TOMATO CUCUMBER FETA SALAD RECIPE

- In a small bowl, stir together dressing ingredients: 2 Tbsp olive oil, 2 Tbsp lemon juice, pressed garlic cloves, 1/4 tsp salt, 1/4 tsp pepper and 1/4 tsp cumin.
- In a large mixing bowl, add prepared salad ingredients: chopped tomatoes, sliced cucumber, feta cheese crumbles, sliced red onion and 1/4 cup chopped cilantro.
- Just before serving, drizzle with dressing and toss to combine. Season to taste with salt if desired.

- Combine chopped cucumber, tomatoes and red onion in a bowl. Set aside.
- Combine yogurt, garlic, lemon, mint, and salt and black pepper in a mini food processor or blender. Process until smooth.
- Pour over vegetables, add feta cheese and toss.
- Garnish with thinly sliced mint leaves and serve immediately.

- 6 SERVINGS Cut cucumbers in half lengthwise; scrape out seeds. Cut halves diagonally into 1/2-inch-wide pieces. Place in large bowl. Add vinegar, sugar and salt. Let stand at room temperature 1 hour; toss occasionally.

- Preheat grill. Brush both sides of the onion slices with olive oil and season with salt and pepper to taste. Grill on each side for 2 to 3 minutes. Just to obtain grill marks and cook slightly. Remove from grill and coarsely chop. Combine onions in a medium bowl with cucumber, oregano and toss with the yogurt-mint dressing. Season with salt and pepper to taste. Sprinkle with feta cheese.
- Whisk all ingredients together in a medium bowl and season with salt and pepper, to taste. Serve immediately.
