Lemonade, rum, mint and lime--great on a hot day. From Food & Family magazine. Crystal Light is a low calorie fruit drink mix. 1 tub makes 2 quarts, so if you need to substitute another mix, use the amount needed to make 2 quarts.

Ingredients

1 (3 teaspoon) container crystal light low-calorie lemonade drink mix
2 1/2 cups water
1/2 cup rum
6 mint sprigs
3 cups club soda
6 lime slices

Steps:

Empty drink mix into a large pitcher, add water and rum, stir until drink mix is dissolved.
Add mint, and refrigerate until ready to serve.
Stir in club soda.
Serve over ice in tall galsses, and add a lime slice to each glass.

Ingredients

4 mint leaves plus more for garnish
2 1/4 ounces simple syrup (recipe follows)
1 1/2 ounce freshly squeezed lemon juice
Ice
Club soda
Lemon wheels
4 tablespoons sugar
4 tablespoons water

Steps:

Simple Syrup: Heat sugar and water in saucepan over low flame until sugar is completely dissolved. (Simple syrup can be stored in sealed container in refrigerator for up to 2 weeks.)
In a mixing glass, gently muddle the mint leaves, simple syrup and lemon juice. Fill pint glass with ice. Shake all ingredients well and strain using a spring strainer over fresh ice. Top with club soda and garnish with mint leaves and a lemon wheel.

Place the mint leaves and one shot of bourbon in the bottom of each glass. Muddle the mint leaves. Once the simple syrup has cooled enough pour the syrup in equal amounts into each glass and muddle the mint again.
Top each glass with ice. Pour 1/4 cup fresh lemon juice into each cup. Top with sparkling water, add a straw, lemon slice and more mint leaves, stir, and enjoy!
