Easy Quaker Cornbread image

This super easy Quaker Cornbread recipe makes soft and crusty Southern cornbread - the perfect side dish. Whip up some delicious cornbread in just 30 minutes, and serve it warm with a pat of butter and a drizzle of honey. Can be made dairy-free!

1 cup + 3 tbsp all-purpose flour
¾ cup + 1 tbsp Quaker cornmeal
¼ cup sugar
2 tsp baking powder
¼ tsp baking soda
½ tsp salt
1 cup milk ( , sub oat milk if dairy-free)
¼ cup oil
1 large egg (, beaten)
butter (, to serve (optional))
honey (, to serve (optional))

Steps:

  • Preheat oven to 400F and grease an 8-inch square pan with butter or oil (you can also use a round pan). Set aside.
  • In a large bowl, add in the flour, cornmeal, sugar, baking powder, baking soda, and salt. Mix until well-combined.
  • Pour in milk, oil, and eggs into the dry mixture and mix until combined.
  • Pour the batter into the prepared pan and bake for 22 to 25 minutes, or until the top of the cornbread turns golden brown. Test the doneness of your cornbread by sticking a toothpick in the center of the pan. If the toothpick comes out clean, it's ready! If there's wet batter on the toothpick, leave it to bake for a few more minutes.
  • Allow the Quaker cornbread to cool for 10-15 minutes, then slice into squares. Serve with a pat of butter and drizzle of honey (optional). ENJOY!

I have to laugh when people rave about my "moist, great-tasting cornbread". The recipe is on the back of the Quaker Corn Meal box and that's where this recipe comes from. It works perfectly every time. I did cut back just a hair on the sugar. The recipe here is a double one because I can't seem to make enough of it to satisfy everyone, so don't be afraid to halve it.

2 1/2 cups all-purpose flour
1 1/2 cups white cornmeal or 1 1/2 cups yellow cornmeal
1/3 cup sugar
4 teaspoons baking powder
1 teaspoon salt
2 cups milk (I use whole milk)
1/2 cup vegetable oil
2 eggs, beaten or 4 egg whites
Pam cooking spray

Steps:

  • Pre-heat the oven to 400 degree F.
  • Mix together all ingredients.
  • Spray a 13" x 17" half-sheet pan with Pam. (or use two 9" x 13" casserole dishes). Pour in the blended ingredients.
  • Bake for 25-30 minutes until golden brown on top.
  • Serve hot with butter.

2 cups all purpose flour
2 cups yellow cornmeal
2 teaspoons baking powder
2 teaspoons salt
2 tablespoons sugar
2 1/4 cups milk
2 eggs
6 tablespoons butter, melted, slightly cooled
2 tablespoons rendered bacon fat, butter, shortening or 2 tablespoons vegetable oil

Steps:

  • Preheat oven to 400. Place a 10-inch cast iron skillet in oven for 30 minutes.
  • In large bowl combine flour, cornmeal, salt, baking powder and sugar. Make a well in the center and add milk, eggs and melted butter. Stir just until moistened.
  • Remove skillet from oven and add bacon fat to skillet. Swirl around to coat bottom and sides, then pour in cornbread mixture. Smooth the top with a spatula, then place in oven and bake about 25 minutes, or until brown.
  • If you like, you can spread 2 tablespoons of butter on top of hot cornbread to melt.

Steps:

  • Preheat oven to 400*F. In a small bowl, combine cornmeal and milk; let stand for 5 minutes. Grease a 9x13 inch baking pan.
  • In a large bowl, whisk together flour, baking powder, salt and sugar. Mix in the cornmeal mixture, eggs and oil until smooth. Pour batter into prepared pan.
  • Bake it at 350*F. oven for 30 to 35 minutes, or until a knife inserted into the center of the cornbread comes out clean.
  • Tip's: If your bread is too dense try beating the batter longer next time. In the original recipe It stated to beat for 5 minute I know this seems extreme, but it will help. This helps whip more air into it.

  • Since it's impossible for me, just to follow a recipe ( and believe me, this cornbread is as good as gold when you do the original ), here are a few variations on the theme which jazzed it up for my picky crew I did over the years: switch ingredient amounts between the cornmeal and flour; let the milk/cornmeal mixture sit for 10 minutes or so and whisk it a few times; use half white and half light brown sugar; mix the whole batch for at least 5 minute on low speed; bake in a glass pyrex and reduce oven temp by 25 degrees. then soften some butter in the microwave, mix with honey and a pinch of salt ( to taste ) and slather this righteous bread with that spread.
