EASY CRUSTY BREAD



Easy crusty bread image

The most delicious bread recipe I have tried. It is easy to make and requires very little effort and delivers a crusty, delicious loaf every time.

Number Of Ingredients 5

1½ cups warm water
10 g (2tsp) instant yeast
1 tsp sugar
3 cups flour ((+1 cup for dusting) )
1 tsp salt

Steps:

  • In the bowl of a stand mixer, combine the water, sugar and yeast. Allow to stand for 5 minutes until foamy.
  • Add the flour and salt then knead with the dough hook for 5 minutes.
  • The dough will be slightly sticky but shouldn't be wet. If it is, add 1-2 tbsp flour and knead in.
  • Bring the dough together into a ball with your hand. Dust over 1-2 tbsp flour (you want it to be well covered).
  • Cover the bowl with a damp tea towel and allow the dough to rise for 1 hour until doubled in size. Leaving the dough in a warm spot will aid the rising.
  • Preheat the oven to 180°C/350°F. Place a pot (dutch oven) with a lid into the oven to preheat.
  • When the dough has proved, turn it out onto a floured surface. Fold the edges into the center of the dough then place into a floured bowl, seam side down. Dust over more flour.
  • Cover with the tea towel and allow to rise for another 30 minutes.
  • Carefully remove the pot from the oven and remove the lid. Transfer the dough to the pot and cover with the lid.
  • Place in the oven and allow to bake for 30 minutes.
  • Remove the lid and bake for another 10-15 minutes until the bread is golden brown.
  • Remove the bread from the oven and allow to cool on a wire rack for 20-30 minutes (or until it has cooled to room temperature) before slicing and serving.

1 package (1/4 ounce) active dry yeast
3 tablespoons sugar plus 1/2 teaspoon sugar
2-1/4 cups warm water (110° to 115°)
1 tablespoon salt
6-1/4 to 6-3/4 cups bread flour
2 tablespoons canola oil

Steps:

  • In a large bowl, dissolve yeast and 1/2 teaspoon sugar in warm water; let stand until bubbles form on surface. Whisk together remaining 3 tablespoons sugar, salt and 3 cups flour. Stir oil into yeast mixture; pour into flour mixture and beat until smooth. Stir in enough remaining flour, 1/2 cup at a time, to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, 8-10 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, 1-1/2 to 2 hours., Punch dough down. Turn onto a lightly floured surface; divide dough in half. Shape each into a loaf. Place in 2 greased 9x5-in. loaf pans. Cover and let rise until doubled, 1 to 1-1/2 hours., Bake at 375° until golden brown and bread sounds hollow when tapped or has reached an internal temperature of 200°, 30-35 minutes. Remove from pans to wire racks to cool.

1-1/2 teaspoons active dry yeast
1-3/4 cups warm water (110° to 115°)
3-1/2 cups plus 1 tablespoon all-purpose flour, divided
2 teaspoons salt
1 tablespoon cornmeal or additional flour

Steps:

  • In a large bowl, dissolve yeast in warm water. Using a rubber spatula, stir in 3-1/2 cups flour and salt to form a soft, sticky dough. Do not knead. Cover and let rise at room temperature 1 hour., Stir down dough (dough will be sticky). Turn onto a floured surface; with floured hands pat into a 9-in. square. Fold square into thirds, forming a 9x3-in. rectangle. Fold rectangle into thirds, forming a 3-in. square. Place in a large greased bowl, turning once to grease the top. Cover and let rise at room temperature until almost doubled, about 1 hour., Punch down dough and repeat folding process. Return dough to bowl; refrigerate, covered, overnight., Grease the bottom of a disposable foil roasting pan with sides at least 4 in. high; dust pan with cornmeal. Turn dough onto a floured surface. Knead gently 6-8 times; shape into a 6-in. round loaf. Place into prepared pan; dust top with remaining 1 tablespoon flour. Cover pan and let rise at room temperature until dough expands to a 7-1/2-in. loaf, about 1-1/4 hours. , Preheat oven to 500°. Using a sharp knife, make a slash (1/4 in. deep) across top of loaf. 1 package (1/4 ounce) active dry yeast
1 cup warm water (110° to 115°)
2 tablespoons sugar
2 tablespoons canola oil
1-1/2 teaspoons salt
3 to 3-1/4 cups all-purpose flour
Cornmeal
1 large egg white
1 teaspoon cold water

Steps:

  • In a large bowl, dissolve yeast in warm water. Add sugar, oil, salt and 2 cups flour. Beat until blended. Stir in enough remaining flour to form a stiff dough., Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. Punch dough down; return to bowl. Cover and let rise for 30 minutes. , Preheat oven to 375°. Punch dough down. Turn onto a lightly floured surface. Shape into a 16x2-1/2-in. loaf with tapered ends. Sprinkle cornmeal over a greased baking sheet; place loaf on baking sheet. Cover and let rise until doubled, about 25 minutes. , Beat egg white and cold water; brush over dough. With a sharp knife, make diagonal slashes 2 in. apart across top of loaf. Bake until golden brown, 25-30 minutes. Remove from pan to a wire rack to cool.

