CUBAN GRILLED CHICKEN SALAD
I came up with this recipe to use leftover chicken in a way that combines all of the delicious Cuban flavors I grew up with.

Steps:
- Toss the romaine with the onion, avocado, and peppers in a large bowl. Divide among four salad plates. Top each salad with a mound of black beans, some pineapple chunks, and the chopped chicken meat.
- Whisk together the olive oil with the garlic, salt, and pepper. Drizzle this dressing over each salad along with a little lime juice.

MOJO GRILLED CHICKEN SALAD
This Mojo Grilled Chicken Salad is a healthy dinner that is full of flavor. Chicken is marinated in a Cuban mojo (citrus-garlic sauce) and grilled to perfection. It's served up in a delicious salad with avocado, grilled bell peppers, pickled red onion, and jalapeno.

- Place the chicken breasts into a shallow dish.
- In a mixing bowl, whisk together lemon juice, orange juice, olive oil, garlic, oregano, red pepper flakes, and salt. Set aside half of this mixture to use as a salad dressing, and pour the remaining half over the chicken breasts.
- Let chicken marinate in the fridge for at least 1 hour.
- In a small mixing bowl, combine sliced red onion and sliced jalapeno. Pour red wine vinegar over. Toss together and set aside until ready to serve.
- Heat an outdoor grill to medium-high heat (375-450 degrees F). Grill chicken breasts for about 4 minutes per side, until chicken reaches an internal temperature of 160 degrees. Remove from heat and let rest for 5 minutes, until chicken reaches an internal temperature of 165 degrees. Slice.
- While chicken is resting, grill bell peppers for 2 minutes.
- Compile salad on a bed of mixed salad greens topped with fresh cilantro leaves, red onions, jalapenos, sliced avocado, and sliced chicken. Serve drizzled with the reserved salad dressing.

SPICY CUBAN MOJO CHICKEN WITH MANGO-AVOCADO SALSA

- Toast the cumin seeds in a dry skillet over medium-high heat until fragrant, about 2 minutes. Place the cumin seeds, garlic, chile pepper, salt, olive oil, orange juice, and lemon juice into the bowl of a blender; grind to a coarse paste. Toss the chicken with the marinade, then place into the refrigerator, and allow to marinate for about 2 1/2 hours.
- Preheat oven to 350 degrees F (175 degrees C).
- Heat a skillet over medium-high heat. Cook the chicken for 2 to 3 minutes on each side until browned. Place into the oven, and cook until the juices run clear, about 8 minutes. When the chicken is done, remove, cover with foil, and allow to rest for 3 to 5 minutes.
- While the chicken is in the oven, whisk together the olive oil, orange juice, lime zest, honey, and soy sauce in a skillet over medium-high heat. Simmer until the orange juice has reduced to 1/3 of original volume and is beginning to get thick and syrupy. Once thick, remove from heat, and whisk in the butter pieces one at a time until melted; set aside.
- To serve, place chicken on the plate and sprinkle with mango and avocado. Drizzle with the sauce, and garnish with cilantro and parsley.

- Measure and add the olive oil, garlic, citrus zest and juice and spices in a bowl, whisking well to combine. Add in the chicken and toss to coat. Marinate for not longer than 25 to 30 minutes.
- Meanwhile preheat your grill to 400and prepare the salsa.
- Grill the chicken until no longer pink. Depending on if you're using a grill pan or an outdoor grill will depend on how long. I would preheat your outdoor gill to 400 to 450° and if you're using a grill pan, preheat to medium to medium-high. Allow the chicken to rest for about 5 minutes before serving.
- In a medium bowl combine the mango, onion, hot pepper and cilantro. Season with a few small pinches of kosher salt before tossing to combine.
- Top chicken with salsa and enjoy!

- prepare grill. Pound chicken out to ¼ inch thickness.
- Grill chicken until cooked through. Remove to plate and set aside.
- In food processor, combine lime juice, ¼ cup cilantro, sugar, garlic, chili powder, salt, and pepper. Pulse until garlic and cilantro are chopped. Add olive oil and any juices from the chicken.
- In salad bowl, combine beans, corn, red pepper and scallions. Toss to mix.
- Arrange lettuce on plates, spoon corn and beans over lettuce. Place chicken on top. Drizzle with dressing.

- Season chicken generously with salt and pepper and place in a 9 x 13-inch non-reactive baking dish.
