LUSCIOUS LOW CARB TENDER BEEF FAJITA BOWL
I love it when I discover a new low carb, South Beach way-of-life recipe, and this was one is yummo! I found this on another site, and then modified it slightly. I found that the finished product was fork-tender, flavorful, and even better without the tortillas! Since the steak is so tender and tasty in this dish, I do recommend going with a sirloin or higher-end steak, rather than an inexpensive steak - it is well worth it in this dish! A fabulous one pan-meal made in around 30 minutes - what more could you ask for??!! :-)

Steps:
- In a skillet, over med-high heat, melt the butter.
- Add onion, peppers, mushrooms, chili powder, cayenne pepper, salt, and pepper, and saute, just until veggies are tender.
- Remove from skillet.
- Add steak slices and cook, just until browned and cooked through (5-7 minutes or so), steak should be cooked no more than rare to med-rare.
- Add onions and pepper mixture, and heat through.
- Serve beef and veggie mixture in bowls, sprinkled with cheese, and served with dollops of sour cream and guacamole (if desired).

KETO STEAK FAJITAS
These Keto Steak Fajitas are delicious on their own, but perhaps even more so when served with shredded cheese, sour cream, and avocado.

- In a medium bowl, whisk together the avocado oil, smoked paprika, chili powder, cumin, garlic, salt, and pepper. Place the steak in a shallow dish or zip-top bag and pour the marinade over. Marinate for at least 4 hours or overnight.
- Coat a large pan with cooking spray and heat to medium-high heat. Cook for 6 to 12 minutes, flipping once, to the desired doneness. Remove from the heat and allow to rest while you cook the vegetables.
- Re-coat with cooking spray and add the bell pepper and onion to the pan. Cook for 5 to 10 minutes, until tender.
- Cut the steak thinly against the grain.
- Warm the tortillas and top with the steak and vegetables. Top with desired fixings.

LOW CARB CROCK POT FAJITAS
A super-easy way to get fajita taste without the carbs. Smells GREAT while cooking and the meat comes out very tender.

Steps:
- Cut steak and pork into strips. (I simply cut mine in half since you're not putting these on tortillas).
- Coat meat strips in olive oil.
- Chop veggies into thick strips.
- Place pork chops on the bottom of crockpot, salt and pepper.
- Place steak on top of pork chops, salt and pepper.
- Place onions and peppers on top and again, salt and pepper.
- Cook on low to medium heat for 3 hours.
- Stir all ingredients together and add garlic to taste and fajita seasonings.
- Continue to cook on medium to high heat for approximately 30 minutes.
- Serve with shredded cheese and taco sauce on the side.
