This fresh update of English mushy peas gets its zesty zing from basil vinaigrette.

Number Of Ingredients 10

4 skinless salmon fillets (5 ounces each, about 1 inch thick)
1 leek, halved and rinsed well
1/2 teaspoon whole peppercorns, plus freshly ground pepper
Coarse salt
2 tablespoons thinly sliced basil leaves, plus sprigs for garnish
1 teaspoon finely grated lemon zest and 1/4 cup lemon juice (from 2 lemons)
1/2 teaspoon sugar
1/3 cup extra-virgin olive oil
2 cups shelled fresh garden peas (from 2 pounds in pods)
1 tablespoon thinly sliced fresh mint leaves

Steps:

  • Place salmon in a pot, and add leek, peppercorns, 2 teaspoons salt, and 4 cups water. Bring to just under a boil, reduce heat, and cook at a bare simmer until salmon is just cooked through, 3 to 5 minutes. Remove from water, and cover with parchment to keep moist.
  • Puree sliced basil and lemon zest in a food processor. Add sugar and lemon juice, and pulse to combine to make vinaigrette. With machine running, add oil and season with salt.
  • Bring a medium pot of water to a boil. Add 1 tablespoon salt and the peas. Reduce heat, and vigorously simmer until tender and bright green, about 4 minutes. Drain, and transfer to a bowl. Add 2 tablespoons basil vinaigrette, and crush with a potato masher. Season with salt and pepper, then add mint.
  • Divide peas among 4 plates, and top with salmon. Drizzle with more vinaigrette, and garnish with basil sprigs.

3 strips lemon zest
4 skinless salmon fillets (4 to 6 ounces each)
1/2 pound trimmed snap peas
2 tablespoons unsalted butter
1/2 cup fresh mint leaves
1 bunch trimmed watercress
Olive oil

Steps:

  • Bring water and lemon zest to a simmer in a large skillet. Season salmon fillets and add to pan with snap peas. Cover and cook 5 minutes, until salmon is opaque throughout; transfer to a platter. Drain and toss peas with butter, mint, and watercress. Drizzle with olive oil and season.

2 (6-8-ounce) center-cut wild salmon fillets (each about 1 1/2" thick)
1 cup dry white wine
2 tablespoons kosher salt plus more for seasoning
4 tablespoons (1/2 stick) unsalted butter
4 ounces fresh morels; sliced, stemmed shiitake; or other mushrooms
1/2 cup shelled fresh (or frozen, thawed) peas
1/2 cup heavy cream
Freshly ground black pepper
2 tablespoons minced fresh chives or 2 pea tendrils

Steps:

  • Place salmon, skin side down, in a large high-sided skillet. Add wine, 2 tablespoons salt, and cold water to cover salmon by 1/2". Cover pan; bring liquid to a simmer over medium heat. Reduce heat to medium-low, uncover, and gently poach salmon until just cooked through and barely opaque in the center, about 6 minutes, depending on thickness. Transfer salmon and 2 tablespoons poaching liquid to a plate; tent loosely with foil.
  • Meanwhile, melt butter in a medium skillet over medium heat. Add mushrooms and cook, stirring occasionally, until they begin to soften, about 3 minutes. Add 1/2 cup salmon poaching liquid and peas and simmer until peas begin to soften, 2-3 minutes. Add cream and bring sauce to a simmer. Cook until slightly thickened, about 5 minutes. Season with salt and pepper.
  • Using a spatula, transfer salmon, skin side up, to paper towels. Gently peel off and discard skin. Invert onto serving plates and spoon sauce over. Garnish with chives.

