- Place the lime juice, sour orange juice, garlic, oregano, cumin, vinegar, pepper and salt in a blender. Pulse until liquefied.
- Place the pork roast inside a 6 quart or larger crock pot.
- You can cut the pork shoulder into pieces if you need to.
- Pour the marinade over the pork.
- Cover and refrigerate at least 8 hours, overnight is best.
- Remove the crock pot from the fridge and turn on low.
- Add the 2 cans diced tomatoes and salt and pepper.
- Cook on low for 12 hours. Remove the meat from the crock pot and place on a large cookie sheet.
- Reserving the liquid to make the sauce.
- Let meat rest about 20 minutes.
- To shred pull the pork apart with 2 forks, discarding any fat or bones.

SLOW COOKER CUBAN MOJO PORK

- In a food processor or blender, combine all of the ingredients except for the pork shoulder and pulse until everything is finely chopped. If you do not have a food processor or blender, just finely chop the herbs and mince the garlic, then combine everything in a bowl and whisk together. Set aside about 1/3 cup of the mojo sauce for later and keep it in the fridge while the pork cooks.
- Place the pork shoulder in the slow cooker and pour the mojo sauce over it. Cover and cook on HIGH for 5-6 hours or on LOW for 8-10 hours.
- When the pork is fully cooked and tender, carefully transfer it to a baking sheet and bake in a 400 degree F oven for 15-20 minutes until browned on top. While doing this, you can thicken the cooking juices remaining in the slow cooked using a slurry made from 1 tablespoon of cornstarch mixed with 1 tablespoon of water, if desired. Just stir it in, cover, and cook on HIGH for 20-30 minutes while browning the pork and shredded it.
- Pull the Cuban mojo pork apart using two fork or just by chopping with a large knife a few times to break it up into tender chunks. Drizzle with reserved mojo sauce, if desired, and serve with the remaining juices from the slow cooker.

- In a large pot add the canola oil on medium high heat.
- Season the pork with the kosher salt and black pepper and brown the pork on all sides.
- To the slow cooker add the orange juice, lime juice, cumin, oregano, red pepper flakes, garlic and bay leaves and mix it together.

- Grind garlic, salt, black pepper, cumin, oregano, and coriander into a paste using a mortar and pestle.
- Transfer half of the garlic and spice paste to a bowl; add lime juice, orange juice, olive oil, and vinegar. Beat the mixture with a whisk until smooth.
- Cut several inch-long, deep slits into the fatty side of the pork roast. Rub the reserved garlic paste into the slits.
- Put rubbed roast into a gallon-size resealable plastic bag. Pour the liquid mixture over the roast, squeeze as much air from the bag as possible and seal; refrigerate, turning occasionally, 8 hours to overnight.
- Remove pork roast from refrigerator, put into a roasting pan, and let warm at room temperature for 30 minutes.

- Using a paring knife, make a few slits all over the surface of the pork. (See Note 1)
- Place the pork roast in the slow cooker and add the rest of the ingredients. Make sure the pork gets coated with the marinade.
- Cover and cook on high for 5 - 6 hours or on low for 8 or until tender.
- At this point, the pork is fully cooked and can be served with the cooking juices or you can make a quick sauce (see Note 2)
- To crisp up the top, carefully remove the pork from the slow cooker and place it onto an aluminum foil lined baking sheet. Bake on a preheated 400 degrees F oven for about 15 to 20 minutes or until nicely browned.
- Remove from the oven and let it rest for 10 minutes before serving. You will be able to shred the meat with a couple of forks. Yes, it will be that tender!
- Serve with the remaining juices from the slow cooker or sauce. (See Note 2)

- Add the pork shoulder to the slow cooker. Using a small knife cut slits into the pork, about an inch down.
- In a large bowl add the olive oil. Cut the lemon, lime and orange in half. Squeeze the juice out of the citrus into the bowl. Add the oregano, cumin, garlic, salt and pepper. Whisk until combined.
- Pour the mixture over the pork roast. Using a spatula squish the garlic and sauce into the pork.
- Add the onion rounds.
- Cover and cook on LOW for 10 hours without opening the lid during the cooking time.
- Shred the meat with 2 forks and remove the bone. I left about half of the juices with the meat to keep it moist.

- Turn a slow cooker to Low. Add orange juice, lime juice, lemon juice, and peppercorns, then add onion.

- Mix together the marinade ingredients. Quarter the oranges, lemon and lime after squeezing the juice into the marinade. Add the garlic, salt, pepper and oregano. Put the roast in a plastic bag and pour the marinade over it. Refrigerate overnight.

CUBAN STYLE PORK ROAST (CROCK POT)
I adapted a few other recipes, which called for marinating a roast overnight in mojo... and this turned out fantastic (If I do say so myself) We used this to make tacos with corn tortillas, along with home made salsa verde, queso fresco, lettuce and pico de gallo. (a Mexican style dish, but the flavors go very well together) I am also posting my recipe for an authentic salsa verde, given to my step-son by one of his co-workers.

- If pork shoulder comes in a netting, remove it. Trim of any large pockets of fat. Place in crockpot.
- Add remaining ingredients, roll the pork around in the mixture to coat evenly.

- In a medium bowl, whisk together the olive oil, orange juice, lime juice, salt, cumin, oregano, red pepper flakes, and pepper.
- Make slits in the pork with a paring knife and rub liberally all over with the oil mixture.
- Place pork in the slow cooker, along with the onion, garlic, and bay leaf. Pour the remaining juices from the bowl over the pork.
- Cover and cook on low for 8 hours or until an internal temperature of 202 degrees F is reached.
- Transfer pork to a cutting board and let cool slightly. Using tongs or forks, shred into thick chunks.
- You can enjoy as is or take it a step further by crisping it up in a pan, which is recommended!
- To pan fry: warm a tablespoon of oil in a nonstick skillet or cast iron pan over medium-high heat. Working in batches to avoid over-crowding, spread the pork in the pan in an even layer, drizzling with some of the juices. Once the juice evaporates and the bottom of the pork is golden and crispy, sear it quickly on the other side and then remove from the skillet. You want it browned all over, but not dry.
- Serve as desired. You can't go wrong with any of our suggestions!
- Note: If f you have time and can remember, I do recommend marinating the pork overnight, for even more incredible flavor. Combine everything in the slow cooker the night before then place it in the fridge (the insert, not the base). Take it out in the morning and let it warm slightly, then set it to cook.
