CRUNCHY NUTTY FINGERS COOKIES
Snowball cookies, Nutty Fingers, Russian Tea cookies are all very similar cookies to these incredibly easy and flaky cookies. My 7 year old daughter made these, so that should tell ya that these are that easy!

- Form cookies the size of a pinky finger and bake 20-25 minutes in a 350° oven, or until edges are brown.
- Cool and roll in powdered sugar (dredge them again for an extra layer of sugar if desired.)
- Note: Dough should be like tacky play-do but if too sticky add a tablespoon of flour until easier to handle.
NUTTY CRISPY SUGAR COOKIES
I worked with a woman that baked 80 dozen or more cookies during the holidays. Every day she brought 1/2 dozen of every cookie she'd baked the night before; this is my favorite. I sometimes roll the dough into balls and then roll them in some granulated sugar rather than making these as drop cookies. These freeze well.

CRUNCHY NUT BROWN SUGAR COOKIES
This recipe was given to me quite some time ago by a friend of the family. My husband is not a big cookie lover, but he loved these, so I requested the recipe. Shortening can be substituted for butter for a crispier cookie.

Steps:
- Preheat oven to 350 degrees.
- Combine all ingredients except flour and walnuts in a mixing bowl. Mix well.
- Gradually add flour until well mixed.
- Add walnuts. You can substitute any nut you prefer.
- Variation: I have occasionally omitted the nuts for chocolate chips - or used both. I would almost say they are better than the toll house recipe.
- Bake cookies for about 12 minutes on a cookie sheet.
- Enjoy!

- Add the peanut butter, coconut oil, honey and sea salt to a large saucepan and heat over medium low. Stir constantly, heating just until everything has melted and is well-combined. Don't allow mixture to boil. Remove from heat.
- Pour the puffed rice cereal into the saucepan and carefully stir it into the peanut butter mixture until all of the cereal is well-coated.
- Drop spoonfuls of the peanut butter cookie “dough” mixture onto a parchment-lined baking sheet. Note: don’t attempt to form cookies/balls prior to dropping the dough on the baking sheet, as it will just stick to your hands. Once the dough is on the baking sheet, you can press it together with your fingers to form cookie shapes, or leave them like little nests/drop cookies.
- Place the baking sheet in the refrigerator and chill at least 2 hours, or until cookies have set up. You should be able to peel them off of the baking sheet or loosen them up with a spatula after they have chilled.

- Preheat oven to 350°F degrees. In the bowl of a stand mixer add the eggs, sugar, and salt. Whisk together. In a small pot, add about 3 inches of water. Bring to a simmer over medium-low heat. Place the stand mixer bowl on top of the pot, making sure the bottom of the bowl does not touch the water to form a double boiler.
- Constantly whisk the egg mixture making sure to scrape the bottom and sides constantly. Continue to do this until egg mixture reaches 165°F degrees. This can take 5-15 minutes. Transfer bowl to the stand mixer base fitted with the whisk attachment.
- Add the vanilla. Whip on high for 5 minutes or until mixture quadruples in size and forms medium peaks. You know it is ready when a dollop of the mixture will keep its shape for a couple seconds before melting back into the batter.
- Sift the flour and cornstarch and fold in by hand. You just want the dry ingredients mixed in enough so you do not see any dry patches do not over mix.
