Feta Cucumber Salad image

If you like the distinctive taste of feta cheese, you'll enjoy this crisp and refreshing cucumber medley, "Even our twin daughters ask me to make this speedy salad," reports Connie Lasko from Mistatim, Saskatchewan.

Number Of Ingredients 7

2 medium cucumbers
1/2 teaspoon salt
1/4 cup chopped green onions
1 cup (4 ounces) crumbled feta cheese
2 tablespoons lemon juice
1 tablespoon olive oil
1/8 to 1/4 teaspoon coarsely ground pepper

Steps:

  • Cut cucumbers in half lengthwise. Using a spoon, remove seeds and discard. Cut cucumbers into 1/2-in. cubes; place in a bowl. Sprinkle with salt. Stir in onions. Combine the cheese, lemon juice, oil and pepper; add to cucumber mixture and stir gently.

6 cups Pressure-Cooker Black Beans
1 medium seedless cucumber, cut into 1/4-inch pieces
4 1/2 ounces crumbled feta (1 cup)
1/3 cup chopped cilantro, plus more for serving
3 scallions, thinly sliced
1/4 cup extra-virgin olive oil
3 tablespoons fresh lime juice, plus wedges for serving
Kosher salt and freshly ground pepper

Steps:

  • Place cooked beans, cucumber, feta, cilantro, scallions, oil, and lime juice in a large bowl. Season with 1 teaspoon salt and 1/2 teaspoon pepper; toss well to combine. Top with more cilantro and serve with lime wedges.

This is another refreshing lunch salad my sis and me came up with for taking to school with us. It features millet, beans and cucumber thus being very healthy and giving you lots of power. The feta makes a nice salty addition without adding too many calories.

Number Of Ingredients 8

125 g millet
250 ml water
1 English cucumber, diced
125 g reduced-fat feta cheese, diced finely (may use less if desired)
1 (10 ounce) can large white beans, drained
1/2 teaspoon ground red chili pepper (or cayenne pepper)
2 teaspoons dried dill (I use more, cause I like it)
salt and pepper

Steps:

  • Rinse millet and add to a small sauce pan with the 250 ml water. Bring to a boil, simmer for 5 minutes and then allow to soak up all the remaining water for 10 more minutes.
  • In a big bowl combine all the rest of the ingredients. Add the millet and season with salt and pepper to taste.
  • Eat either warm or cold.
