SPICY CUCUMBER PICKLE

Steps:
- Cut the pickling cucumbers in half lengthways, and slice regular ones through the middle, then into fingers. Peel and finely slice the shallots.
- Put the cucumbers and shallots in a colander. Sprinkle over 2 teaspoons of sea salt. After 45 minutes, rinse well.
- Combine all the other ingredients in a pan and bring to the boil. Stir until the sugar dissolves.
- Fit the cucumbers snugly into a Kilner jar, then pour over the liquid. Seal and leave for at least 24 hours.

BALSAMIC-DRESSED CUCUMBER WITH OLIVES

Steps:
- Run a fork down the length of the cucumber until it's stripy all over.
- On a chopping board, use a knife to chop off the ends.
- Carefully cut them in half across the middle, then in half lengthways.
- Use a teaspoon to gently scoop out and discard the seeds.
- Chop the cucumber up into 1cm chunks and place in a mixing bowl.
- Place the olives on a chopping board, squash them with the heel of your hand, pull out and discard the stones, then roughly chop them and add them to the bowl.
- Trim and finely slice the spring onions and add them to the bowl.
- Add the balsamic vinegar and 4 tablespoons of extra virgin olive oil.
- Squeeze in the juice of ½ a lemon, using your fingers to catch any pips.
- Sprinkle over a pinch of black pepper.
- Pick and tear over the mint leaves, toss everything together, then serve.

LATE SUMMER CUCUMBER SOUP
Serve this hot if the weather is less than summery or, on a hot day, it is equally good served very cold in chilled soup bowls.

- To prepare for this, chop the cucumber into chunks (thankfully no need to peel) and the same with the potato. Slice the spring onions (including the green part), while the lettuce leaves can just be separated and washed, and the leaves torn. Now in a medium-size saucepan melt the butter and add all the prepared vegetables, stirring them around a bit. Then, keeping the heat low, pop a lid on and let them sweat gently for 10 minutes. After that pour in the stock, season and, after a couple of stirs, bring it back to a gentle simmer. Put the lid back on so it can simmer gently for another 20 minutes. When the time is up, use a stick blender to purée the soup, making sure there are no escaped bits of cucumber that the blades didn't catch - it will finish up a magnificent fresh green colour, very pretty. Reheat gently and serve in warm soup bowls with some cream swirled into each one and a few chives sprinkled over.

- Wash and drain cucumbers. Sterilize jars. Here is a link about how to do that properly.
- Fill up the jars with the cucumbers and add garlic cloves, black peppercorns, 1/4 teaspoon of dried dill, and slices of horseradish in between.
- In a big pot, bring vinegar to a boil together with salt and sugar. Boil for only 2-3 minutes, then add the bay leaves, thyme, and mustard seeds. Set aside to cool for about 10 minutes.
- Pour the liquid over the cucumbers to fill the jars. Add 1-2 pieces of horseradish on top.
- Seal the jars and store them in a cool place above freezing temperature.
- These cucumbers will not ferment and will be perfect for the wintertime.

- Brush the bars of the barbie clean to prevent your fish from sticking, then light it and get the coals glowing hot. If your barbie is small, feel free to cut the salmon in half to make it more manageable.
- Place the salmon skin side down on a plastic board and, using a sharp knife, slash it evenly all over on the eshy side, making the incisions about 1/2-inch deep. Scatter the lemon zest and most of the chopped fennel tops or basil over the salmon, then push these avorings into the incisions - don't hold back; really push them in! Rub the fish lightly all over with olive oil then season with salt and pepper, giving the skin side a generous amount as most of this will fall off.
- When your barbie's ready, lay the salmon on the bars, skin-side down. The esh will start to color from the bottom up and after about 4 minutes the skin should be beautifully golden brown. Carefully ip the salmon over with a roasting fork or a spatula and cook for a further 2 to 3 minutes on the other side. While it's cooking, gently ease the skin away from the fish and put it on the barbie alongside to crisp up.
- If your salmon is wild it will have slightly less fat in it, so will be a drier fish. You can therefore cook it for a shorter amount of time, even leaving it slightly undercooked - although this might feel unusual to anyone who nukes fish beyond belief. If it's (organically) farmed, cook it through, but please don't overcook it or it will become too dry. Lift the salmon carefully off the barbecue and place it on a nice serving platter or board. Allow to cool a little, then break the skin into pieces, a bit like poppadums.