3 to 3-1/2 cups (125 grams per cup) all-purpose flour
1 teaspoon active dry yeast
1 teaspoon salt
1-1/2 cups water (70° to 75°)

Steps:

  • In a large bowl, whisk 3 cups flour, yeast and salt. Stir in water and enough remaining flour to form a moist, shaggy dough. Do not knead. Cover and let rise in a cool place until doubled, 7-8 hours., Preheat oven to 450°; place a Dutch oven with lid onto center rack and heat for at least 30 minutes. Once Dutch oven is heated, turn dough onto a generously floured surface. Using a metal scraper or spatula, quickly shape into a round loaf. Gently place on top of a piece of parchment., Using a sharp knife, make a slash (1/4 in. deep) across top of loaf. Using the parchment, immediately lower bread into heated Dutch oven. Cover; bake for 30 minutes. Uncover and bake until bread is deep golden brown and sounds hollow when tapped, 15-20 minutes longer, partially covering if browning too much. Remove loaf from pan and cool completely on wire rack.

1 package (1/4 ounce) active dry yeast
1-1/2 cups warm water (110° to 115°), divided
1 tablespoon sugar
2 teaspoons salt
1 tablespoon shortening, melted
4 to 5 cups all-purpose flour
Cornmeal

Steps:

  • In a large bowl, dissolve yeast in 1/2 cup water. Add the sugar, salt, shortening, remaining water and 3-1/2 cups flour. Beat until smooth. Stir in enough remaining flour to form a soft dough. Do not knead. Cover and let rise in a warm place until doubled, about 1 hour. , Turn onto a floured surface. Divide in half; let rest for 10 minutes. Roll each half into a 10x8-in. rectangle. Roll up from a long side; pinch to seal. Place seam side down on 2 greased baking sheets sprinkled with cornmeal. Sprinkle the tops with cornmeal. 1 1/2 tsp yeast
1 3/4 c water (70-75 degrees)
3 1/2 c all purpose flour plus 1 tb extra
2 tsp salt
1 Tbsp cornmeal or flour

Steps:

  • 1. In small bowl dissolve yeast and water.
  • 2. In large bowl mix 3 1/2 cups of flour and salt. Using a rubber spatula stir in yeast mixture to form a soft, sticky dough. Do not knead. Cover with plastic wrap, let rise at room temperature 1 hour.
  • 3. Punch down dough. Turn onto lightly floured surface, pat into 9 inch square. Fold square into thirds, forming a 9x3 inch rectangle. Fold rectangle into thirds, forming a 3 inch square. Turn dough over, place in a greased bowl. Cover ith plastic wrap, let rise room temperature until almost doubled, about 1 hour.
  • 4. Punch down dough and repeat folding process. Return dough to bol, refrigerate over night covered.
  • 5. Dust bottom of disposable foil roasting pan with corn meal. Turn dough onto floured surface. Knead gently 6-8 times. Shape into 6 inch round loaf. Place in prepared pan, dust top with remaining 1 Tbs of flour. Cover pan with plastic wrap, let rise at room temp until dough expands to a 7 1/2 inch loaf, about 1 1/4 hours.
  • 6. Preheat oven to 500 degrees. Using a sharp knife make a slash 1/4 inch deep across top of loaf. Cover pan tightly with foil,bake on lowest oven rack 25 minutes.
  • 7. Reduce oven setting to 450. Remove foil, bake bread 25-30 minutes longer or until deep golden brown. Remove loaf to wire rack to cool. Yield 1 loaf - 16 slices

  • Mix: In a large bowl or your Kitchen-Aid Mixer, combine the flour, salt, and yeast. Whisk the ingredients together. If you are using any herbs (or any other additions) add them to the flour mixture and whisk. Now, add the water. With the dough hook or a trusty wooden spoon, mix all the ingredients together until the dough is wet and sticky. You are not looking for a perfectly formed ball of dough. Wet and sticky are the key words. Cover your dough with a towel and let sit for 12-18 hours on the counter.
  • Form: After 12 hours, preheat the oven to 450°. Once the oven is heated place your dutch oven in the nice, hot oven and allow it to sit for 30 minutes. While you are waiting remove the towel and scoop the dough onto a floured surface. Form the dough into a ball, cover it with a towel, and allow to rise while the dutch oven gets nice and toasty. I often double this recipe to share with neighbors or a friend. It really pays off to be the neighbor of a real foodie, urban homesteader. Free fresh eggs, fresh herbs and veggies, and fresh bread.
  • Bake: Once the dutch oven is toasty and steamy (30 minutes), carefully remove the top and place your bread in the pot. Place the top back on and close the oven door. Crusty, bakery bread is about to happen! Cook the loaf for 30 minutes, covered. After 30 minutes, remove the top and allow to cook uncovered for 15 minutes.
