CURRIED ACORN SQUASH BISQUE

Curried Acorn Squash Bisque image

My own delicious variation of a curried squash-based soup using the acorn variety. With careful thought and care, I've created a smooth and invigorating soup that would provide a perfect dinner starter to any party or social gathering. Certainly a multi-purpose dish that would work well anywhere. Perfect in your favorite mug for chilly rainy days. When with friends, I like to serve it with baked honey ham and salad (just an idea). You'll have everyone asking you where you learned to cook so well, I promise!

Time 50m

Yield 6

Number Of Ingredients 16

2 large acorn squash - peeled, seeded, and cut into 1-inch cubes
3 tablespoons all-purpose flour
2 tablespoons curry powder
1 teaspoon ground ginger
1 teaspoon brown sugar
4 tablespoons salted butter
1 medium onion, finely chopped
1 stalk celery, finely chopped
½ medium carrot, finely chopped
4 cloves garlic, finely chopped, or more to taste
½ cup heavy whipping cream, or more to taste
2 tablespoons olive oil
3 teaspoons red wine vinegar
1 cube chicken bouillon
salt and ground black pepper to taste
¼ cup chopped fresh cilantro, or to taste

Steps:

  • Place squash into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, 10 to 15 minutes. Drain.
  • Combine flour, curry powder, ginger, and brown sugar in a small bowl; mix loosely to combine.
  • Melt 1/2 of the butter in a deep pan over medium-high heat. Add onion, celery, carrot, and garlic; saute for 2 minutes. Add 1/2 cup whipping cream, remaining butter, olive oil, vinegar, and bouillon cube. Add flour mixture; cook and slowly stir for 15 seconds, then reduce heat to medium or medium-low. Cover with a lid and cook until veggies are cooked through, about 3 minutes.
  • Add cooked squash on top of the veggies, and season generously with salt and pepper; do not stir. Cover and cook until squash is heated through, about 1 minute.
  • Fill blender halfway with squash mixture. Cover and hold lid down with a potholder; pulse a few times before leaving on to blend until mostly smooth. Pour into a pot. Repeat with remaining squash mixture.
  • Reheat soup if needed. Put into a large serving bowl or separate serving dishes, garnish with cilantro, and drizzle with cream.

Curried Acorn Squash Soup image

A fall-tastic soup featuring acorn squash, apple, ginger, and curry.

Provided by HUZZAH

Categories     Soups, Stews and Chili Recipes     Soup Recipes     Vegetable Soup Recipes     Squash Soup Recipes

Time 45m

Yield 4

Number Of Ingredients 12

1 acorn squash
1 tablespoon extra-virgin olive oil
1 small white onion, chopped
½ tablespoon freshly minced garlic
½ tablespoon freshly minced ginger
1 large Golden Delicious apple - peeled, cored, and chopped
1 (14.5 ounce) can fat-free chicken broth, divided
½ tablespoon curry powder
½ teaspoon ground cinnamon
½ teaspoon ground cardamom
1 pinch cayenne pepper
1 pinch salt and ground black pepper to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Cut acorn squash in half and remove seeds and pulp. Place cut-side down in a baking dish; add about 1 inch of water.
  • Roast in the preheated oven until a knife can be easily inserted, 20 to 30 minutes.
  • While squash roasts, heat oil in a medium saucepan over medium-high heat. Saute onion until almost translucent, about 5 minutes. Mix in garlic and ginger. Add apple and cook, stirring regularly to keep from sticking, until it starts to get mushy, 7 to 10 minutes. Pour in 1/4 of the chicken broth. Add curry powder, cinnamon, cardamom, cayenne, salt, and pepper.
  • Remove squash from the oven and let cool enough to handle, about 5 minutes. Remove skin carefully, chop flesh roughly with a knife, and mash some of the flesh.
  • Add squash to the pot with remaining chicken broth. Simmer soup over medium-low heat, stirring occasionally, for 5 to 10 minutes. Taste and adjust seasoning as needed. Pour into large bowls and serve.

