CUCUMBER SALAD WITH YOGURT AND MINT



Cucumber Salad With Yogurt And Mint image

A light, very creamy and refreshing cucumber salad with yogurt and mint. A healthy alternative to add instead of mayo to your wraps or sandwiches.

Number Of Ingredients 8

2 English cucumbers
6 tablespoons greek yogurt
4 tablespoons extra virgin olive oil
4 tablespoons red wine vinegar
3-4 tablespoons water
5-6 fresh mint leaves (chopped)
1/2 lemon (zest)
OPTIONAL: crumbled feta cheese

Steps:

  • In a medium-sized mixing bowl whisk together all of the ingredients except the cucumber.
  • Using a vegetable slicer or a chefs knife, cut cucumbers to very thin slices.
  • Add cucumber to the bowl, season with salt and pepper and mix.
  • Serve immediately with crumbled feta on top if you like. NOTE: If this salad sits for a while, the cucumber tends to release water that's why it's better made and served right away!

3 cucumbers
2 cloves garlic, minced
salt to taste
2 tablespoons dried mint
1 cup plain yogurt
1 tablespoon olive oil

Steps:

  • Peel, quarter lengthwise, and seed cucumbers. Slice thinly. Mix together with garlic. Layer cucumber slices in a salad bowl, sprinkling each layer lightly with salt. Let stand for 30 minutes.
  • Pour off the liquid that has formed, pressing cucumber firmly. Crumble mint over cucumbers.
  • Beat yogurt until smooth; blend in a drizzle of olive oil if desired. Pour over cucumbers. Refrigerate until thoroughly chilled.

1 (8 ounce) container vanilla low-fat yogurt
1 (8 ounce) container reduced-fat sour cream
½ cup diced onion
2 cloves garlic, minced
1 tablespoon dried dill weed
salt and pepper to taste

Steps:

  • Drain cucumbers for a few minutes on paper towels. In a serving dish, stir together the yogurt, sour cream, onion, garlic, and dill. Add cucumbers, and gently mix to coat. Season with salt and pepper. Refrigerate for a couple of hours before serving for best flavor.

1 cup non-fat plain Greek yogurt
3-4 seedless cucumbers (sliced thinly)
1/4 red onion (thinly sliced and roughly chopped)
1 clove garlic (pressed or minced finely)
juice from 1/2 lemon
1/4 cup chopped fresh dill (plus more for garnish)
1/4 cup chopped fresh mint (plus more for garnish)
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper

Steps:

  • Toss the cucumbers and red onion in a medium to large bowl. Mix the yogurt, garlic, lemon juice, dill, mint, salt and pepper together in a small bowl then add to the cucumbers and toss to coat. Add more salt and pepper as desired and garnish with more mint and dill. Refrigerate for 1 hour before serving.

2 plum tomatoes, seeded and cut into 1/2-inch cubes
1 onion, finely chopped
2 cups plain whole-milk yogurt
2 teaspoons vegetable oil
1 teaspoon black mustard seeds
1 teaspoon cumin seeds
1 teaspoon picked-over split skinned urad dal*
1 tablespoon finely chopped fresh cilantro

Steps:

  • Stir together cucumber, tomatoes, onion, and yogurt. Heat oil in a small heavy skillet over moderate heat until hot but not smoking, then cook mustard seeds, cumin, and urad dal, stirring, until mustard seeds begin to pop. Pour oil mixture over vegetables and stir until combined. Stir in cilantro and salt to taste.

1 cup greek style plant based yogurt ((or dairy free sour cream))
4 cloves garlic
1 tbsp lemon juice + more to taste
2-3 tbsp fresh dill (roughly chopped)
sea salt

Steps:

  • Using a microplane grater start by grating the garlic into a paste. Add into a bowl with the yogurt or sour cream, lemon juice, zest and fresh dill. Season with a pinch of sea salt and black pepper to taste.
  • Slice the cucumbers into 1/4 inch to 1/3 inch slices and add to a bowl with thinly sliced red onion. Add the creamy yogurt dressing on top and gently toss to coat all over.
  • Taste and adjust seasonings with more salt and pepper and serve promptly garnished with fresh onion chives, more dill and lemon zest.
