CHAVRIE GOAT CHEESE GNOCCHI
This is a great twist on a an Italian classic dish! You must try it! The fresh goat cheese adds a creaminess that is out of this world!

Steps:
- Bake the potatoes at 350°F until tender.
- Split in half and scoop out the pulp.
- Rice the pulp and mix with egg yolks , egg and Chavrie® mix well.
- Incorporate the flour until a stiff dough is formed.
- Roll out the dough and cut into the desired shapes. Roll over the tines of a fork.
- Cook in boiling salted water.
- Serve the gnocchi tossed with butter or olive oil and chopped parsley
- Serving Suggestion:.
- Serve over your favorite tomato sauce.

BUTTERNUT SQUASH SOUP WITH FRESH GOAT CHEESE
Just in time for fall - a creamy soup that perfectly combines butternut squash with fresh goat cheese for a deliciously warming meal. The vibrant color adds a beautiful hue to any table!

Steps:
- Peel and remove seeds from the squash.
- Cut in large 2 inch pieces.
- Place squash in heavy gauge sauce pot and cover with the milk and water.
- Bring to a boil and simmer for 20 minutes until very tender.
- Add 1 package Chavrie® Goat Cheese Pyramid and bring back to a simmer.
- Remove from the heat.
- Carefully remove squash with a slotted spoon and place in blender. Add enough of the cooking liquid to cover the squash puree in the blender. Be very careful: you must leave the center cap of the blender off so you do not trap the steam (cover loosely with a towel).
- Pour into a 1 gallon sauce pot and keep warm.
- Reserve and repeat until all the squash has been pureed.
- Adjust to desired consistency with the remaining cooking liquid. Season with salt and pepper.
- To serve, ladle the hot soup into the individual soup bowls and top with a dollop of Chavrie® Goat Cheese Pyramid garnish with fresh herbs.

CUBAN SANDWICH (MY WAY)
Cuban Sandwich - also known as Cubano, to me is a fancy grilled ham and cheese sandwich with other ingredients added on. I use my homemade Cuban Bread Roll recipe to make it even more authentic, but French bread can be used. Sofrito is a Cuban salsa and like most Cuban food is not hot spicy but full of flavors; see my note in directions.

Steps:
- Preheat a Large Cast iron or grill, over medium heat.
- Slice bread loaf in half long way making two sides. Spread the bottom and top halves with olive oil, spread mustard . Layer bottom and top halves with alternating ham, bacon, Chorizo, cheese, pickles, and onions. Be sure to place cheese on both sides .
- Top with Sofrito and sprinkle with Oregano, Paprika and salt and pepper to your preferred taste.
- Close sandwich, pressing gently. Make sure you don't overfill your sandwich by too much or the inside of the sandwich won't warm properly when cooking.
- Brush outside of the bread with soft butter.
- Wrap sandwich tightly in foil.
- Place sandwich in the center of the the grill or pan if using, press it down to make full contact Use a second pan or other heavy object to press on them until the first side crisps. About 5 minutes.
- When crisp, carefully flip sandwiches, continue cooking until crisp and browned, about another 5 minutes.
- When done, unwrap foil, slice into 2 to 4 slices and serve.
- NOTE: Sofrito is a type of Cuban salsa (not hot) I tend to make my own with recipe#456661.

Delicious salad which is commonplace throughout France, using fresh goat cheese. A more traditional version of this salad would call for thicker rounds of goat cheese, but don't feel deprived with this lower-fat version. You still get a nice portion of creamy goat cheese to eat with your salad.

Steps:
- Preheat oven to 425 degrees.
- Place the croutons on a baking sheet and top the rounds of cheese. Sprinkle with thyme and rosemary.
- Make the vinaigrette. Mix together the vinegar, lemon juice, mustard, garlic, and tarragon. Whisk in the yogurt and oil and add salt and pepper.
- Shortly before serving the salad, place the cheese-topped croutons in the oven and bake for 6-8 minutes or until the cheese is bubbling.
- Toss the lettuce, chervil, and red pepper together with the dressing and distribute among salad plates.
- Top the salads with the hot cheese croutons, garnish with radishes and serve at once.

- Slice the rolls horizontally in half, leaving 1 edge intact.
- Lay the bread open and spread each side with the mustard.
- Divide the ingredients evenly among the slices of roll.
- On a flat surface layer the ham, pork and cheese for each sandwich.
- Roll the sliced meat around the cheese and place in the open roll.
- Add 2 slices of pickles.
- Heat your panini maker or sandwich press.
- Drizzle each sandwich with olive oil.
- Place the sandwiches inside, press down and grill until the cheese is melted and the bread is flat and browned, approximately 10 minutes.
- Serve warm.