CURRIED SQUASH SOUP WITH APPLE AND CHEDDAR MELTS

Curried Squash Soup with Apple and Cheddar Melts image

Provided by Rachael Ray : Food Network

Categories     main-dish

Time 1h

Yield 4 servings

Number Of Ingredients 18

1 large butternut or other orange-fleshed squash or pumpkin, peeled, deseeded and sliced
EVOO, for drizzling
Kosher salt and freshly ground black pepper
Freshly grated nutmeg
2 slightly round tablespoons prepared curry powder
2 tablespoons honey
3 tablespoons butter
3 to 4 cloves garlic, chopped
2 carrots, thinly sliced
1 Gala or other crisp apple, peeled and chopped
1 onion, chopped
1 quart chicken or vegetable stock
Chopped scallions and cilantro, for garnish
8 slices good-quality white bread
Butter, softened, for spreading
Prepared chutney, such as Patak's Major Gray Mango Chutney
12 ounces sharp Cheddar, shredded or sliced
1 Gala or other crisp apple, peeled and thinly sliced

Steps:

  • Cook's Note: For a substitute for curry powder, combine 2 teaspoons turmeric, 1 1/2 teaspoons each ground cumin and ground coriander, 1/2 teaspoon each ground mustard and ground ginger and 1/4 teaspoon each ground cinnamon and cayenne pepper. For the curried squash soup: Preheat the oven to 400 degrees F. Dress the squash with the EVOO to coat lightly. Sprinkle with salt, pepper and a little freshly grated nutmeg, and coat with the curry powder. Drizzle the honey all over and roast until golden on the edges and very tender, about 25 minutes. The spices will toast with the squash and fill the air with a terrific aroma. Meanwhile heat a drizzle of EVOO in a soup pot over medium to medium-high heat, and then add the butter to melt. Stir in the garlic, carrots, apples and onions and sprinkle with salt and pepper. Cook, partially covered, until softened, about 10 minutes. Pour in the stock and a drizzle of honey (or chutney). Bring to a boil, reduce to a simmer and cook until the vegetables are softened, about 20 minutes. Add the roasted squash and puree with an immersion blender, thinning the soup with water if necessary. The soup can alternately be pureed in batches in a food processor or high-power blender. Adjust the seasoning. Cool and store for a make-ahead meal, bringing to room temperature before reheating over a medium flame. Garnish with the scallions and cilantro. For the apple and cheddar melts: Spread each bread slice with softened butter on 1 side and chutney on the other. Fill the sandwiches, chutney sides-in, with the cheese and apples in the center. Griddle the sandwiches over medium heat until deeply golden and the cheese has melted.

  • Place the squash halves face up on a large baking sheet. Brush the flesh with olive oil, kosher salt, and some black pepper. Bake for about 45 minutes or until the top looks caramelized.
  • Optional: Line a second baking sheet with parchment paper then mix a handful of seeds with the ingredients in the "Roasted Acorn Squash Seeds" section in a mixing bowl. Spread the seeds on the parchment paper and roast for about 15-20 minutes. (Try removing as much flesh as possible from the seeds)
  • Meanwhile, melt 2 tbsp butter (or coconut oil) in a cast iron pan and spread the onion evenly into the pan. Brown for about 4-6 minutes over medium heat without stirring. Reduce heat and continue cooking, stirring frequently, for 12-15 minutes or until golden brown. Deglaze with chicken stock and scrape the pan with a wooden spoon. Transfer to a large pot.

  • Stab the squash in several places with a paring knife to allow steam to vent in the microwave. Place on a microwave-safe plate and microwave for 8 minutes. Pay close attention and listen for squealing sounds (especially after 5 minutes): these indicate that the squash is about to explode. In this case, turn off the microwave and let the squash sit for thirty seconds to a minute (don't open the door). Then resume microwaving (and listening carefully), up to 10 minutes or until the squash is very soft.
  • Add the olive oil (see Recipe Note #1) to a large, heavy-bottomed pot or Dutch oven over medium heat. When the oil is shimmering, add the shallots, carrots, garlic, Thai chilies, and ginger. Reduce heat to medium-low and sweat the vegetables until soft but not caramelized, about 10 minutes.
  • Meanwhile, prepare the acorn squash. Cut the top off and slice the squash in half lengthwise. Use a large spoon to scoop the seeds and fibrous innards from the cavity. Discard. Scoop the flesh out of the skin of the squash and into the pot; continue sweating the vegetables, breaking up the squash with a wooden spoon, for an additional 5 minutes.
  • Move the vegetables to the sides of the pot. Scoop the cream from the top of the unshaken can of coconut milk and add to the center of the pot along with the curry paste. Mix the curry paste into the coconut cream and sauté until fragrant. Add the remaining coconut milk and salt.
