This chicken and broccoli casserole is my 13-year-old son's favorite dish and the one he requests for every one of his birthdays. It is very good and combines the creamy texture of the cheese sauce with the crunchy texture of the corn flakes. It is a standby meal and easy to make, freeze, and bake at a later date. You can freeze it up to 6 months. If frozen, bake uncovered for 1 hour.

1 bunch broccoli, cut into chunks - or more to taste
1 (3 pound) cooked rotisserie chicken, meat removed from bones and chopped
2 (10.75 ounce) cans cream of chicken soup
1 cup mayonnaise
¼ cup lemon juice
1 teaspoon curry powder
salt and ground black pepper to taste
1 cup shredded Cheddar cheese
1 cup crushed corn flakes cereal
¼ cup slivered almonds

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  • Place broccoli into a microwave-safe dish with a lid, pour in a small amount of water, cover, and cook on high in microwave until broccoli is steaming and bright green, 2 to 3 minutes. Carefully remove lid and spread broccoli into the bottom of the prepared baking dish. Spread cooked chicken in a layer over the broccoli.
  • Whisk cream of chicken soup, mayonnaise, lemon juice, curry powder, salt, and black pepper in a bowl and pour sauce over the chicken and broccoli. Spread the Cheddar cheese over the sauce and sprinkle casserole with corn flake crumbs and almonds.
  • Bake uncovered in the preheated oven until the casserole is bubbling, the cheese has melted, and the crumb topping is browned, about 30 minutes.

1-1/2 cups chicken broth, divided
1/4 teaspoon salt
1/2 cup quick-cooking grits
2 large eggs, beaten
2 cups shredded cheddar cheese, divided

1 can (10-3/4 ounces) condensed cream of chicken and mushroom soup, undiluted
1-1/2 cups mayonnaise
2 teaspoons curry powder
1 package (16 ounces) frozen broccoli-cauliflower blend
2 cups cubed cooked chicken
2 cups refrigerated diced potatoes with onion

Steps:

  • Bring water, 1 cup broth and salt to a boil in a large saucepan. Slowly stir in grits. Reduce heat; cook and stir 5-6 minutes or until thickened. Remove from heat; stir a small amount of grits into eggs. Return all to pan, stirring constantly. Add 1-1/2 cups cheese and butter; stir until melted., Preheat oven to 350°. 3 skinless chicken breasts, cut into cubes
2 bunches broccoli, with the stems cut off
1 (14 ounce) can cream of chicken soup
1 cup mayonnaise
2 -3 teaspoons curry powder
1 1/4 cups cheddar cheese, shredded
1/2 cup breadcrumbs
1 tablespoon butter

Steps:

  • Preheat the oven to 350 degrees.
  • In a bowl, mix together the cream of chicken soup, mayonnaise, curry powder and cheddar cheese.
  • Grease a 9 x 13" casserole dish with butter or PAM spray. Layer the broccoli and chicken in the pan as desired. Pour the curry mixture on top and use a spoon to fill it in around the chicken/broccoli.
  • In a pan on the stovetop, melt the butter on medium to high heat. Pour in the bread crumbs and stir around swiftly until all butter is absorbed into bread crumbs and bread crumbs are browned.
  • Sprinkle bread crumbs on top of casserole.
  • Place in oven and bake at 350 for 1 hour. Casserole should be bubbly and lightly browned when finished.
  • Serve over white rice.

12 Oz (340g) Chicken sausage of choice
2 Cloves minced garlic
3 Cups (320g) chopped mixed peppers
1 1/2 Cups (160g) Chopped onion
14.5 oz (400g) Can of diced tomatoes (drained)
1 Cup (120g) sliced white mushrooms
1 1/2 Cups (354ml) water
2 Cups (454g) low calorie tomato sauce
8oz (227g) box of Banza elbow macaroni (if you can't find Banza use a pasta substitution of your choice)
10 oz (280g) Fat-free mozzarella cheese
1 tsp Italian seasoning

Steps:

