite-size pieces
1/4 cup loosely packed chopped fresh cilantro (leaves and tender stems)
Fresh red chiles, cut into 1/8-inch strips or sliced into rings, for garnish

Steps:

  • Shake the can of coconut milk or stir it well (this creates a consistent thickness, since the fat often solidifies at the top of the can).In a 3- to 4-quart saucepan or wok over medium heat, simmer 1/2 cup of the coconut milk, stirring occasionally, until reduced by about half, 3 to 5 minutes. It will get very thick and shiny and may or may not separate; either is fine. Add the curry paste, whisk well, and cook, continuing to whisk, for 1 minute. Whisk in the broth, sugar, fish sauce, and remaining coconut milk. Bring to a simmer over medium-high heat. Add the chicken and lime leaves, and continue to simmer, adjusting the heat as necessary. After 2 minutes, add the asparagus and oyster mushrooms and continue to simmer until everything is tender and cooked through, about 3 more minutes. Remove the curry from the heat. Season to taste with more sugar and fish sauce, and stir in the cilantro. Transfer to a serving bowl (or serve right out of the pot). Remove the lime leaves or tell your guests to eat around them. Garnish with the red chiles and a drizzle of coconut milk.

CURRIED CHICKEN AND BROCCOLI CASSEROLE

Curried Chicken and Broccoli Casserole image

This chicken and broccoli casserole is my 13-year-old son's favorite dish and the one he requests for every one of his birthdays. It is very good and combines the creamy texture of the cheese sauce with the crunchy texture of the corn flakes. It is a standby meal and easy to make, freeze, and bake at a later date. You can freeze it up to 6 months. If frozen, bake uncovered for 1 hour.

LEMON ROASTED SPRING CHICKEN WITH ASPARAGUS

Lemon roasted spring chicken with asparagus image

Pop all the ingredients for this lemon roasted chicken into a roasting tin. With asparagus and peas, the colours and flavours sing spring

Provided by Shivi Ramoutar

Categories     Dinner

Time 1h10m

Number Of Ingredients 11

8 chicken pieces (thighs or drumsticks), bone-in, skin-on
2 small onions, cut into quarters
6 garlic cloves, unpeeled, bashed
1 lemon, sliced and pips removed
500g asparagus, woody ends trimmed
100g fresh or frozen peas
1 heaped tbsp dried oregano
2 tbsp olive oil
100ml chicken stock
25g butter
crusty bread, to serve

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Arrange the chicken pieces, onion wedges, garlic, lemon slices, asparagus and peas in a roasting tin in a single layer, then sprinkle over the oregano, drizzle with the olive oil and pour over the stock. Give everything a good stir to mix well, then dot the butter over the chicken pieces and season well. Cover the whole tin with foil and bake for 30 mins.
  • Remove the foil and bake for 20-30 mins more until the chicken is cooked through and the juices run clear, and the vegetables are tender.
  • Heat the grill to high. Put the tin under the grill for a few minutes to crisp up the chicken skin, if needed, being careful not to let the asparagus catch. Serve straight from the tin, or on a platter, with crusty bread to mop up the juices.

CURRY CHICKEN WITH ASPARAGUS

Curry Chicken with Asparagus image

I love the flavors that a good curry brings. It is a good dish to make when you have a little bit of this and a little bit of that to make a complete meal and have enough to bring to lunch the next day.

Provided by Kathy Williams

Categories     Chicken

Time 30m

Number Of Ingredients 11

6 boneless chicken thighs cut into bite size
5 slice bacon
1 medium onion
1 bell pepper chopped
1/2 lb asparagus cut into 1"pieces
2 Tbsp tomato paste
2 tsp garlic, minced
2-3 Tbsp curry powder
1 tsp ginger powder
1 c chicken broth
1 can(s) coconut milk

Steps:

  • 1. In a heavy pan or skillet cook bacon to render fat. Add chicken pieces, salt, pepper and brown on all sides. Remove and set aside.
  • 2. In the same pan, add onion, bell pepper, and asparagus, and cook until softened. Moving the vegetables aside add tomatoe paste and garlic and cook for 1-2 minutes, stir in the curry powder and ginger and cook a minute more. Add chicken and stir all together.
  • 3. Stir in chicken broth and lower heat, cover and simmer for about 5 minutes or until chicken is done. Stir in coconut milk and simmer a few minutes more. Serve over Jasmine rice. I like to put the curry sauce on the bottom then the rice and top with meat and vegetables and then more sauce.

CURRY CHICKEN DIVAN

Curry Chicken Divan image

This is a recipe that I got from my step-mother. My step-brother and I adopted it as a college dinner staple. :)

Provided by Spectatrix

Categories     Chicken

Time 1h5m

Yield 6 serving(s)

Number Of Ingredients 9

3 whole chicken breasts
2 (10 ounce) packages of chopped frozen broccoli
10 1/2 ounces cream of chicken soup (do not add water)
2/3 cup mayonnaise (or Miracle Whip)
1/3 cup evaporated milk
1/2 cup shredded cheddar cheese
1 teaspoon lemon juice
1/2 teaspoon curry powder
1 lb egg noodles

Steps:

  • Preheat oven to 350 degrees.
  • Cut the chicken into small pieces and cook however you'd like. I usually just cook it stove-top in a cast iron skillet.
  • Place broccoli and chicken into a greased 2-quart baking dish.
  • Mix soup (do not add water), mayo, milk, cheese, lemon juice, and curry power in a small bowl and pour over the chicken and broccoli.
  • Cover the baking dish and place in the oven.
  • Bake at 350 degrees for 45 minutes or until thoroughly heated. If you prefer to pre-cook the broccoli (microwave or stove-top), the casserole should only take about 30 minutes to bake.
  • While the casserole bakes, cook egg noodles according to package directions.
  • Serve chicken over noodles and enjoy!
