Orange Chocolate Chip Muffins image

Orange and chocolate are heavenly together. Dust with powdered sugar if desired. If you like the chocolate melted, lightly warm muffins in the microwave before serving.

½ cup sour cream
2 eggs
⅓ cup canola oil
½ teaspoon vanilla extract
¾ cup white sugar
1 orange - zested, peeled, and segmented
1 ¾ cups self-rising flour
1 pinch salt
7 ounces milk chocolate chips (such as Cadbury Baking Chips)

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line 16 muffin cups with paper liners.
  • Whisk milk, sour cream, eggs, oil, and vanilla extract together in a bowl until well combined. Whisk in sugar and orange zest. Stir in flour, salt, and chocolate chips in that order. Dice orange segments and gently fold into batter.
  • Spoon batter into the prepared muffin cups, filling each 3/4 full.
  • Bake in the preheated oven until muffins are golden and a toothpick inserted into the center comes out clean, 15 to 20 minutes. Cool in tin for 5 minutes. Transfer to a wire rack to cool completely.

1/2 cup whole wheat flour
1/2 cup packed brown sugar
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
1 large egg
1/2 cup vegetable oil
1/2 cup orange juice
1 tablespoon grated orange zest
STREUSEL TOPPING:
1/2 cup packed brown sugar
1/2 cup chopped pecans
1/4 cup all-purpose flour
2 tablespoons butter, melted
1 teaspoon ground cinnamon

Steps:

  • In a large bowl, combine the first seven ingredients. In a small bowl, combine the egg, oil, orange juice and zest; stir into dry ingredients just until moistened. Fill greased muffin cups two-thirds full. , Combine topping ingredients; sprinkle heaping tablespoonfuls on each muffin. Bake at 375° for 18-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack.

1/4 cup light brown sugar
1/3 cup flour
1/3 cup rolled oats
1/2 tsp cinnamon
pinch of salt
3 Tbsp unsalted butter, melted
1/2 tsp vanilla extract
1 1/2 cups flour
3/4 cup sugar
1 tsp aluminum-free baking powder
1 tsp baking soda
1/2 tsp salt
1/2 cup low-fat buttermilk, at room temperature
1/2 cup plain fat-free Greek yogurt, at room temperature
1/4 cup unsalted butter, melted and slightly cooled
1 large egg, lightly beaten
1 1/2 tsp vanilla extract
3/4 cup semisweet chocolate chips

Steps:

  • Preheat oven to 425°F and line a 12-cup standard muffin pan with baking cups; spray baking cups lightly with cooking spray. For the crumb topping, combine sugars, flour, oats, cinnamon, and salt in a small bowl; add melted butter and vanilla, and toss mixture with a fork until completely incorporated and crumbly. Chill topping in the freezer until needed.
  • Whisk together flour, sugar, baking powder, baking soda, and salt in a large bowl. Make a well in the center of the mixture. Combine buttermilk, yogurt, melted butter, egg, and vanilla in a medium bowl; add to flour mixture and fold in just until almost incorporated. Fold in chocolate chips.
  • Fill each baking cup 3/4 full of batter and sprinkle evenly with crumb topping.
  • Place muffin pan in the oven and bake for 5 minutes at 425°F. Reduce temperature to 350°F and continue baking 10 to 12 minutes (for a total baking time of 15 to 17 minutes), until muffins are golden and a toothpick inserted in the center comes out clean or with a few crumbs attached. Let muffins cool in pan on a wire rack for 5 minutes before removing from pan to cool.

1/3 cup sugar
3 1/2 teaspoons baking powder
1 teaspoon salt
3/4 cup semisweet chips (i use the mini-chips)
3/4 cup milk
1/2 cup vegetable oil
1 egg
1 -1 1/2 teaspoon orange oil or 2 tablespoons orange zest
additional sugar, to sprinkle on top

Steps:

  • In medium mixing bowl, combine flour, sugar, baking powder, salt and chocolate chips.
  • In a small mixing bowl, whisk together milk, vegetable oil, egg,and orange oil or peel until light.
  • Add wet ingredients to dry and stir together for 20 seconds, or only until ingredients are just moist.
  • If you see lumps, it is OK to leave them.
  • Lightly grease cups of 12-cup muffin pan and fill each 2/3 full w/batter.
  • Sprinkle 1/2 teaspoon sugar over each for a crunchy, sugary crust.
  • Bake in preheated 400 F oven for 18 to 20 mins.

1 tablespoon flour
2 tablespoons softened butter

Steps:

  • Preheat oven to 350 degrees F. Line a muffin tin with liners. Mix the topping ingredients together in a bowl and set aside. In a large bowl, whisk together flours, baking powder, salt and sugar to remove all lumps. Measure out milk, then to the measuring cup add in orange juice, vanilla and egg, mixing to combine. Add to dry ingredients, mixing until just combined, then add in melted butter and orange zest, stirring until mixed. Fold in chocolate chips. Using a 1/4 cup measure, scoop batter equally into liners. Top each with brown sugar topping, then bake for 15-18 minutes, or until muffins are set.
