MUSTARD PICKLES
An old fashioned recipe that is different from most pickles. Cucumbers and onions are pickled in a mustard sauce made with turmeric and celery seed.

Steps:
- Place the sliced cucumbers and onions into a large bowl and sprinkle the salt over the top. Fill the bowl with enough water to cover the cucumbers. Let stand for 8 to 10 hours.
- Drain and rinse the cucumbers and onion with fresh water. Sterilize 4 (1 quart) jars and lids.
- In a 6 quart pot, stir together the sugar and flour. Whisk in the vinegar, turmeric, mustard powder and celery seed to make a smooth paste. Add the cucumbers and onions and fill with enough water to cover. Stir, and bring to a boil. Cook until thickened, about 10 minutes, stirring frequently.
- Pour into hot sterilized jars filling to within 1/2 inch of the top. Seal with lids and rings. Process for 10 minutes in a simmering water bath. Refrigerate any jars that fail to seal properly.

DELICIOUS GOLDEN MUSTARD PICKLES
These are the best mustard pickles that you will ever have...if you love mustard pickles, and have some time, these are well-worth the time and effort to prepare, once you make these a few times, you will probably do them with your eyes closed!...a definate must-make! Note: plan ahead, the blanched veggies have to sit for 12 hours.

Steps:
- Trim the core off of cauliflower; cut into bite-size florets to make 8 cups.
- Place in a large stockpot, along with cucumbers, onions, red and green peppers.
- Sprinkle with 1/2 cup pickling salt; cover with cold water.
- Set aside in cool spot (do not refrigerate) for 12 hours.
- Return the pot to element; bring veggie mixture just to a boil, over med-high heat; drain in large colander, discarding brine.
- Set the veggies aside.
- Rinse the pot.
- Add 4 cups of vinegar; bring to boil over medium heat.
- Meanwhile, in a large bowl, whisk together, sugar, flour, mustard and tumeric powder; whisk in 1 cup water, and remaining vinegar to make a smooth paste.
- Whisk into hot vinegar, and bring to a boil; reduce heat, and simmer, stirring constantly until smooth and thickened (amout 3 minutes).
- Add the veggies, stir to coat.
- Bring to a boil, stirring gently.
- Ladle into 2-cup hot canning jars, leaving 1/2-inch head space.
- Cover with warm discs; screw on bands fingertip tight.
- Process in boiling water canner for 10 minutes.
- Remove, and let cool on rack.

- Cut cucumber and onions in 1 inch pieces put in glass bowl and sprinkle salt on them; leave overnight. In morning strain and lightly rinse.
- In a large pot mix vinegar, water, sugar, flour, ginger, mustard, celery seed, salt and tumeric.
- Boil for 5 minutes.
- Add cucumbers and onions to liquid.
- Bring to a boil. Fill hot jars and put hot lids on and seal.

CUCUMBER ONION MUSTARD PICKLES
These mustard pickles add a gorgeous yellow glow to your pickle shelf. The flavor is pungent and sensational. Try them with ham or any of your picnic favorites.

Steps:
- Thinly slice the cucumbers. Peel and thinly slice the onions.
- In a large bowl, combine the cucumbers and onions. Sprinkle with the salt and let stand for 3 hours; drain.
- In a large saucepan, combine the sugar, cornstarch, turmeric, ginger¸ and the red pepper. Stir in the vinegar, the water and mustard. Cover and bring to a boil. Add the cucumbers and the onions.
- Pack into clean, hot pint jars leaving 1/2 inch of headroom. Rub a rubber spatula around the inside of the jars to release the air bubbles and wipe the rims of the jars with a clean rag. Place the lids and the screw bands on.
- Process in a boiling water bath canner for 15 minutes.

UNCLE BILL'S MUSTARD PICKLES
This recipe has been a family favorite for many years. I made some changes to the original family recipe to enhance the flavor of the finished product.

Steps:
- Wash and finely chop cucumbers.
- Seed and dice sweet red and green peppers.
- Place chopped cucumbers and peppers in a large bowl.
- Sprinkle over with pickling salt, cover and let sit overnight.
- The next morning, drain off the liquid and discard.
- Finely chop cauliflower, onion and celery and mix in with the cucumbers and peppers.
- Transfer vegetables to a large cooking pot.
- Add vinegar and sugar and bring to a boil.
- Reduce heat and simmer for 10 to 15 minutes until vegetables are just tender, DO NOT OVERCOOK.
- In a small bowl, mix mustard and turmeric in a half cup of cold water.
- When vegetables are nearly done, mix in mustard mixture and stir until well blended and bring mixture back to just boil.
- Sterilize and prepare canning jars of your choice.
- Fill jars to within 1/4" of the top of the jars.
- Apply lids and screw tops and process according to the method you are most familiar with.
- When jars are sealed and cooled, label and store in a cool, dark place.

