CRUNCHY MINT FUDGE

Steps:
- Line a 9-in. square baking pan with foil. Grease foil with butter; set aside., Combine milk and chips in a large microwave-safe bowl. Microwave, uncovered, on high for 1 minute; stir. Cook 30-60 seconds longer, stirring every 30 seconds, or until chips are melted. Stir in 1-1/4 cups candy canes and vanilla., Transfer to prepared pan. Sprinkle with remaining candy canes; press down gently. Cover and refrigerate for 2 hours or until firm. Lift fudge out of pan using foil. Gently peel off foil; cut fudge into 1-in. squares. Store in an airtight container.

Steps:
- Line an 8 or 9 inch square pan with waxed paper.
- In heavy saucepan over low heat, melt chocolate chips with 1 cup sweetened condensed milk and vanilla. Spread half of the mixture into prepared pan; chill 10 minutes, or until firm. Reserve remaining chocolate mixture at room temperature.
- In another heavy saucepan over low heat, melt white confectioners' coating with remaining sweetened condensed milk (mixture will be thick.) Stir in peppermint extract and food coloring. Spread this mixture on chilled chocolate layer; chill 10 minutes, or until firm.
- Spread reserved chocolate mixture over the mint layer; chill 2 hours, or until firm.

Easy & Utterly Delicious Chocolate Crunchie Fudge that anyone can make at home - No Sugar Thermometers, No Boiling, just quick and easy!

Steps:
- Line a tin with parchment paper - I use a 7x10″ brownie tin as it makes a nice depth of fudge!
- Put the chopped Chocolate into a heavy-based pan, along with all of the Condensed Milk and Vanilla Extract - melt on a low heat, stiring often so that the chocolate doesn't catch on the bottom and burn and so that all the ingredients mix together well.
- Alternatively, add the Chocolate to a large bowl, and melt.
- Add the Condensed Milk and Vanilla and mix in.
- Once melted, tip in the sifted Icing Sugar and combine well, it might take a bit of beating, but it's worth it!
- Once cooled, pour in two thirds of the chopped Crunchies and quickly stir through pour into the tin and smooth over the mixture.
- Sprinkle on the rest of the chopped bits of Crunchie, and even all the little tiny bits and press into the top of the fudge and store in the fridge for at least 3-4 hours to set!
- Once set, chop your fudge up into pieces and enjoy!

CRUNCHY FUDGE SQUARES
I wanted something fudge-y. But I wasn't in the mood for plain fudge. I don't like nuts in my fudge so I got inventive. The way they are wrapped in my photo was my 6 y.o. son's idea. I think these would be great on a platter with a whole bunch of other cookies for Christmas or something like that.

- Line an 8" pan with waxed paper.
- In a double boiler, melt chocolate chips, condensed milk, cocoa and peanut butter.
- While that is coming together, gather up the remaining ingredients.
- When the chocolate mixture becomes all creamy and blended together, remove from heat and quickly mix in the vanilla, chow mein noodles and oats.
- Dump into pan. With slightly damp fingers, press the fudge out to the edges.
- Place in the fridge to chill for about 1 1/2 - 2 hours.
- Cut into small squares.
- Keep covered as it will dry out.

- Line an 8- inch square pan with foil and grease foil. Mix sugar and cocoa in heavy 3 quart saucepan. Stir in milk and butter. Bring to a boil over medium heat, stirring constantly. Without stirring, boil vigorously 5 minutes. Remove from heat; add chips and stir until melted and smooth. - Place the ingredients into a large non-stick saucepan and melt over a low heat, stirring until the sugar dissolves.
- Bring to a steady boil for 10-15 minutes, stirring continuously and scraping the base of the pan to prevent it from catching. The mixture should reach 113-115°C on a sugar thermometer if you have one. If you don't you can drop a little mixture into a bowl of ice cold water - if it forms a soft, round ball that doesn't stick to your fingers then it should be ready.
- Remove the fudge from the heat and leave to cool for 5 minutes. If you want to add other ingredients and flavours - add them before you start beating the fudge. After cooling try mixing in nuts, natural flavourings or chocolate chip for added texture and flavour that will make your fudge utterly delicious.
- Beat the mixture until it just loses it's shine and becomes very thick (this should take about 5-10 minutes). The longer you beat once it starts to thicken then the more crumbly the final fudge will be. If you like it smooth - beat it only until comes away from the sides of the pan and sticks well to the spoon.
- Press into the prepared tin with the back of a spoon and leave to set before cutting into squares. The fudge will keep for up to 2 weeks in an airtight container at room temperature.
