BOURBON CANDIED PECANS
A boozy touch to these candied pecans that are reminiscent of pralines.

- Preheat oven to 250°. Line baking sheet with foil. In a large bowl, combine the sugar, brown sugar, cinnamon, nutmeg, cloves and salt. Stir and set aside. In a large bowl, combine the egg white, whiskey, vanilla and honey. Whisk together until frothy. Add the pecans and stir to coat. With a slotted spoon or fork, remove pecans and add them to the sugar mixture, don't dump in the extra liquid. Pour pecans out onto prepared baking sheet. Bake for 1 hour 15 minutes, stirring every 20 minutes or so. The pecans will be sticky until they cool.

Steps:
- Preheat oven to 250 degrees F (120 degrees C).
- Mix sugar, cinnamon, and salt together in a bowl.
- Whisk egg white and water together in a separate bowl until frothy. Toss pecans in the egg white mixture. Mix sugar mixture into pecan mixture until pecans are evenly coated. Spread coated pecans onto a baking sheet.
- Bake in the preheated oven, stirring every 15 minutes, until pecans are evenly browned, 1 hour.

- In a food processor, pulse half the pecans until coarsely chopped; reserve remaining pecans. Combine eggs and sugars until well mixed. Add next 5 ingredients and chopped pecans., Unroll crust into a 9-in. metal pie plate; flute edge. Pour filling into crust. Arrange reserved pecan halves over filling. Place filled pie in freezer for 30 minutes. , Preheat oven to 425°. Bake until crust is set, about 15 minutes. Reduce oven setting to 350°; continue baking until pie is puffed and set in the middle, about 1 hour (tent loosely with foil if needed to prevent overbrowning). Cool. If desired, serve with vanilla ice cream.

CRUNCHY & SWEET BOURBON PECANS
This is a recipe I use a lot from Wisconsin Cheese Marketing Board. When you make these for gift giving- be sure to use a recycled or new stylish tin to put these delicious treats in.

Steps:
- 1. Preheat oven to 350^. Place pecans on a rimmed cookie sheet and bake 10 minutes or until fragrant. Transfer toasted pecans to a bowl; set aside.
- 2. In a large cast iron skillet, melt butter over medium heat. Add toasted pecans and stir to coat. Add brown sugar,cinnamon and salt; continue to cook over medium heat, stirring constantly about 10 minutes.
- 3. Add bourbon, stir to combine and cook 1 to 2 minutes, mixing well. Remove skillet from the heat and pour pecans onto the rimmed cookie sheet now lined with parchment paper. Spread pecans into thin layer and let cool 20 minutes. Break mixture into bite size pieces and cool completely before packaging.
- 4. store pecans in an airtight container at room temperature for up to 1 week.
BOURBON PECAN PRALINES

- Grease 2 baking sheets; set aside. In a large heavy saucepan over medium heat, melt butter. Stir in sugars, then the cream; cook and stir until mixture comes to a boil. Cook, stirring occasionally, until a candy thermometer reads 236° (soft-ball stage), about 20 minutes. , Remove from the heat; stir in the pecan halves, chopped pecans and bourbon. Immediately drop by tablespoonfuls onto prepared baking sheets. Let stand until pralines are set and no longer glossy. Store in an airtight container.
