CRYING TIGER RECIPE

Crying Tiger Recipe image

Simple grilled steaks get a Thai spin with a spicy dipping sauce

Provided by Renee Fuentes

Categories     Main Course     Salad

Time 1h22m

Number Of Ingredients 10

2 lbs Sirloin Steak (seasoned with salt both sides.)
2 Tbsp Thai Fish Sauce
1/3 cup Lime Juice (about 2 limes)
1 tsp Ground Toasted Rice ((If making your own, toast 2 Tbsp for Sweet Glutinous Rice with Lime Leaves and grind to a fine powder).)
2 tsp Ground Thai Chili Pepper (Use more or less depending on spice level. Can sub red pepper flakes or fresh Thai chilis.)
1 tsp Coconut Sugar ( or sub brown sugar or regular sugar)
2 Tbsp Cilantro (Chopped)
2 Tbsp Green Onion (Chopped)
1 Tbsp Water (Taste the sauce first and add water as needed to make it less concentrated.)
Lettuce leaves, Cabbage leaves, Cucumber Slices, Thai Sticky Rice or regular rice.

Steps:

  • Dipping sauce: Combine fish sauce, lime juice, toasted rice powder, Thai pepper, coconut sugar, cilantro, green onion, and water. Mix well and taste for seasoning. Adjust to your liking by either adding water to dilute it, or more lime juice or fish sauce.
  • Heat a grill or cast Iron skillet over the stove to hot. Pat steaks dry and place seasoned steaks on grill or skillet and cook for a couple minutes on each side until desired temperature is reached.
  • Allow steaks to rest 10 minutes before slicing and serving with dipping sauce.
  • Serve with Lettuce leaves, Cabbage leaves, Cucumber Slices, Thai Sticky Rice or regular rice.

SEUR RONG HAI (CRYING TIGER)

Seur Rong Hai (Crying Tiger) image

This dish is a true Bangkok creation because of its intense flavors. The chiles must be hot enough to make one howl like a tiger but, at the same time, balanced with a blend of sweet-salty flavors to lessen the fire. Fresh peppercorns give a lingering sense of warmth.

Provided by Food Network

Categories     main-dish

Yield Makes 6 servings

Number Of Ingredients 11

2 teaspoons dried green peppercorns
1 tablespoon Big Four Paste
10 cloves garlic, 5 minced, 5 unpeeled, lightly crushed
3 to 20 fresh bird chiles or 2 to 15 serrano chiles, minced
1 pound boneless, skinless large chicken breasts, rinsed and patted dry
1/4 cup vegetable oil
1 teaspoon fish sauce (namm pla)
1 tablespoon sugar
Water as needed
2 tablespoons crispy pork rinds, crushed to the consistency of coarse cornmeal
20 sprigs cilantro, coarsely chopped

Steps:

  • In a small skillet, dry-roast the green peppercorns over medium heat until fragrant, about 2 minutes. Set aside to cool.
  • Put the Big Four Paste and the minced garlic in a mortar and pound until blended into a paste. Add the unpeeled garlic cloves and pound until the garlic and peels are blended into the paste. Do not worry if the membrane is separated from the cloves. (You may want to remove the peel; I encourage you to try it the authentic Thai way. It may seem unusual, but the reward is the wonderful texture and added taste of crispy garlic peel.) Add the chiles and continue pounding. Add the green peppercorns and, instead of pounding, crush them by pressing them against the side of the mortar in a circular motion. Transfer the paste to a small bowl and set aside. The paste will keep well in a jar with a tight-fitting lid in the refrigerator for a couple of weeks.
  • Trim any fat from the chicken breast. Cut the breast in half. Working with one half breast at a time, slice horizontally almost but not quite in half. Open the meat up into a butterfly shape. Put your hand firmly on top of the meat and press down on it to flatten it. Using a very sharp knife, held at a 75-degree angle to the work surface, slice thinly against the grain into 2 to 3 long pieces. Try to keep the pieces the same size and thickness. Set aside on a plate.
  • Arrange the ingredients near the stove in the order they will go into the skillet: oil, chile paste, chicken, fish sauce, sugar, and a small cup of water.
  • Heat a 12-inch skillet over high heat for 2 minutes, or until when you put your hand an inch or so above it, you can feel the heat. Add the oil, then add the chile paste, stirring it quickly, until it turns slightly brown and fragrant, 2 to 3 minutes. Add the chicken, lower the heat to medium, and sprinkle a bit of water into the pan to prevent the paste from burning. Try to keep the chicken pieces flat as you saute them to ensure even cooking. When the chicken is browned, push it to one side of the skillet and add the fish sauce and sugar to the center of the skillet. Stir and blend until the mixture bubbles, then push the chicken pieces into it while you continue to stir until the chicken is coated. If needed, sprinkle a bit more water to prevent sticking. Transfer the chicken to a serving platter, garnish with the crushed pork rind and cilantro, and serve hot.

