1/3 cup olive oil
6 sprigs thyme
900 g potatoes
6 racks of lamb (4 cutlets each)
500 g spinach, trimmed
1 tablespoon butter
250 mushrooms, sliced
1 garlic clove, crushed
1 tablespoon balsamic vinegar
1/2 teaspoon Dijon mustard
1 tablespoon white wine vinegar
1 garlic clove, crushed
2 egg yolks
3/4 cup extra virgin olive oil
2 teaspoons lemon juice

Steps:

  • Heat oil in small saucepan; deep-fry thyme briefly, only about 5 seconds til fragrant. Remove thyme from oila and drain on absorbent paper.
  • Prehead oven to moderate.
  • Cut potatoes into 1cm slices; heat 2 tablespoons of the reserved thyme oil in ovenproof/flameproof baking dish; cook potato slices in batches til lightly browned on both sides. Return all potatoes to baking dish; add lamb and roast, uncovered for about 15 minutes or unil cooked as desired.
  • Meanwhile, make aioli.
  • Boil, steam or microwave spinach til just wilted; drain. Heat remaining thyme oil with butter in small saucepan; cook mushrooms and garlic til softened. Cut each lamb rack into 4 cutlets; divide among serving plates with spinach, potato and mushrooms. Top with aioli, garnish with fried thyme and drizzle with vinegar.
  • Aioli: whisk mustard, vinegar, garlic and egg yolks in a small bowl til combined; gradually add oil in a thin, steady stream, whisking constantly, til aioli thickens. Whisk in lemon juice.

4 bone-in loin lamb chops (about 3/4 pound)
1 tablespoon vegetable oil
1/2 cup chopped onion
1/2 cup diced peeled tart apple
1/2 teaspoon curry powder
4 teaspoons all-purpose flour
1/2 teaspoon salt
1/2 teaspoon sugar
1/4 teaspoon ground mustard
1-1/3 cups chicken broth
2 tablespoons lemon juice
Hot cooked rice

Steps:

  • In a large skillet, brown lamb chops on both sides in oil. Remove and keep warm. In the same skillet, saute the onion, apple and curry until tender. Combine the flour, salt, sugar and mustard; add to the pan. Gradually stir in broth and lemon juice until blended. bring to a boil over medium heat; cook and stir for 2 minutes. Reduce heat., Return chops to the skillet; cover and simmer for 15 minutes, turning once, or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Serve over rice.

2 tablespoons currant jam (or jelly)
2 tablespoons ketchup
2 tablespoons soy sauce
2 tablespoons brown sugar (or honey)
1 tablespoon dry mustard
2 teaspoons Worcestershire sauce
12 lamb loin chops (3 lbs, cut 1-inch thick & trimmed)
6 slices pineapple (1/2-inch thick)

Steps:

  • In a sml bowl, combine currant jam, ketchup, soy sauce, brown sugar, mustard & Worcestershire sauce. Place lamb chops in lrg resealable plastic bag. Pour marinade over lamb chops. Close bag & marinate in refrigerator for 15 minutes. Remove lamb from marinade & discard.
  • Place lamb & pineapple slices in center of cooking grate. Grill pineapple for 5-7 minutes or till grill marks appear, turning once halfway thru grilling time.
  • Grill lamb chops 7-9 minutes for rare (140 degrees), 10-13 minutes for medium (160 degrees) or 14-17 minutes for medium-well (170 degrees). Turn once halfway thru grilling time. Serve lamb chops w/grilled pineapple rings.
  • NOTE: Don't "over-marinate". You want to enhance the lamb flavor, not mask it!

For Australian Lamb Chops:
1 tbsp. curry powder
3 tbsp. Dijon mustard
2 tbsp. honey
½ tsp. cayenne
4 ½ tbsp. lemon juice
1 tsp. red wine vinegar
2 tbsp. chopped garlic plus 2 small cloves garlic
1 small red onion, minced
1 cup plus 2 tbsp. canola oil
2 half-racks of lamb, approximately 2 lbs. total weight, split, cut into 16 single-chops each (Ask your butcher to do this).
Salt
For Anchovy Caper Aioli:
½ cup mayonnaise
½ tbsp. minced anchovies
½ tbsp. minced caper
¼ tbsp. garlic
½ tsp. Tabasco
1 tsp. fresh lemon juice

Steps:

