SALSA ROJA RECIPE - MEXICAN RED TABLE SAUCE



Salsa Roja Recipe - Mexican Red Table Sauce image

This easy homemade salsa roja recipe is the ultimate Mexican salsa, perfect for tortillas, tacos and burritos, with tomatoes, jalapeno, lime juice and more.

2 pounds tomatoes (chopped)
1 small white onion (chopped)
2 jalapeno peppers (chopped - use Serrano peppers for a bit more heat!)
2 cloves garlic (chopped)
¼ cup chopped cilantro
Juice from half a lime
2 tablespoons olive oil
¼ teaspoon cumin ((optional, not traditional, more Tex-Mex))
Salt to taste

Steps:

  • Add tomatoes, onion, peppers, garlic, cilantro and lime juice to a food processor. Process until fairly smooth.
  • Heat a large pot to medium heat and add olive oil. Add the salsa and it will sear quickly.
  • Add cumin and bit of salt.
  • Bring to a quick boil and reduce heat to a simmer. Simmer for 15-20 minutes.
  • Season with salt if needed and stir.
  • Cool and refrigerate until ready to use.
  • Serve it up in a squeeze bottle like they do in Mexican restaurants for fun!

2 small jalapenos seeded
1 medium onion chopped
1 large handful fresh cilantro
4 clove(s) garlic
1 tablespoon(s) mexican oregano
1 teaspoon(s) cumin
1 package(s) goya sazon seasoning
1/2 teaspoon(s) adobe seasoning
1 cup(s) orange juice
3/4 cup(s) sugar
1 small lemon juiced
- salt and pepper to taste

Steps:

  • Place all ingredients in food processor until well chopped and combined. Chill in refrigerator. Serve with chips

  • Make the roast pork: In a food processor or blender, pulse or blend ¼ cup of the orange juice, ¼ cup of the lime juice, the garlic, oregano and cumin until smooth.
  • Place the pork on a work surface, skin-side up. Using a sharp knife, score the skin in 1-inch intervals to form a crosshatch pattern.
  • To butterfly the pork, start by making an incision about 1 inch up, lengthwise. Continue to cut, making long strokes, lifting the meat until it is completely rolled out and flat. Season the inside aggressively with salt and rub ½ cup of the marinade onto the meat. Pull the right flap up and over to close the pork and rub ¼ cup of the marinade over the skinless part. Flip over and rub the remaining marinade into the skin. Using butcher twine, tie around the shoulder to hold it together and season with more salt. Transfer it to a large pot, skin-side up, and pour the remaining orange and lime juices around the meat. Marinate overnight, flipping the pork halfway.
  • Adjust the oven rack to the middle position and preheat the oven to 350°. Remove the meat 1 hour before cooking. Place the pork, skin-side up, in a large Dutch oven and pour the stock around the meat. Cover and braise until there is no resistance when pierced with a knife or fork, about 3 to 3½ hours.
