SUPERB SAUSAGE CASSEROLE



Superb Sausage Casserole image

This sausage casserole is yummy and excellent. And it's perfect for when you haven't much in the larder. Serve with brown rice and freshly boiled broccoli.

6 links pork sausage
1 large red bell pepper, chopped
1 large orange bell pepper, chopped
1 large yellow bell pepper, chopped
1 large onion, diced
½ cup ketchup
¾ cup hot water
salt and pepper to taste

Steps:

  • In a large skillet, brown sausage on medium heat. Remove from heat and cut into thirds.
  • In a 2-quart casserole dish, combine the sausages, red bell pepper, orange bell pepper, yellow bell pepper, onion, ketchup and hot water. Mix together until well combined, and season with salt and ground black pepper.
  • Bake at 350 degrees F (175 degrees C) for 1 hour, stirring every 15 minutes.

This is my own variation to the old tried and true string bean casserole. My family has loved this for years, and now my daughter makes it for her family.

4 slices bacon
1 (10.75 ounce) can condensed cream of mushroom soup
1 (8 ounce) can water chestnuts, drained and chopped
¾ cup milk
2 (15 ounce) cans green beans, drained
ground black pepper to taste
1 ⅓ cups French-fried onions

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
  • In a 1-1/2 quart casserole dish, mix together the bacon, soup, water chestnuts, milk, green beans and pinch of black pepper.
  • Bake for 30 minutes or until heated through.
  • Stir and top with French fried onions. Bake for 5 additional minutes or until onions are golden brown.

From a 1981 Southern Living edition. Yummy for breakfast or dinner. I prefer it without the ground beef. Think ahead if you choose to refrigerate overnight. You may bake this without refrigerating overnight; bake, uncovered, at 300 degrees for 20 minutes or until hot. I like a little green pepper in mine too. Consider using spicy sausage or adding in some cayenne and garlic. Great on a breakfast buffet.

1 (6 ounce) package long grain and wild rice blend
1 lb bulk pork sausage
1 lb ground beef
1 large onion, chopped
1 (8 ounce) can sliced mushrooms, drained
1 (8 ounce) can water chestnuts, drained and sliced
3 tablespoons soy sauce
1 (2 3/4 ounce) package sliced almonds
lemon slice (optional)
parsley sprig (optional)

Steps:

  • Cook rice mix to pkg directions and set aside.
  • Cook sausage, ground beef, and onion over medium heat until browned, stirring to crumble. Drain off drippings. Add rice, mushrooms, water chestnuts and soy sauce; stir well. Spoon into ungreased 2 quart casserole. Cover and refrigerate overnight.
  • Remove from refrigerator, and allow to sit at room temperature 30 minutes. Sprinkle with almonds. Bake, uncovered at 325 for 50 minutes or until heated through.
  • Garnish with lemon and parsley.

U don't have to follow this recipe exactly ... You can use any sausage and any soup that takes your fancy, add vegies, etc of your choice. I just like to keep it simple for my picky eaters though!

8 -10 sausages
4 medium potatoes, peeled, sliced
soup, 425g can
1 1/2 cups water
1/2 teaspoon chili powder
2 cups breadcrumbs
30 g butter, melted
1 cup grated cheese

Steps:

  • Pre heat oven to moderate 180 C.
  • Cook sausages unil done.
  • Arrange potato on bottom of casserole.
  • Place sausages over potatos.
  • Mix together soup, chilli powder and water and pur over sausages.
  • Cover and bake 1 hour.
  • For the topping combine all topping ingredients and place over the top of sausages and bake uncovered 10 mins or until golden and crunchy.