240g wholewheat fusilli
knob of butter
1 large shallot, finely chopped
140g frozen peas
2 skinless salmon fillets, cut into chunks
140g low-fat crème fraîche
½ low-salt vegetable stock cube
small bunch of chives, snipped

Steps:

  • Bring a pan of water to the boil and cook the fusilli according to the pack instructions.
  • Meanwhile, heat a knob of butter in a saucepan, then add the shallot and cook for 5 mins or until softened.
  • Add the peas, salmon, crème fraîche and 50ml water. Crumble in the stock cube.
  • Cook for 3-4 mins until cooked through, stir in the chives and some black pepper. Then stir through to coat the pasta. Serve in bowls.

Crushed coriander seeds and lemon zest give this quick salmon recipe praiseworthy flavor that pairs beautifully with a shaved asparagus and poached egg salad. Served with a glass of white wine, this healthy recipe makes the ultimate lunch or light dinner.

1 tablespoon coriander seeds
1 teaspoon lemon zest
¾ teaspoon fine sea salt, divided
½ teaspoon crushed red pepper
1 pound wild salmon (see Tips), skin-on, cut into 4 portions
1 pound asparagus, trimmed
2 tablespoons extra-virgin olive oil
1 tablespoon lemon juice
1 tablespoon chopped fresh mint
1 tablespoon chopped fresh tarragon
¼ teaspoon ground pepper, plus more for garnish
8 cups water
1 tablespoon white vinegar
4 large eggs

Steps:

  • Position a rack in upper third of oven; preheat broiler to high. Coat a rimmed baking sheet with cooking spray.
  • Toast coriander in a small skillet over medium heat, shaking the pan frequently, until fragrant, about 3 minutes. Pulse the coriander, lemon zest, 1/2 teaspoon salt and crushed red pepper in a spice grinder until finely ground. Coat the salmon flesh with the spice mixture (about 1 1/2 teaspoons per portion) and place the salmon on the prepared baking sheet.
  • Cut off asparagus tips and very thinly slice stalks on the diagonal. Toss the tips and slices with oil, lemon juice, mint, tarragon, pepper and the remaining 1/4 teaspoon salt. Let stand while you cook the salmon and eggs.
  • Bring water and vinegar to a boil in a large saucepan.
  • Meanwhile, broil the salmon until just cooked through, 3 to 6 minutes, depending on thickness (see Tips). Tent with foil to keep warm.
  • Reduce the boiling water to a bare simmer. Gently stir in a circle so the water is swirling around the pot. Crack eggs, one at a time, into the water. Cook until the whites are set but the yolks are still runny, 3 to 4 minutes.
  • To serve, divide the asparagus salad and salmon among 4 plates. Make a nest in each salad and top with a poached egg.

1 lemon
4 garlic cloves, smashed
½ teaspoon Aleppo pepper or pinch of crushed red pepper
8 to 10 ounces albacore tuna, cut into 1-inch slabs
Extra-virgin olive oil for poaching
½ cup farro, barley, or wheat berries
Salt
8 ounces sugar snap peas, trimmed, halved if large
Freshly ground pepper
1 (15-ounce) can chickpeas, drained
½ small red onion, thinly sliced
1 cup grape tomatoes, halved
¼ cup snipped chives

Steps:

  • Use a vegetable peeler to remove strips of lemon zest and add to a medium saucepan. Add the garlic, Aleppo pepper, tuna, and enough oil just to cover. Bring to a gentle simmer over medium-low heat and cook until the tuna is opaque and firm, about 15 minutes. Transfer the tuna to a plate and break into large flakes. Strain the oil and reserve ¼ cup for the dressing.
  • Meanwhile, cook the grains in a large saucepan of salted boiling water until tender, 20 to 60 minutes depending on the grain. Add the snap peas to the grains and cook until crisp-tender, about 2 minutes. Drain the grains and snap peas, spread on a plate and let cool slightly.
  • Into a large bowl, squeeze 3 tablespoons lemon juice. Whisk in the reserved olive oil and season with salt and pepper. Add the grains, snap peas, tuna, chickpeas, onion, tomatoes, and chives and toss to combine, leaving the tuna in bite size pieces.
  • The salad can be refrigerated for up to 4 days.