  • Put the curry, mustard, honey, cayenne, 3 tbsp. lemon juice, vinegar, and chopped garlic in a bowl and slowly whisk in 1 cup of canola oil to make an emulsified marinade. Put the lamb in a baking dish or other vessel, pour the marinade over the lamb, and toss well to coat. Cover and refrigerate for at least 24 hours or up to 48 hours. When ready to cook and serve, prepare a grill for grilling. Remove the chops from the marinade, brushing off any marinade solids. Season the chops with salt and pepper and grill them until nicely charred and cooked through, 2 to 3 minutes per side for medium, or a bit longer for more well done. Set the chops aside to rest for 5 minutes while you prepare the mayonnaise sauce. To make aioli, put the mayonnaise, anchovies, capers, garlic, Tabasco, and lemon juice in a bowl and whisk them together. Whisk in some room-temperature water, a few drops at a time to this if desired. (This mayonnaise can be covered and refrigerated for up to 2 days). Serve sauce alongside chop and enjoy!

1/2 cup prepared mayonnaise
1 lemon, zested
2 teaspoons fresh lemon juice
2 anchovy fillets, drained
2 cloves garlic, chopped
3 tablespoons pitted nicoise olives
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 1/2 tablespoons fresh rosemary plus sprigs, for garnish
1/4 cup kosher salt
12 bone-in baby lamb chops, Frenched
2 tablespoons olive oil
Freshly ground black pepper

Steps:

  • Combine the mayonnaise, zest, juice, anchovies and garlic in a food processor and process until smooth. Add the olives and salt and pepper and pulse a few times just to incorporate the olives, not puree them. Cover and refrigerate for at least 30 minutes before serving. Can be made 8 hours in advance and refrigerated.
  • For the lamb chops:
  • Combine the rosemary and salt in a food processor and process until combined.
  • Heat the grill to high.
  • Brush the chops on both sides with oil and season with a few teaspoons of the salt and freshly ground black pepper. Place on the grill and grill until golden brown and slightly charred, 3 to 4 minutes. Flip the chops over and continue grilling to medium-rare doneness, 2 to 3 minutes longer. Let rest 5 minutes before serving. Top each chop with a dollop of the aioli. Garnish with rosemary sprigs.

1 Small Bay Leaf
1 Tsp Kashmiri Chili Powder - you may use other mild red chili powder
1 Tsp Fennel Seeds
6 Green Cardamom Pods
5 Cloves
1/4 Cinnamon Stick
6 Almonds
1/4 Tsp Saffron
1 Cup Yogurt
Ginger Paste
Garlic Paste
1 Tbsp Lemon Juice
1/4 Tsp Salt
1/4 Tsp Pepper
4 Lamb Chops - I'm using loin chops
2 Tbsp Ghee - brown butter
4 Tbsp Oil - to make the curry
2 Tsp Garam Masala - homemade or store bought
1/2 Cup Water

Steps:

  • In a large bowl, whisk together yogurt, ginger, garlic, lime juice, salt, pepper.
  • Add lamb chops and mix everything using hands or fork.
  • Marinate in the fridge overnight or atleast for 2hrs.
  • Add the 'Kashmiri Spice Mix' in a blender and pulse to form a fine powder.
  • Keep Aside.
  • Heat 2 Tbsp oil and 1ghee in a skillet for a minute over medium flame.
  • Remove the marinated lamb chops from the fridge.
  • Using a fork, lift the marinated lamb chops and place in skillet.
  • Cook evenly on both sides on low medium heat till meat is tender (takes about 4 minutes each side).
  • Remove the cooked lamb chops and place on kitchen towel to soak any excess oil.
  • Add 1 Tbsp of Kashmiri Spice Mix in the leftover yogurt marinade and whisk to a smooth paste.
  • Add the remaining oil and ghee to the skillet.
  • Reduce the heat to low and add the whisked yogurt marinade and garam masala.
  • Saute and cook for 5-6 minutes (stir every 2 minutes to prevent burning the sauce).
  • Finally, add cooked lamb chops and water.
  • Mix everything together and cover cook for 10 minutes on low heat.
  • After 10 minutes, touch the chops with a fork and the meat should be tender. (Also the sauce would be thick and creamy now).
  • Turn off the heat and transfer to a serving bowl.
  • Serve with steamed rice or choice of bread/rolls.
