32 Belgian endive leaves (about 4 heads)
3 Tbsp. BREAKSTONE'S or KNUDSEN Sour Cream

Steps:

  • Combine all ingredients except endive leaves and sour cream.
  • Spoon onto endive leaves.
  • Top with sour cream.

2 tablespoons vegetable oil
1 tablespoon butter
6 chicken thighs
Salt and pepper
1 cup chopped onion
3 teaspoons curry powder
1/2 teaspoon cayenne
1 teaspoon cinnamon
1 teaspoon cumin
2 carrots, peeled and sliced on diagonal
1 1/2 cups low sodium chicken stock
1 cup broccoli florets
1/4 cup heavy cream
3/4 cup frozen peas
Cooked basmati rice, for serving

Steps:

  • Heat oil in large skillet and stir in butter to melt. Season chicken thighs with salt and pepper. Cook thighs skin side down until golden brown. Flip chicken and continue to cook until golden brown. Remove chicken to a plate.
  • Stir in onions and cook until tender. Stir in curry, cayenne, cinnamon and cumin and cook until aromas are released. Stir in carrots and toss to coat. Add chicken stock and bring to a simmer.
  • Place chicken thighs back into skillet and stir in broccoli. Cover and simmer for 15 minutes to cook chicken.
  • Stir in cream and peas. Season to taste. Serve with basmati rice.

1/3 cup butter, cubed
Dash salt
1/2 cup all-purpose flour
2 eggs
FILLING:
1 package (8 ounces) cream cheese, softened
1/4 cup milk
1/4 teaspoon salt
1/4 teaspoon curry powder
Dash pepper
1-1/2 cups cubed cooked chicken
1/3 cup slivered almonds, toasted
1 green onion, chopped

Steps:

  • In a large saucepan, bring water, butter and salt to a boil. Add flour all at once and stir until a smooth ball forms. Remove from the heat; let stand for 5 minutes. Add eggs, one at a time, beating well after each addition. Continue beating until mixture is smooth and shiny. , Drop by rounded teaspoonfuls 2 in. apart onto greased baking sheets. Bake at 425° for 15-20 minutes or until golden brown. Remove to wire racks. Immediately split puffs open; remove tops and set aside. Reduce heat to 375°., In a small bowl, beat the cream cheese, milk, salt, curry powder and pepper until smooth. Stir in the chicken, almonds and onion. Spoon into puffs; replace tops. Place on a baking sheet; bake for 5 minutes or until heated through.

Curried Chicken Bites are colorful, a bit spicy (depending on how much curry powder you use), a bit earthy, and super flavorful. They are easy to prepare, make ahead two-bite appetizers that are sure to please!

24 to 36 cherry tomatoes - number needed depends on size of tomatoes
1 cup chopped cooked chicken
1 cup sliced or slivered almonds, lightly toasted
4 ounces cream cheese, at room temperature
1 large green onion, finely chopped (white, light green and some of the dark green part), plus more for garnish
3 tablespoons mayonnaise
1 tablespoon mango chutney, chopping any large pieces of mango
1 tablespoon curry powder (or more, depending on how strong your curry powder is)
1/2 teaspoon kosher salt, plus more to taste
Fresh ground pepper, to taste

Steps:

  • Cut the non-stem ends off the tomatoes. Remove core and seeds (I use a grapefruit spoon or the small end of a melon baller). Place tomatoes upside down on paper towels to drain.
  • Place the chicken, almonds, cream cheese, onion, mayonnaise, chutney, curry powder and salt in the bowl of a food processor and pulse just until blended.
  • Lightly season prepared tomatoes with salt and pepper. Spoon in the chicken mixture. Garnish with finely chopped green onion. Refrigerate for at least 1 hour to allow the flavors to blend.

½ cup pitted green olives, chopped
1 tablespoon chopped green onion, or to taste

Slow Cooker Chicken Curry - lip-smacking creamy curry chicken in a perfect blend of homemade Jamaican curry powder and other spices. Make it a one-pot meal by throwing in vegetables for a hearty and irresistibly delicious chicken dinner!

3 - 3 ½ pound chicken thighs ((see notes))
1 teaspoon or more curry spice/powder
Salt and pepper to taste ((or use chicken seasoning))
¼ cup or more canola or cooking oil
1 onion sliced
1 Tablespoon minced garlic
2-3 sprigs thyme
½-1 teaspoon paprika
1 1/2 -2 Tablespoons Curry spice/powder
1- cup coconut milk
½ cup chicken broth or water
1 bay leaf
1 Tablespoon tomato paste
1 scotch bonnet pepper
1- pound potatoes or more peeled cut in medium pieces
1- pound carrots and green beans ((more or less))
1- teaspoon chicken bouillon optional
Salt to taste

Steps:

  • Season chicken with, salt, pepper and curry spice and set aside
  • In a large skillet or non stick pan, heat oil over medium heat, until hot, and then add the chicken and brown on both sides about 4-5 minutes until chicken is brown.
  • Remove chicken and set aside. Drain oil and leave about 2 tablespoons
  • Add onions, followed by minced garlic, thyme, paprika, curry powder, stir for about 5 minutes, for the flavors to blossom. You may add scotch bonnet now or add it towards the last 45 minutes when adding the vegetables
  • Add coconut milk, water , bay leaf ,and tomato paste; continue cooking for another 2 minutes.
  • Salt( I used about 1 teaspoon and ½ teaspoon chicken bouillon ,adjust to taste)
  • Place in slow cooker insert, and then add chicken thighs. Gently throw in potatoes.
  • Slow cook for about 3-4 hours on high or 6-7 hours on low . Start checking after 2 1/2 hours and adjust cooking times.
  • About 45 minutes or an hour before chicken is ready throw in vegetables, continue cooking until chicken and vegetables are ready.
  • Remove adjust salt and pepper , if necessary and serve

2 cups chopped cooked chicken
2 Tbsp. BAKER'S ANGEL FLAKE Coconut, toasted
2 Tbsp. slivered almonds, toasted
3 Tbsp. KRAFT Real Mayo
1 tsp. GREY POUPON Savory Honey Mustard
1 Tbsp. curry powder
1 Tbsp. apricot jam

Steps:

  • Heat oven to 375ºF.
  • Use rolling pin to flatten bread to 1/8-inch thickness; brush with butter. Brush 24 mini muffin pan cups with any remaining butter. Cut each bread slice into 4 squares; press 1 square, buttered side up, onto bottom and up side of each muffin cup.
  • Bake 7 to 8 min. or until golden brown; cool completely.
  • Combine chicken, coconut and nuts in large bowl. Mix remaining ingredients until blended. Add to chicken mixture; mix lightly. Spoon into toast cups just before serving.
