- Whisk the flour, baking powder and salt in a medium bowl. Beat the butter and granulated sugar in a large bowl with a mixer on medium-high speed until light and fluffy, 3 to 5 minutes. Beat in the egg and vanilla until incorporated. Reduce the mixer speed to low; add the flour mixture and beat until just combined. Remove half of the dough and wrap in plastic wrap. Add the cinnamon extract, cocoa powder and food coloring to the remaining dough and beat until incorporated; wrap in plastic wrap. Refrigerate both pieces of dough until firm, about 1 hour.
- Dust the dough with flour and roll out each piece on parchment paper into a 10-by-11-inch rectangle. Flip the red dough on top of the plain dough; remove the top piece of parchment and trim the edges. Sprinkle the ground cinnamon and sanding sugar on top. Starting from a short end, tightly roll up the dough, using the parchment to help; roll the log in sanding sugar. Wrap in plastic wrap and refrigerate until firm, at least 3 hours or overnight.
- Position racks in the upper and lower thirds of the oven and preheat to 350 degrees F. Line 2 baking sheets with parchment. Slice the log crosswise 1/4 inch thick; arrange the slices about 1 1/2 inches apart on the baking sheets. Bake, switching the position of the pans halfway through, until slightly puffed and lightly golden on the bottom, 12 to 15 minutes. Let cool 5 minutes on the baking sheets, then transfer to racks to cool.
KIELBASA AND HONEY MUSTARD PINWHEELS
This is a unique spin (or spiral!) on pigs in a blanket, the classic appetizer that's perfect for any occasion. We've swapped in diced kielbasa for the usual hot dogs, and baked honey mustard into the swirls of puff pastry. The best part: You can assemble the three-ingredient apps ahead of time and then cook them off just before your guests arrive.

- Preheat the oven to 400 degrees F and line a rimmed baking sheet with parchment.
- Unfold the puff pastry onto a lightly floured work surface. Using a rolling pin, gently roll the dough out to a 10-by-15-inch rectangle. With a small offset spatula, spread the honey mustard evenly over the dough, making sure to go all the way to the edges, then sprinkle the kielbasa pieces over the mustard.
- Starting at a long side, roll the dough into a log as you would a jelly roll, then pinch the seam shut and place onto the prepared baking sheet, seam-side down. Refrigerate the log until slightly firm, at least 30 minutes; this will make it easier to cut it into rounds. (See Cook's Note)
- Cut the chilled puff pastry log into 1/2-inch-wide slices (you should get 20 to 22 slices) and place the slices cut-side down onto the baking sheet. If needed, adjust the slice shape to form a circle. Bake until puffed and golden brown, about 18 minutes. Let cool 5 minutes before serving.
PEANUT BUTTER AND JAM PINWHEELS

- BEAT shortening, peanut butter and sugar in large bowl at medium speed of electric mixer until well blended. Beat in egg, milk and vanilla.
- COMBINE flour, baking soda and salt. Add gradually to creamed mixture at low speed. Beat until well blended.
- CUT two pieces of wax paper to a size of 15 x 10 inches. Place dough on one sheet, top with second sheet, then roll dough to the edges. Mix jam with cornstarch until dissolved and smooth. Remove top piece of wax paper. Spread jam mixture on dough evenly to within 1/2-inch of edges.
- LIFT up long side of wax paper. Loosen dough with spatula. Using the wax paper, roll up dough jelly-roll fashion. Seal seam. Wrap in the wax paper to freeze for 1 hour or wrap in plastic wrap to refrigerate overnight.
- HEAT oven to 375 degrees F. Coat baking sheet lightly with no-stick cooking spray. Unwrap dough. Cut into 3/8-inch slices. Place 2-inches apart on prepared baking sheet. Return dough to freezer until all cookies are sliced.
- BAKE 11 to 12 minutes or until set. Cool 1 minute on baking sheet before removing to cooling rack.
- TIP By freezing the dough, a nice clean cut can be made when slicing to make cookies.
CRUNCHY SUNFLOWER-BUTTER, BACON AND BANANA PINWHEELS
What would Elvis do if he couldn't have peanut butter on his favorite PB-bacon-banana sandwich? Bet he'd say "Thank you very much" for these compact little pinwheels made with a perfect substitute: sunflower butter. Save a few pieces of bacon from brunch on Sunday, and you'll need just 10 minutes on a busy school morning to wrap and roll a snack that does The King proud.

- Put the wrap on a work surface, and spread the sunflower butter to the edges. Drizzle the honey on top, and spread to the edges. Sprinkle the chopped bananas and bacon evenly on top, almost to the edges.
- Roll the wrap up tightly, then squeeze it gently to make an even, tightly sealed log. Trim about 1 inch from each end (to discard or nibble on), then slice the roll into six 1-inch-wide pinwheels. Set them in a small airtight container, a cut-side up; lay a whole banana slice on top of each one; then seal the container tightly. The pinwheels should be served the day they're made.

- Preheat the oven to 350˚F. Line two baking sheets with parchment paper. Lightly dust a work surface with flour. Roll out the puff pastry on the work surface into a 12-inch square.
- Brush with the lemon curd and sprinkle with the poppy seeds.
- Cut the pastry in half, then cut each half crosswise into 1/4-inch-wide strips. Roll up each strip into a coil. Place the coils 2 inches apart on the prepared pans. Brush with the egg wash.
- Bake the cookies until golden, about 20 minutes. Transfer to a rack to cool completely.
