CUCUMBER SANDWICHES
I got this recipe close to 20 yrs. ago from an aquaintance who was on Weight Watchers at the time. These are extremely easy to make and are great as an appetizer or a light snack. The measurements are listed only because they have to be. There really is no precise measuring required. I use the small square party cocktail rye bread. Not sure of the package weight so I guessed. Cook time is chill time.

Steps:
- Thinly slice the cucumbers approximately 1/8 inch thick or less. I usually use the larger slices first, to completely cover the bread.
- Spread a thin layer of mayonnaise on each slice of rye bread. Top with a slice of cucumber.
- Lightly sprinkle each one with seasoned salt (be careful not to overdo it or they will be too salty), then just a dash of black pepper.
- May be eaten immediately if you prefer, however best if allowed to chill in the refrigerator before serving.

Steps:
- Mix cream cheese, dressing mix, mayo and sour cream until well blended.
- Spread mixture on pumpernickel slices. Top with a slice of cucumber and sprinkle with dill weed.

Really great appetizer for the summer or anytime. Every time I have served these everyone wants the recipe...and they're so easy! Just be sure to refrigerate the cream cheese mixture overnight!

- In a medium bowl, mix together the cream cheese, mayonnaise and Italian dressing mix. Refrigerate for at least 6 hours, or preferably overnight.
- Spread the cream cheese blend onto slices of French bread. Top with a cucumber slice, and sprinkle with dill. You can make as many or few as you like. the cream cheese mixture keeps for about a week in the refrigerator so you can make them over and over again!

- Place cucumber slices between 2 paper towels set in a colander. Allow liquid to drain, about 10 minutes.
- Mix cream cheese, mayonnaise, garlic powder, onion salt, and Worcestershire sauce in a bowl until smooth.
- Spread cream cheese mixture evenly on one side of each bread slice.
- Divide cucumber slices over half of the bread slices; sprinkle lemon pepper on cucumber.
- Stack the other half of the bread slices with spread sides down over the cucumber slices to make sandwiches.
