Crustless Spinach and Feta Quiche image

A healthier quiche option with no crust and with homemade feta cheese!

2 bunches fresh spinach (washed and trimmed from stems. )
3 oz feta
3 cloves garlic, minced
1/2 - 1 tablespoon of olive oil
1/2 small white onion, diced
5 eggs
2/3 cups 2% milk
2 tablespoons Parmesan cheese, shredded
1 teaspoon kosher salt
1/2 teaspoon fresh ground pepper
butter for greasing or non stick spray

Steps:

  • Pre-heat oven to 350°.
  • Grease a pie dish with butter. Add shredded parmesan cheese to bottom of dish and spread in a very thin layer.
  • In a large saute pan, heat olive oil on medium. Add garlic and onion until translucent. Add spinach and saute, mixing often until spinach is bright and wilted. Remove from pan and put in a bowl.
  • In a separate large bowl, add 5 eggs, 2/3 cup of milk, salt, and pepper. Whisk well.
  • Add crumbed feta to bowl with spinach. Add spinach mixture to large bowl with eggs. Mix well.
  • Pour egg and spinach mixture into pie dish so that it fills dish but doesn't overflow.
  • Bake for 50 minutes until egg has set.
  • Serve and enjoy!

This is a really easy and quick take on spinach pie. It is without a crust, but you still get roughly the same yummy flavors in a fraction of the time and effort. There is also a nice side of tomato salad included. Compliments go to the Food Network kitchens.

1 tablespoon extra-virgin olive oil
10 ounces frozen spinach, thawed
4 scallions, thinly sliced
3 large eggs
3/4 cup half-and-half
1 tablespoon plain breadcrumbs
2 teaspoons crumbled dried mint
1 1/4 teaspoons kosher salt
fresh ground black pepper, to taste
1 pinch cayenne pepper
freshly grated nutmeg, to taste
1/3 cup crumbled feta cheese
12 ounces mixed small tomatoes, cut in halves (yellow and red)
2 -3 pepperoncini peppers, stemmed and chopped
2 tablespoons pitted kalamata olives, coarsely chopped
2 tablespoons olive oil
1 tablespoon fresh lemon juice
kosher salt, to taste
fresh ground black pepper, to taste

Steps:

  • Tomato Salad:.
  • Toss the tomatoes together with the pepperoncini and olives in a salad bowl. Add the olive oil, lemon juice, oregano salt and black pepper to taste. Toss again.
  • Spinach Pies:.
  • Put a rack in the center of your oven and preheat to 400 degrees F.
  • Heat olive oil in a skillet over medium-high heat.
  • Squeeze excess liquid out of spinach.
  • Add the spinach and scallions to the skillet and cook, stirring, until dry - about 4 to 5 minutes.
  • Transfer to a colander and press with the back of a spoon to get rid of the last bits of moisture.
  • Brush 4 6-oz. ramekins with some olive oil and put them on a baking sheet.
  • Put spinach mixture, eggs, half-and-half, bread crumbs, mint, salt, black pepper, cayenne pepper and nutmeg into a food processor and pulse until the spinach is finely chopped. Remove blade and stir in the feta cheese.
  • Divide the mixture evenly between the 4 ramekins.
  • Bake until set around the edges but still a little bit soft in the center - about 20 minutes. Turn oven off, leaving the spinach pies inside to set. Keep them in the oven for another 5 minutes.
  • Run a knife around the edge of each pie and invert onto plates. Spoon some tomato salad around each and serve.

4 tomatoes (sliced)
1-2 teaspoons salt
1 Tablespoon butter
1/2 cup onion (chopped)
1 clove garlic (minced)
1/2 teaspoon black pepper
2 Tablespoons fresh oregano (chopped)
6-7 leaves basil (chopped)
2 cups mozzarella cheese (shredded, plus extra for sprinkling over top)
2 eggs (beaten)

Steps:

  • Slice tomatoes and lay sliced on plates. Sprinkle lightly with salt and let sit at least 10-20 minutes, and up to 30 minutes.
  • Melt butter in small skillet over medium-high heat. Add onion and garlic and saute' until onions are soft (about 8 minutes). Transfer to a medium-sized bowl.
  • Add cheese, eggs, herbs, and pepper to bowl. Stir to combine.
  • Drain water off of plates with tomatoes, With a paper towel, Gently blot tomatoes to soak up excess moisture.
  • Arrange tomatoes in a single layer on a greased pie pan. Top with about 1/4 cup of the cheese mixture. Repeat until all ingredients have been used, finishing with a layer of tomatoes. Top this layer with a sprinkle of mozzarella cheese.
  • Bake at 375 degrees for 30-40 minutes, or until edges are lightly browned.
  • Allow to sit 5-7 minutes before serving.

2 Tablespoons Diced Onion
1 12 ounce Package frozen chopped spinach, thawed and squeezed of liquid
5 Large Eggs, beaten
1 1/2 Cups Heavy Cream
1 teaspoon Kosher salt
1/2 teaspoon Black Pepper
1/2 teaspoon Ground nutmeg
2 Cups Shredded Swiss cheese

Steps:

  • Heat the butter in a small slilet over medium heat. Sauté the onion until it is translucent, about 6-8 minutes.
  • Pre-heat the oven to 375F. Spray a pie pan with cooking spray. In a large bowl, add in the spinach, onion, beaten egg, heavy cream, salt, pepper, nutmeg, and cheese. Stir until all combined. Pour into the pie plate.
  • Bake in the preheated oven for 35-40 minutes, or until the eggs are set. Cut into 6 slices and serve.

  • Preheat the oven to 200°C (fan). Put an ovenproof frying pan (around 26cm diameter) on a medium heat.
  • Spinach and feta pie - Toast the pine nuts in the dry frying pan until they start to colour. Crack five eggs into a mixing bowl and crumble in the feta cheese.
  • Heat the frying pan with a bit of olive oil and butter then add half of the spinach. Move the spinach around in the frying pan for about a minute and once it has wilted add the remaining spinach.
  • Cover your worktop with a 50cm piece of greaseproof paper (shiny side up). Scrunch the paper up and then lay it out flat. Grease well with olive oil. Working quickly, arrange four sheets of filo pastry in a square, making sure that the inner edges slightly overlap.
  • The spinach should have wilted by now. If it's very wet, drain it in a colander then add it to the egg mixture and grate in half of the nutmeg. Mix well, taste and adjust the seasoning if necessary.
  • Pick up the greaseproof paper that the pastry is sitting on and transfer it to the frying pan (or cake tin in my case) so that the edges hang over the sides.
  • Coated ice cream - Remove the ice cream from the freezer to soften. Put the coffee beans and hazelnuts into a blender and blitz for around 30 seconds. Break the chocolate into small pieces, add to the blender and then whizz it up again for another 30 seconds.
  • Scoop a ball of ice cream for each person, place on a dish and coat in the chocolate/hazelnut mixture. If you have any leftover mixture (I had loads) it can be frozen and eaten at a later date.
  • Tomato salad - Clean the blender and add the basil, salt, pepper, garlic, white wine vinegar and around 3 tablespoons of extra virgin olive oil. Blend until you have a smooth, dark green dressing.