CRYING TIGER THAI SALAD

Crying tiger Thai salad image

Make this spicy Thai salad as hot as you like with extra chillies - it's so named because the heat should induce tears! The fillet steak can also be cooked as you like it

Provided by Elena Silcock

Categories     Side dish

Time 25m

Yield 4 as part of a meal

Number Of Ingredients 12

small pack coriander , leaves and stalks separated
1 tsp oyster sauce or fish sauce
1 tsp soy sauce
1 tbsp olive oil
250g beef fillet steak
large handful mixed, soft herbs (we used mint, coriander and Thai basil), to serve
2 limes , juiced
½ onion , finely chopped
2 tbsp fish sauce
1 tsp sweet chilli sauce
1 red chilli , finely chopped
1 tbsp toasted rice powder (optional)

Steps:

  • Finely chop the coriander stalks and combine with the oyster and soy sauces. Lightly season, then tip into a sandwich bag with the steak. Massage the marinade into the meat, then put in the fridge for up to 3 hrs, but at least 1 hr.
  • Put the dipping sauce ingredients in a bowl, finely chop 3/4 of the coriander leaves and add them too. Taste the sauce - if you like it sweeter, add a little more sweet chilli sauce; if you prefer it more salty, add a little extra fish sauce. Set aside.
  • Heat a frying pan over a high heat and, once very hot, cook the steak for 2-3 mins each side, depending on how well done you like it. Rest the steak for 5-10 mins before slicing and serving on a bed of herbs, with the sauce on the side.

BEST-EVER THAI 'WEEPING TIGER' BEEF

Best-Ever Thai 'Weeping Tiger' Beef image

Juicy Weeping Tiger Beef (also known as Crying Tiger) is a famous Thai dish that's surprisingly easy to make.

Provided by Darlene Schmidt

Categories     Dinner     Entree

Time 30m

Yield 4

Number Of Ingredients 15

2 to 3 sirloin steaks (good quality)
For the Marinade:
3 tablespoons fish sauce
1 tablespoon soy sauce
2 teaspoons sugar
2 cloves garlic, minced
1/4 teaspoon ground coriander
1/4 teaspoon freshly ground black pepper
For the Sauce:
6 tablespoons fish sauce
5 tablespoons lemon juice
2 teaspoon sugar
1 to 2 chili peppers (bird's eye variety, dried and ground, OR 1 to 2 teaspoon dried chili flakes)
1/4 cup finely chopped tomato
1 handful cilantro, fresh leaves and stems, chopped, plus additional whole cilantro leaves for garnish

Steps:

  • Gather the ingredients.
  • Stir marinade ingredients together in a small bowl.
  • Place steaks in a shallow dish or resealable plastic bag. Pour marinade over the steaks. Turn the steaks several times to ensure they are covered with the marinade. Place in the refrigerator for 15 to 30 minutes.
  • While steak is marinating, make the accompanying sauce. Place all sauce ingredients together in a bowl and stir. Taste-test for a balance of spicy, sour, and sweet. Add more fish sauce if you'd like it saltier, or more sugar if too sour for your taste. Set aside.
  • Preheat oven to "broil" setting ("high" if you have a choice between high and low). Place oven rack on the second-to-highest rung. Take steak out of the refrigerator and place either on a broiling pan, or on a regular baking sheet lined with parchment paper .
  • Broil steak approximately 3 to 5 minutes, then turn and boil another 3 to 5 minutes on the other side, depending on thickness. For this recipe, the steak should still be pink in the middle, medium-rare to medium. The same goes if you are grilling instead of broiling.
  • Remove steak from oven and slice as thinly as you can. Place on a plate together with the accompanying sauce and a little fresh cilantro sprinkled over.

  • To Prep Mix the steak marinade ingredients in a mixing bowl before transferring to a zip-lock bag and adding the flank steaks. Ensure that the meat inside the bag gets evenly coated with the marinade. Let the meat marinate for at least 1 hr before cooking. While this is happening, begin making the dipping sauce.
  • For the dipping sauce Combine all of the dipping sauce ingredients and mix thoroughly until the sugar has dissolved.
  • To Cook Heat up a cast iron griddle before adding oil and the marinated beef. Grill the steaks until cooked to the desired level of doneness, ensuring that the steaks are regularly turned over for an even cook. When the steaks are done, remove from the griddle and allow them to rest for at least 5 minutes. Once the steaks have rested, cut them thinly and against the grain of the muscle to ensure the steaks will be tender to eat. Serve with the dipping sauce as well as with rice!

  • Trim gristle and fat off of the side of the steaks (try to use steaks with minimal gristle 'interruptions' on the inside).
  • Place both marinade and the steaks (in one layer) in large ziplock bag. Remove as much air as possible, and massage the bag to coat the steaks. Marinate in the fridge for 3 hours. If you can, flip the bag over at the halfway point. After the 3 hours, remove the bag from the fridge and set it out to rest at room temperature for 1 hour.
  • If you are serving with sticky rice, at this point it will have already soaked for 12 hours (or just 30 minutes, if you are short on time) and can now be cooked while the steak sits at room temperature (see sticky rice notes in article above) .

  • Press the tofu: Place the slices of tofu on a plate with a paper towel between each slice. Balance a salad plate on top to squeeze the liquid out of the tofu. Let it sit like that until time to fry. Just before frying, slice tofu into 1-inch cubes.
  • Sushi rice: In a lidded pot, bring rinsed rice and 2 cups water to a boil over high heat. Immediately when steam escapes from the lid, remove from heat for 5 minutes. After 5 minutes, return to the burner and simmer on low heat until the water is absorbed, about 10 minutes. Once cooked, remove from heat and gently stir in 2 tablespoons mirin.
  • Get the oil ready: Heat one cup vegetable oil in a skillet over medium heat. The oil should not smoke but should be hot enough that the tofu sizzles when you put it in.
  • Setup 3 bowls for breading the tofu: 1st bowl: 1 cup flour seasoned with 1 teaspoon salt and 1 teaspoon pepper. 2nd bowl: two eggs whisked together with 1 tablespoon water and a pinch of salt. 3rd bowl: 1 cup panko breadcrumbs seasoned with 1 teaspoon salt and 1 teaspoon pepper.