SMALL BATCH MIXED VEGETABLE MUSTARD PICKLES
This is the recipe I use. It makes a small batch about 5 quarts. It is an east coast favourite (I am from New Brunswick, Canada) and is typically served with meat and potato meals.

- Cut a thin slice from the ends of each cucumber and cut into thick slices. Place cucumbers, califlower and onions in a large non-reactive container. Combine salt with lukewarm water, stirring until dissolved. Pour over vegetables and let stand 24 hours. Make sure vegetables are covered, I often have to make the brine a couple of times to have them covered.
- After 24 hours, drain the vegetables well, and rinse them well.
- Combine sugar, flour, mustard, celery seeds and tumeric in a large saucepan, stir until well mixed. Whisk in vinegar and water. Bring to to a boil over high heat stirring constantly, until smooth and thickened. Add vegetables and return to a boil for 30 seconds.
- Remove hot jars from canner. Remove vegetables from liquid with a slotted spoon; pack into jars. Process 10 minutes for pints (500 ml) jars and 15 minutes for quart (1 L) jars.

MUSTARD PICKLES
The revival of home preserving takes today's pickle makers back to the early 1900's with this treasured recipe for mustard pickles. This recipe uses much less salt than the original and relies instead on todays popular colorful local vegetables and seasonings to provide robust flavor.

- In a stainless steel saucepan, combine cucmbers, cauliflower, pearl onions, red and green peppers. Toss with salt; stir in 1 cup water. Cover and let stand in a cool place over night, stirring occasionally.
- Next Day: Place 5 (2 cup) Mason Jars in a boiling water canner; fill with water, cover and bring to a boil. Set screw bands aside; heat snap lids in hot, not boiling water. Keep jars and snap lids hot until ready to use.
- Drain vegetables; rinse well under lots of cool running water and drain thoroughly. Set aside.
- In a large, deep, stainless steel saucepan, combine sugar, ClearJel, mustards, turmeric, cider vinegar and ginger root; bring to a boil, stirring until thickened. Add vegetables and return mixture to a boil that cannot be stirred down.
- Ladle hot vegetables and liquid into a hot jar within 1/2 inch of top rim (headspace). Using a nonmetallic utensil, remove any air bubbles. Wipe jar rim, removing any stickiness.
- Center snap lid on jar; apply screw band securely and firmly until resistance is met - fingertip tight. Do not over tighten. Place jar in canner. Repeat for remaining pickles.
- Cover canner; return water to a boil. Process for 15 minutes.
- Remove jars without tilting. Cool upright, undisturbed, for 24 hours.
- Do not retighten screw bands. After cooling check jar seals. Sealed lids curve downwards. Remove screw bands, wipe and dry bands and jars.
- Store screw bands and separately or replace loosely on jars, as desired.
- Label and store jars in dark cool place.
- Makes 5 2-cup jars.

MUSTARD CUCUMBER PICKLES
This is a great tasting mustard pickle recipe for those cucumbers that get away on you! Large is good, seedy and bitter no! Recipe from a friend's family collection. A family favorite and one that is especially good with homemade sausage, or any sausage for that matter! Great with smokies. NOTE For those new to canning or as a general refresher please read one of the many excellent canning cookbooks or go on line to become familiar with the canning procedures. While I have never processed these - I see new guidelines as to processing - do check for the recommends in your area. Do remember there are no short cuts when it comes to cleanliness - I have always assured the utensils as well as the jars are sterilized - clean the sinks and work area and have good supply of clean dish cloths on hand. Never use non - reactive containers ( use stainless steel unchipped enamel/ porcelain - be sure all your bowls and containers are food grade)

- Blend dry ingredients with the water, using a whisk to get it nice and smooth.
- Add thickening to heated vinegar and whisk together.
- Add the sliced cucumbers and onions, simmer together until heated through.
- Put into sterilized jars and seal. Check guidelines as to processing.
- Note: have found this sauce is good for three quarts of cucumbers and onions after they have been drained.
