Culi Sauce image

This is a delicious condiment to use with practically any meat. It's from a Southwestern cookbook called "Seasoned With Sun" which I picked up from a booksale from Friends of the Library.

Number Of Ingredients 10

1 (10 ounce) can green chilies or 6 fresh roasted green chilies, roasted and peeled
8 medium onions
8 cups vinegar
2 cups sugar
24 ripe peeled tomatoes
2 tablespoons salt
1 tablespoon cinnamon
1 tablespoon clove
1 tablespoon allspice
1 tablespoon nutmeg

Steps:

  • Chop chiles and onions.
  • Add all other ingredients.
  • Cook together in large pot until thickened.
  • Pour into jars and seal while hot.

RED BELL PEPPER COULIS

A tasty sauce made from red bell peppers that goes very well over chicken as well as fish.

Number Of Ingredients 6

1 tablespoon olive oil
2 red bell peppers, seeded and chopped
2 shallots, chopped
½ cup white wine
½ cup chicken broth
½ cup sour cream

Steps:

  • Heat olive oil in a skillet over medium heat. Add red bell peppers and shallots; saute until soft. Stir in white wine and chicken broth, and simmer over low heat until reduced by half.
  • When the mixture is reduced, stir in sour cream, and transfer the mixture to a blender. Puree until smooth. Reheat before serving if necessary.

RASPBERRY COULIS

Make a batch of raspberry coulis to use as a fruity topping for a cheesecake, as a sauce for desserts, to swirl into yogurt or pour over ice cream

Yield Makes 1 x 500ml jar

Number Of Ingredients 3

450g raspberries
½ small lemon , juiced
3 tbsp icing sugar

Steps:

  • Put all the ingredients in a small food processor or use a stick blender to blitz until very smooth.
  • Set a sieve over a jug. Tip the mixture into the sieve and push through the liquid using a spatula. Discard the seeds. The coulis is ready to use. Will keep refrigerated in an airtight jar for up to two days.

  • Peel and slice the Mango into small Cubes and place them into a small pot (see note 1 if using frozen mango).
  • Cook on low to medium heat for about 10 to 15 minutes (see note 2) or until the fruit is very soft and starts to fall apart, occasionally stiring to avoid burning. Remove from the stove and leave to cool down for about 5 minutes.
  • Using an Immersion Blender, blend the cooked fruits until very smooth. It will take a few minutes of blending to get a very smooth, thick sauce.
