HEALTHIER ITALIAN CUBE STEAK
this version is healthier because it doesn't have flour,bread crumbs,or cracker crumbs. Also, to cut back on fat the mozzerella cheese can be left out and use only the lower fat parmesan.This is my own creation.

- Preheat oven to 350 degrees.
- Put oil in skillet, and add cube steaks. Cook until just brown.About 8 minutes.
- Mix the tomato sauce with the basil, oregano, garlic, onion, and mushrooms.Pour over cube steak and put in preheated oven for 20-25 minutes.
- Top with the mozzerella, and then the parmesan cheese. Return to oven til melted. About 5 minutes.

In a large skillet, saute the zucchini, tomatoes, onion and 1 teaspoon spice mixture in 1/2 teaspoon oil until zucchini is crisp-tender. This is a great Italian style way to prepare beef or venison cube steaks. Double the ingredients for a crowd!

- Preheat the oven to 350 degrees F (175 degrees C). In a shallow dish, stir together the flour, salt and pepper. In a separate bowl, whisk together the eggs and water with a fork. In a third bowl, or shallow dish, mix together the cracker crumbs, 1/3 cup of Parmesan cheese and basil.
- Heat the oil in a large skillet over medium heat. Dredge the cube steaks in the seasoned flour, dip into the egg mixture, and coat with the cracker crumb mixture. Place them in the skillet, and fry just until browned on each side. Arrange steaks in a single layer in a greased casserole dish.
- Bake for 25 minutes in the preheated oven. Meanwhile, in a medium bowl, stir together the tomato sauce, sugar, 1/4 teaspoon of oregano, and garlic powder. Spoon over steaks when the 25 minutes are up. Top each steak with mozzarella cheese and remaining Parmesan cheese; sprinkle remaining oregano over the top. Bake for 5 more minutes, or until the cheese is melted, and the sauce is hot.

- Sprinkle steaks with salt and pepper to taste (not included in ingredients above).
- In a large skillet, melt butter and cook steaks 2 at a time on medium-high heat until browned on both sides, about 4 minutes for each set of steaks.
- Reserve drippings in pan.

- Combine flour, garlic salt, and black pepper in a pie plate or shallow dish. Dredge both sides of cubed steak in flour mixture.
- Heat oil in a large skillet (preferably cast iron) over medium-high heat. Add steak (cooking in 2 batches if necessary). Cook 5 minutes per side. Remove steak from skillet and set aside.
- If you want to thicken the gravy some, add a few teaspoons of leftover flour from dredging the steak to the drippings in the pan.
- Add onion, broth, and onion soup mix to the drippings in the pan. Use a wooden spoon to scrape up any browned bits stuck to the bottom of the pan.
- Bring to a simmer and cook until onions are soft.
- Return steak to pan to warm. Serve with mashed potatoes.

- Season the steak with salt, garlic powder, dried oregano, cumin and black pepper.
- Heat the oil in a large, skillet over medium-high heat. When the oil is hot add the cube steak to the skillet. Cook the steaks about 3-5 minutes on each side, depending on the thickness. Make sure the steak is browned on the outside, and then continue cooking to the desired doneness.
- Remove the skillet from the heat, place the steaks on a plate or pan. Keep the steaks warm by covering loosely with aluminum foil, or place them in the microwave or oven to keep away from drafts.
- Do not wash the skillet.
- Immediately add the sliced onions, place the skillet back over low to medium-low heat. There should be enough residual heat in the skillet to cook the onions. Stir frequently and cook until they start to soften.
- Serve the Cuban Cube Steak with white rice, red or black beans and tostones, if desired.

- 1. In a medium bowl, mix together flour, salt, garlic powder and ground mustard.
- 2. Dredge the cube steaks in the flour mixture.
- 3. In a large skillet over medium-high heat, brown the steaks in vegetable oil. Remove and place steaks in the slow cooker.
- 4. Add the onion to the same skillet and cook for a few minutes.
- 5. In a small bowl, mix the gravy mix and water together. Pour into the skillet with onions, scraping up the browned pieces.
- 6. Pour the gravy and onions over the meat in the slow cooker. Cook on LOW for 7-8 hours, or on HIGH for 5-6 hours. Serve with mashed potatoes to take advantage of the rich gravy.
- 7. NOTE: You may want to lower the quantity of salt if you are sensitive to it or watching your salt intake.
