- Start by preparing the shrimp fajitas marinade recipe. Measure out the cajun seasoning, olive oil, and lime juice into a small mixing bowl. Add minced garlic, a dash of salt to taste, then mix the ingredients.
- Next, prepare your bell peppers and onion by slicing them, then seasoning them with half of the marinade you just made. Use the other half of your marinade to season your shrimp. Make sure your shrimp, peppers, and onion are all well coated in the cajun seasoning!
- Place a large skillet or a wok on the stovetop and add a drizzle of olive oil. Lower the heat to medium, and allow the oil to heat up. Add your seasoned shrimp, and cook them for no more than 2 minutes on each side. Remove the cooked shrimp and set it to one side.
- We now need to cook sauteed peppers and onions for fajitas by adding our seasoned cajun vegetables to the same skillet or wok. Sautee for 10 minutes, until the vegetables are soft.

- Cook Shrimp: Heat 1 tbsp of the olive in a large skillet. Add the shrimp to the skillet then sprinkle about half of the fajita seasoning over the shrimp and toss. Cook the shrimp for 4 to 5 minutes, 2 to 3 minutes per side, until it’s pink and opaque. Transfer the shrimp to a plate and set aside.
- Finish: Add the other tbsp of olive oil to the skillet. Add the onion and cook for a couple minutes until it’s slightly translucent. Next, add the peppers and the remaining fajita seasoning and toss. Cook for another 3 to 5 more minutes so the peppers cook slightly, you don’t want them over cooked, they should be a bit crunchy. Add the shrimp back to the skillet and toss with the peppers.
- Serve: Serve over tortillas, garnished with cilantro and top with salsa, sour cream and any of your favorite toppings.
