BASIC TEA BISCUITS

Steps:
- Preheat oven to 450 degrees F.
- Combine dry ingredients.
- Cut in shortening with two knives or a pastry blender until mixture resembles coarse cornmeal.
- Make a well in the centre and add liquid all at once. Stir vigorously until dough comes freely from the sides of the bowl.
- Turn dough onto a lightly floured board and roll or pat to 1/2-inch thick.
- Cut out 2-inch biscuits with a floured water glass or biscuit cutter.
- Place on an ungreased baking sheet. Bake for 12 to 15 minutes, until tops are golden brown.
- Serve immediately with butter, jam or honey.
- Variations: Cheese Tea Biscuits Use only 3/4 tsp salt and 1/4 cup shortening.
- Add 3/4 cup shredded cheese (yellow or marble) to dry ingredients.
- Buttermilk Tea Biscuits Use only 2 tsp baking powder Add 1/2 tsp baking soda Replace milk with 1 cup buttermilk or sour milk.
- Raisin or Nut Tea Biscuits Add to dry ingredients 1/4 cup sugar; and 3/4 cup seedless raisins or chopped nuts Use only 7/8 cup milk Whole Wheat Tea Biscuits Replace 1 cup of white flour with 1 cup whole wheat flour.

CURRANT TEA CAKES
Came across these while looking for a tea biscuit recipe in all of my cookbooks. Not exactly what I was looking for, but very good and easy.

Steps:
- Cream butter, lemon peel and lemon juice until light.
- Add sugar and cream until light and fluffy.
- Add eggs and blend well.
- In another bowl, mix flour and salt; gradually add to creamed mixture, beating well until blended.
- Stir in currants.
- Drop by teaspoonsful onto greased and floured baking sheet.
- Bake at 350* for 10 minutes or until set.
- Remove to a wire rack to cool.
ORANGE TEA BISCUITS

Steps:
- In large bowl combine flour, sugar, salt, baking powder, baking soda, cream of tarter, orange rind and orange peel, stirring well.
- Cut in butter until crumbly.
- Mix buttermilk and orange juice together, stir to mix well and pour over flour mixture, combing quickly, dough will be soft.
- Turn out onto a lightly floured surface, knead gently 10 times and pat into 1/2" or 3/4 " thickness.
- Cut the dough with a 3" cookie round.
- Brush biscuits with milk.
- Dip sugar cube in orange juice and press into top of biscuit.
- Bake on greased cookie sheet at 450 degrees.
- for 13 - 15 minutes.

PARTRIDGEBERRY ORANGE TEA BISCUITS RECIPE - (4.4/5)

- Preheat oven to 400 degrees. Drain mandarin oranges. Set juice aside to use later in recipe. Mash mandarin oranges. Set aside. Cream sugar and butter until smooth. Add vanilla and eggs. Mix until combined. Stir in reserved mandarin juice and mashed mandarin oranges. In separate bowl, whisk together the flour and baking powder. Gently mix into wet ingredients until just combined. Add partridgeberries and combine. DO NOT OVERMIX! On a floured surface, gently roll out dough to 1 inch thickness. Cut into shapes and place on parchment lined cookie sheet. Brush with egg wash. Cook at 400 degrees for 12 minutes, until brown on the bottom and cooked through. Serve with butter or just as is! Enjoy ? Makes 24 Biscuits.
CRANBERRY ORANGE TEA BISCUITS
My mother in law makes these every time she visits! They freeze perfectly and are a delicious treat.

- blend all dry ingredients. put oranges, water eggs and vanilla in a jar and shake to break up oranges. add dry ingredients. use ice cream scoop and drop on a cookie sheet. bake at 350F for 10-15 minute.
