Inside-Out Cuban Pork Tenderloin Roll image

Your favorite sandwich just got a major makeover in the form of this brilliant pork tenderloin roll. It comes loaded with all the classic Cuban ingredients and, of course, that includes pickles.

4 tablespoons butter
1/4 cup packed brown sugar
1/4 cup yellow mustard
1 tablespoon chili powder
4 (10-inch) pieces cooking twine
1 1/4 lb pork tenderloin, trimmed
3 thin slices Swiss cheese
3 thin slices gluten-free Black Forest ham
1/2 cup dill pickle slices
2 cloves garlic, finely chopped
1 tablespoon vegetable oil
1/2 teaspoon salt
1/2 teaspoon ground black pepper

Steps:

  • Heat gas or charcoal grill. Soak twine in water 10 minutes to prevent burning. Meanwhile, in 2-quart saucepan, melt butter over low heat. Stir in brown sugar, mustard and chili powder. Cook 2 to 3 minutes, stirring frequently, until mixture comes to a boil. Pour 1/4 cup sauce into small bowl; reserve for serving. Leave remaining sauce in saucepan for basting pork.
  • Insert knife one-third of way up from bottom of tenderloin along 1 long side and cut horizontally, stopping 1/2 inch before edge. Open up flap.
  • Keeping knife parallel to cutting board, cut through thicker portion of tenderloin about 1/2 inch from bottom of tenderloin, keeping knife level with first cut and stopping about 1/2 inch before edge. Open up this flap.
  • Press sides of tenderloin down so it lies flat. Cover with plastic wrap; pound with flat side of meat mallet to 1/2 inch thick.
  • Place cheese down center of tenderloin; top with ham.
  • Arrange pickles on top of ham. Sprinkle garlic evenly over filling.
  • Tightly roll up tenderloin lengthwise.
  • Tie tenderloin tightly with twine.
  • Brush tenderloin with oil, then rub in salt and pepper. Place seam side up on grill over medium heat. Cover grill; cook 15 minutes.
  • Turn pork; brush with remaining glaze in saucepan and grill 10 to 15 minutes longer or until meat thermometer inserted in center of tenderloin reads 145°F. Transfer to cutting board; cover with foil, and let stand 5 minutes. Cut and discard twine. Cut tenderloin into slices with serrated knife. Serve with the 1/4 cup reserved sauce.

2 (8 ounce) packages cream cheese, softened
½ cup sour cream
4 green onions, chopped
1 (1 ounce) package taco seasoning mix
14 (10 inch) flour tortillas

Steps:

  • Mix cream cheese, sour cream, green onions, and taco seasoning in a bowl until well blended. Spread a thin layer of the cream cheese mixture onto each tortilla. Roll each tortilla tightly to create a long tube. Spread more of the cream cheese mixture on the edges of the tortilla to seal. Freeze rolls on a baking sheet for 20 minutes for easier slicing. Cut each roll into 1-inch pieces and thaw before serving.

1 cup sour cream
1 (1 ounce) package dry fiesta-style ranch dressing mix
1 cup chunky salsa
1 ½ cups shredded Cheddar cheese
10 (10 inch) flour tortillas

Steps:

  • In a medium bowl, mix the cream cheese, sour cream, fiesta-style ranch dressing mix, chunky salsa and Cheddar cheese. Spread even amounts of the mixture onto the tortillas. Roll tortillas and chill in the refrigerator until ready to serve.
  • To serve, slice the chilled, rolled tortillas into 3/4 inch slices and arrange on a large serving platter.

8 flour tortillas (8 inches)
1 carton (8 ounces) soft cream cheese with chives and onion
8 slices (1 ounce each) fully cooked ham
1-1/3 cups shredded cabbage
2/3 cup shredded carrot
1/2 cup honey Dijon salad dressing
1 cup shredded cheddar cheese

Steps:

  • Spread each tortilla with 1 tablespoon cream cheese. Top with a slice of ham. Combine cabbage, carrot and dressing; divide evenly between tortillas. Sprinkle with cheese. Roll tightly; wrap in plastic. Chill at least 1 hour before serving.

1/2 C Lime Juice
1/4 C Grapefruit Juice
1/4 C Water
2 Bay Leaves
1 tsp Dried Oregano, crushed
1/2 tsp Salt
1/2 tsp Ground Cumin
1/4 tsp Black Pepper
3 Cloves Garlic
1 3 LB Boneless pork shoulder
1 Large Onion

Steps:

  • Trim fat from meat if necessary. Pierce meat with fork all over. In a small bowl add juices, bay leaves, water, oregano, salt, cumin, peper and garlic. Place meat in bag set in a shallow dish, pour marinade over pork for 24 hours. Turn occasionally. In slow cooker, place onion. Add meat and marinade. Cover and cook on low heat setting for 10-12 hours. Or High heat for 5-6 hours. Remove meat. Reserve juices. Using two forks shred the meat. Remove bay leaves. Serve with tortillas.