  • Coat a large pan with baking spray
  • Add in chicken sausage - removing casing if necessary
  • Cook until browned and set aside
  • Re-coat Pan and add in garlic, peppers and onions
  • Cook until browned
  • Now add in tomatoes, mushrooms, chicken sausage from earlier, and the Italian seasoning
  • Mix these ingredients well
  • Add in water and tomato sauce
  • Bring it up to a boil and let simmer for 15 minutes
  • In a 9X13 casserole dish add in just enough sauce to cover the bottom of the dish
  • Top with the uncooked pasta and cover with the rest of your sauce
  • Finally top with the cheese.
  • Cover with tin foil and cook at 350 Degrees | 177 Celsius for about an hour

0.5 tbsp oil
600g / 1.2lb sausages (, of choice (Note 1))
2 garlic cloves (, minced)
1 onion (, halved and sliced)
1 carrot (, peeled, sliced on the diagonal)
1 tbsp curry powder (, or more (Note 2))
3 tbsp flour (, any type (Note 3 for GF))
2 cups (500ml) chicken stock/broth (, low sodium)
1 tsp sugar
1/2 tsp salt (, plus more to taste)
1/2 tsp black pepper
1 cup peas (, frozen)

Steps:

  • Heat oil in a large skillet over medium high heat.
  • Cook sausages, turning to brown all over then remove. Optional: slice sausages into pieces on the diagonal.
  • In the same skillet, add garlic and onion. Cook for 2 minutes until translucent.
  • Add curry powder and stir for 30 seconds.
  • Add flour and mix for 30 seconds.
  • Gradually pour in chicken stock, mixing constantly.
  • Add carrots, sugar, salt and pepper, stir well.
  • Add sausages and peas, bring to simmer and cook for 3 minutes or until sauce thickens.
  • Serve over mashed potato, rice, pasta or noodles. For low carb, try mashed cauliflower!

16 Heck Chicken Italia Sausages
500 ml chicken stock
400 g tinned tomatoes
400 g mixed beans (drained)
1 onion (chopped)
2 garlic cloves
2 tbsp flour
2 carrots (chopped)
2 tbsp tomato puree
1 bay leaf
⅓ tsp dried oregano
1 tsp smoked paprika
1 tsp dried basil
1 tsp paprika
1 tsp salt
½ tsp pepper

Steps:

  • Quickly brown the sausages in a pan over a medium heat, then transfer to the slow cooker. In the same pan, soften the onions and garlic, then transfer to the slow cooker.
  • Sprinkle the flour into the slow cooker, stirring to ensure an even coating. Add all of the dried herbs and spices, salt, pepper, carrots and tomato puree. Pour in the tinned tomatoes, chicken stock, mixed beans and stir well. Drop in a bay leaf.
  • Cook on high for 4 hours or 6 on low.
  • Serve with good crusty bread!

8 fresh chicken sausage
2 onions, sliced
2 garlic cloves, crushed
1 piece fresh ginger, grated
2 granny smith apples, peeled, cored and diced
3 tablespoons indian korma curry paste or 3 teaspoons dried curry powder
2 cups chicken stock
400 g chopped tomatoes with juice
2 teaspoons cornflour
1 tablespoon warm water
2 tablespoons parsley, chopped

Steps:

  • Heat an ovenproof casserole or frying pan and add oil. Brown the sausages on each side until golden, about 10 minutes. Remove and place on a paper towel to absorb excess fat. Set aside.
  • Add onions and garlic and sauté for 5 minutes until translucent. Add ginger and apple and sauté for a further 3 minutes until the apple start to soften. Stir in curry paste, chicken stock and tomatoes and bring to the boil.
  • Add the browned sausages, bring back to the boil, cover, then place in a preheated oven at 180°C for 20 minutes.
  • Place cornflour into a small bowl and cover with warm water, stir until smooth. Remove casserole from the oven and stir through the cornflour. Cover and return the casserole to the oven for a further 5 minutes to thicken.
  • Lastly, sprinkle the casserole with chopped parsley and serve with hot mashed potato or steamed rice.

1 Tbsp cornstarch
1 Tbsp water

Steps:

  • In a frypan, cook the sausages over medium heat. Once cooked, allow to cool, and cut into bite-sized chunks.
  • In a slow cooker, add the sausages, onion, garlic, potatoes, carrots, curry powder, fruit chutney, and the beef stock. Mix slightly.
  • Cook on low for 6-8 hours.
