CRYING TIGER RECIPE
Simple grilled steaks get a Thai spin with a spicy dipping sauce

Steps:
- Dipping sauce: Combine fish sauce, lime juice, toasted rice powder, Thai pepper, coconut sugar, cilantro, green onion, and water. Mix well and taste for seasoning. Adjust to your liking by either adding water to dilute it, or more lime juice or fish sauce.
- Heat a grill or cast Iron skillet over the stove to hot. Pat steaks dry and place seasoned steaks on grill or skillet and cook for a couple minutes on each side until desired temperature is reached.
- Allow steaks to rest 10 minutes before slicing and serving with dipping sauce.
- Serve with Lettuce leaves, Cabbage leaves, Cucumber Slices, Thai Sticky Rice or regular rice.

- Trim gristle and fat off of the side of the steaks (try to use steaks with minimal gristle 'interruptions' on the inside).
- Place both marinade and the steaks (in one layer) in large ziplock bag. Remove as much air as possible, and massage the bag to coat the steaks. Marinate in the fridge for 3 hours. If you can, flip the bag over at the halfway point. After the 3 hours, remove the bag from the fridge and set it out to rest at room temperature for 1 hour.
- If you are serving with sticky rice, at this point it will have already soaked for 12 hours (or just 30 minutes, if you are short on time) and can now be cooked while the steak sits at room temperature (see sticky rice notes in article above) .

- To Prep Mix the steak marinade ingredients in a mixing bowl before transferring to a zip-lock bag and adding the flank steaks. Ensure that the meat inside the bag gets evenly coated with the marinade. Let the meat marinate for at least 1 hr before cooking. While this is happening, begin making the dipping sauce.
- For the dipping sauce Combine all of the dipping sauce ingredients and mix thoroughly until the sugar has dissolved.
- To Cook Heat up a cast iron griddle before adding oil and the marinated beef. Grill the steaks until cooked to the desired level of doneness, ensuring that the steaks are regularly turned over for an even cook. When the steaks are done, remove from the griddle and allow them to rest for at least 5 minutes. Once the steaks have rested, cut them thinly and against the grain of the muscle to ensure the steaks will be tender to eat. Serve with the dipping sauce as well as with rice!

- Slice steak into 1/2-inch strips against the grain. Transfer to a serving platter and serve immediately with sauce.
