CUBAN BLACK BEANS AND RICE



Cuban Black Beans and Rice image

Cuban Black Beans and Rice is a simple, satisfying side dish bursting with Latin flavors like garlic, oregano, and cumin.

1 pound black beans - dried
3 cloves garlic
4 bay leaves (divided)
2 tablespoons extra virgin olive oil
1 medium onion (diced)
1 red bell pepper (seeded and diced)
2 cloves garlic (minced)
1 tablespoon salt
1 tablespoon cumin
1 tablespoon dried oregano
1 teaspoon pepper
1/2 teaspoon cayenne
2 cups long grain white rice (rinsed)
4 cups chicken broth (low sodium)
minced cilantro and lime wedges (to serve)

Steps:

  • Soak beans overnight to soften and remove any small hard stones. The next day, strain and rinse soaked beans with fresh water.
  • To cook beans, place in a large pot and add enough water to cover the beans by two inches. Carefully smash whole garlic cloves with the back of a knife and add to the pot of beans along with 2 of the bay leaves.
  • Bring the pot to a boil then reduce heat to low and simmer until tender (90 minutes or up to two hours.) Set aside once cooked.
  • Next, in a large Dutch oven, heat olive oil over medium-high heat and sauté onions, peppers, and garlic. Add spices (salt through cayenne) and continue stirring until vegetables have softened, 4-6 minutes.
  • Rince rice in a strainer until the water comes out clear
  • Stir in rinsed (uncooked) rice and sauté for 2 minutes so that the rice starts to toast and lightly brown.
  • Pour in chicken broth and add reserved, cooked black beans along with bay leaves. Stir once then bring to a boil. Stir a second time then reduce heat to low and place a tightly fitting lid on the pot. Cook until liquid has been absorbed, about 15 minutes.
  • Use a fork to loosen the rice and bean mixture then serve with fresh cilantro and lime wedges.

1/8 teaspoon salt
1 cup rice, cooked & cooled (left-over is great)
1 medium onion, chopped
1/2 green pepper, chopped
1 cup ham, diced (can use more)
1 bay leaf
2 tablespoons oil

Steps:

  • Preheat oven to 350*F.
  • Saute onions, green pepper, ham, bay leaf and 1/8 teaspoonful salt in oil. In large casserole, place drained beans, rice and onion/ham mixture. Toss lightly together. Cover and bake for 30 minutes or until thoroughly heated.

Steps:

  • 1. Heat oil in medium saucepan over medium-high heat. Add tomato sauce, garlic, sofrito and sazon, cook until fragrant, about 1 minute. 2. Transfer liquid from can red beans to measuring cup; add enough water to measure 3½ cups. Add liquid to pot; bring to boil. Add beans, rice and sugar; stir. Bring rice mixture to a boil; reduce heat to medium low and cook, covered, until water is absorbed, about 20 min 3. Remove rice from heat. Let sit until rice becomes tender, 5 minutes. 1 tablespoon cider vinegar
1/2 teaspoon dried oregano
Coarse salt and ground pepper

  • Prepare rice according to package instructions. Meanwhile, heat oil in a large saucepan over medium. Add onion, garlic, and bell pepper. Cook, stirring occasionally, until onion is softened, 8 to 10 minutes.

2 cans (14-1/2 ounces each) beef broth
1 can (14-1/2 ounces) diced tomatoes, undrained

1 can (4 ounces) chopped green chilies
1/4 cup red wine vinegar
1 large onion, chopped
3 garlic cloves, minced
1 teaspoon dried oregano
1 teaspoon dried thyme
1 teaspoon pepper

Steps:

  • In a 3-qt. slow cooker, combine all ingredients. Cover and cook on high for 4-5 hours or until onion is tender.

1 tablespoon vegetable oil
1 large onion, chopped (1 cup)
1/2 cup chopped red or green bell pepper
2 cans (15 oz each) Progresso™ black beans, undrained
2 cups cubed fully cooked ham
2 teaspoons chili powder
1 1/2 cups Original Bisquick™ mix
1/3 cup cornmeal
2/3 cup milk
1/2 cup shredded Cheddar cheese (2 ounces)

Steps:

  • Heat oil in 4-quart Dutch oven over medium heat. Cook onion and bell pepper in oil, stirring occasionally, until tender. Stir in beans, ham and 1 teaspoon of the chili powder. Heat to boiling; reduce heat to low.
  • Stir Bisquick mix, cornmeal and milk and remaining 1 teaspoon chili powder in medium bowl until soft dough forms. Drop by 6 spoonfuls onto simmering bean mixture.
  • Cook uncovered 10 minutes. Cover and cook 8 minutes longer. Sprinkle with cheese. Cover and cook about 2 minutes longer or until cheese is melted.

1/3 cup water

Steps:

  • Heat olive oil in a frying pan and fry onion and garlic for approximately 5 minutes.

2 tsp laurel spice
2 tsp maple syrup

Steps:

  • Heat a bit of oil or vegetable broth for oil-free cooking in a large saucepan. Add garlic and the optional onions and bell pepper. Fry all for around 3 minutes. Then add vegetable broth and rice. Cook for around 10 minutes.
  • Last, add the black beans, vinegar, and cumin. Season with salt and pepper plus the optional add ons, such as laurel spice or maple syrup.
  • Cook for around 5 minutes more, check if the rice is done. Divide onto plates or bowls and serve with the optional cilantro.

A colorful and veggie packed rice and black bean casserole.

2 cups cooked rice or 1 cup uncooked rice
1 bouillon cube
1/2 lime - juiced
1 15 oz can of black beans
1 bag of spinach
1 garlic clove - minced
1 10 oz package frozen corn
4 scallions - chopped
1 medium zucchini - grated
1 half jar of salsa - about 8 oz
1 14.5 oz can of diced tomatoes
2 cups of cheddar cheese - grated
1 tbs parsley - minced

Steps:

  • Preheat oven to 350 degrees.
  • If you have 2 cups of cooked rice left over from another meal, then toss cooked rice with lime juice. If you need to cook the rice before hand, cook 1 cup of rice per package directions - add bouillon cube to water. When done, let rice sit covered for 10 minutes. After rice has cooled, fluff and toss with lime juice.
  • Add cooked rice to a large bowl. You'll be adding all the ingredients in to this bowl.
  • Drain black beans and add to bowl.
  • Saute spinach and minced garlic in a little oil until slightly wilted. Add to bowl.
  • Add corn and scallions to saute pan and cook over medium heat for 3 minutes. Add corn and scallions to bowl.
  • Grate zucchini and add to bowl.
  • Add salsa to bowl.
  • Add can of diced tomatoes (and juice in the can) to the bowl.
  • Add 1 cup of grated cheese to the bowl.
  • Mix everything together in the bowl.
  • Lightly grease a 10 x 8 casserole.
  • Pour rice and black bean mixture in to casserole pan.
  • Top mixture with remaining 1 cup of grated cheese.
  • Bake in the oven for 40 minutes.
  • Remove and sprinkle minced parsley over the top as a garnish.

  • In large bowl, mix the cooked rice, onion, zucchini, chicken, mushrooms, beans, chiles, carrots, and 1/2 the Swiss cheese. Transfer to the prepared casserole dish, and sprinkle with remaining cheese.
  • Cover casserole loosely with foil, and bake 30 minutes in the preheated oven. Uncover, and continue baking 10 minutes, or until bubbly and lightly browned.
